Steps:
- Cut chicken tenders in half lengthwise and crosswise.
- Coat large nonstick skillet with nonstick cooking spray.
- Cook and stir chicken over medium heat 3 minutes.
- Add onion and bell pepper; cook and stir 2 minutes.
- Add Italian dressing and red pepper flakes; cover and cook 3 minutes.
- Remove from heat; uncover and let cool 5 minutes.
- While chicken mixture is cooling, cut pita breads in half to form pockets.
- Line each pocket with lettuce leaf.
- Spoon chicken filling into pockets; sprinkle with feta cheese.
- Note: Salad dressings offer a surprising amount of convenience in the kitchen.

- Mix yogurt, garlic and cayenne in small bowl. Season with salt and pepper. (Can be made 1 day ahead. Cover; chill.)
- Mix cucumber, sun-dried tomatoes, green onion, mint, vinegar and oil in large bowl. Stir in spinach and feta cheese. Season to taste with salt and pepper. Let stand while preparing pita bread.
- Preheat oven to 350°F. Wrap pita breads in foil. Place in oven until heated through, about 10 minutes. Fill pita halves with cucumber mixture. Spoon some of yogurt dressing into each pita half. Serve, passing remaining yogurt dressing separately.

- In a large resealable plastic bag, combine the vinegar, oil and garlic; add the beef. Seal bag and turn to coat; refrigerate for 8 hours or overnight., In a small bowl, combine sour cream and blue cheese; set aside. Drain and discard marinade., In a large nonstick skillet or wok coated with cooking spray, stir-fry beef for 2-3 minutes or until no longer pink. Line pita halves with lettuce, red peppers and onion; fill each with 1/3 cup beef. Serve with sour cream mixture.

- Prepare ingredients: Thinly green onions, discarding roots and ends. Chop sun-dried tomatoes. Wash and dry bibb lettuce. Thinly slice cucumber. Thinly slice roasted red peppers.
- Prepare yogurt sauce: mix together yogurt, sliced green onions, chopped sun-dried tomatoes, garlic powder, salt, pepper, and olive oil.
- Turn broiler on. Pull apart chicken into large pieces and place on baking dish. There will be gelatin (aka collagen!) in the bottom of the pan, scoop some of this and place on top of the meat. (Slightly gross, but helps meat from drying out!) Broil chicken in center rack for 3-5 minutes, until warm.Note: If the pan is closer to the broiler, it will only need a minute or two.
