SWISS CHEESE FONDUE WITH ENGLISH STILTON



Swiss Cheese Fondue with English Stilton image

1 clove garlic
1 cup dry white wine
2/3 pound Swiss Emmenthal cheese, grated
2/3 pound Swiss Gruyere cheese, grated
1 tablespoon cornstarch
1/4 cup kirsch
Pepper
Nutmeg
5 ounces Stilton cheese
1 loaf French bread, cut into 1-inch cubes

Steps:

  • Rub the garlic vigorously on the inside of a saucepot. Add the wine and bring to a boil. Turn the heat down and add the Emmenthal and the Gruyere to the pot. Heat until all of the cheese is melted, stirring slowly and continuously to prevent lumps from forming.
  • In a separate bowl, dissolve the cornstarch in the kirsch and add to the cheese mixture. Season with pepper and nutmeg, and continue to stir until the fondue is smooth. Remove the fondue from the heat and transfer into a fondue pot. Add the Stilton and fold into the fondue. Install the fondue pot in its stand and light the flame.
  • Serve with French bread cubes. Dip the bread in the fondue and enjoy. It is important to stir the fondue occasionally to keep it smooth.

8 ounces Cashel blue cheese, crumbled
1/4 cup all-purpose flour
1/8 teaspoon cayenne pepper
1/2 teaspoon dry mustard
3/4 cup Irish lager, preferably Kells brand
1/2 cup half-and-half
Coarse salt
Sliced apples, for serving
Bread cubes, for serving
Steamed broccoli, for serving
Red and yellow peppers, for serving

Steps:

  • In a medium bowl toss blue cheese, flour, cayenne and dry mustard together; set aside.
  • Place lager and half-and-half in a fondue pot over medium-high heat; stir to combine. Bring liquid to a simmer and slowly stir in cheese mixture; continue stirring until cheese is completely melted. Season with salt. Serve immediately with apples, bread, broccoli, and peppers.

8 ounces fingerling potatoes, scrubbed and halved lengthwise
1 tablespoon extra-virgin olive oil
2 thick slices rustic sourdough, cut into 1-inch cubes
1/2 cup dry white wine, such as Sauvignon Blanc
1 tablespoon kirsch (optional)
4 ounces Gruyere, grated
4 ounces fontina, grated
1/8 teaspoon freshly grated nutmeg
1 teaspoon fresh lemon juice
1 teaspoon cornstarch
Sliced fennel, apple, and dry salami and breadsticks, for serving

Steps:

  • Preheat oven to 375 degrees. On a rimmed baking sheet, toss potatoes with oil; roast 10 to 12 minutes. Flip; push to one side and add bread cubes. Continue to roast until potatoes are golden and tender and bread is crisp, 8 to 10 minutes more.
  • Reserve 1 tablespoon wine. In a small cast-iron pot, heat remaining wine with kirsch over low. Slowly add both cheeses, stirring in one direction until melted. Add nutmeg. In a small bowl, stir together lemon juice, cornstarch, and reserved wine. Slowly stir into pot; continue to cook over low heat, stirring, until mixture thickens and comes together, 4 to 5 minutes. Transfer to a fondue pot; keep warm. Serve with fennel, apple, salami, bread cubes and sticks, and potatoes.

SWEET GORGONZOLA FONDUE

Try serving this supremely creamy blue cheese fondue with apples, pears or grapes, and crusty cubes of French bread. It is divine, and it also comes together in about 15 minutes.

1 garlic clove, halved
1 cup sweet wine, such as Passito di Pantelleria or Sauternes
3/4 pound Gorgonzola dolce or other blue cheese, such as Stilton, crumbled
2 tablespoons plus 2 teaspoons cornstarch
1 tablespoon cream cheese
Kosher salt, to taste
Freshly ground black pepper, to taste
Crusty bread, apple cubes or grapes, for serving

Steps:

  • Rub cut side of garlic on inside of a large Dutch oven or a heavy-bottomed saucepan, rubbing the bottom and half way up the sides. Add wine and bring to a simmer over medium-high heat.
  • Meanwhile, in a large bowl, toss Gorgonzola with cornstarch. Add a quarter of the cheese into simmering wine; reduce heat to medium, and whisk constantly until cheese is completely melted. Repeat until all cheese has been added. Whisk in cream cheese. Season with salt and pepper. Serve with crusty bread, apple cubes and grapes.

1 pound sirloin steak, cut into 1 1/2-inch pieces
Coarse salt and freshly ground pepper
1 tablespoon safflower oil
8 ounces young Gouda, rind trimmed, coarsely grated
8 ounces Gruyere, rind trimmed, coarsely grated
2 tablespoons cornstarch
1 clove garlic, halved
1 1/2 cups dry white wine, such as Sauvignon Blanc
1 tablespoon brandy
Freshly grated nutmeg
1 apple, cored and sliced
1 small bulb fennel, cored and cut into wedges
1/2 cup cornichons
1/2 loaf rustic bread, cut into 1-inch cubes

Steps:

  • Season beef with salt and pepper. Heat a heavy skillet over medium-high heat. Swirl in oil. In batches, add beef in a single layer. Cook, turning occasionally, until browned on all sides, about 3 minutes for medium-rare. Transfer to a plate; tent with parchment-lined foil.
  • Toss cheeses with cornstarch in a bowl until coated. Rub bottom and sides of a medium pot with garlic; discard garlic. Add wine and brandy; bring to a simmer over medium-high heat.
  • Reduce heat to medium. Stir in cheese mixture in batches, waiting for cheeses to melt before adding more. Cook, stirring, until melted and smooth, about 10 minutes. Season with nutmeg.
  • Transfer to a fondue pot set over a warmer. Serve with beef, apple, fennel, cornichons, and bread.

STILTON AND SAUTERNES FONDUE

2 tablespoons creme fraiche

Cubed bread, preferably walnut , for serving
Boiled fingerling potatoes, beef tips, cornichons, or pickled vegetables, for serving (optional)

Steps:

  • Vigorously rub the inside of a fondue pot or a 2-quart saucepan with garlic; and discard. Add the Sauternes, and bring to a boil over medium heat.
  • Meanwhile, in a small bowl, stir to combine the Stilton and cornstarch. Once the Sauternes has come to a boil, slowly add the Stilton mixture, while whisking constantly. Be sure each addition is completely melted and incorporated before adding more. Once all of the cheese has been added, cook for 1 minute more. Whisk in creme fraiche, and season with salt and pepper. Remove from heat, and serve immediately with bread, potatoes, beef tips, or pickled vegetables, as desired.
