BASIC COOKED SPLIT PEAS RECIPE
Split peas are most often cooked in another recipe (like Split Pea and Ham soup), but you can also cook split peas "straight" for use in salads or other dishes.

Steps:
- Pour the dried split peas into a bowl or tray, and pick through looking for any debris. Then rinse the split peas well in a fine-mesh sieve.
- Add the split peas to a pot with your preferred cooking liquid-water, vegetable broth, and bone broth are all good options.
- Bring to a boil over high heat, stir, then reduce heat, cover, and simmer until the split peas are tender, but not mushy and most of the liquid is absorbed. about 20 minutes.
- Remove from heat, and season with salt to taste.

Really sticks to your ribs, really tasty, high fiber. Can be made vegan by substituting vegetable broth for chicken broth. Very easy.

- In a large pot or Dutch oven over medium heat, heat olive oil. Cook onion, carrot, celery and garlic until onion is translucent. Stir in yellow and green split peas, broth, seasoning and salt. Cover, bring to a boil, then reduce heat and simmer 2 1/2 hours, stirring frequently. Puree with a blender or food processor. Return to pot, heat through, and serve.

- Place the butter in a large soup pot over medium-low heat. Stir in onion, celery, and sliced garlic. Cook slowly until the onions are translucent but not brown, 5 to 8 minutes.
- Mix in ham, bay leaf, and split peas. Pour in chicken stock and water. Stir to combine, and simmer slowly until the peas are tender and the soup is thick, about 1 hour and 15 minutes. Stir occasionally. Season with salt and black pepper to serve.

This is a staple at my house.It's best in the winter when you want somthing hearty and hot. The spam can be exchanged for regular ham if you like.

Steps:
- Combine all ingredients except bacon fat and spam in a pot and bring to a simmer and allow to simmer for 2 hours. (or use a crockpot set on high before you leave for work in the morning).
- After cooking use a hand, or counter top blender until the pea soup is smooth.
- Cook spam cubes in bacon fat until golden brown on all sides and then add spam and bacon fat to soup.
- Salt and pepper to taste and enjoy.

I created this recipe by taking ingredients from other split pea soup recipes and added a few of my own. My husband loves it, and my dad requests that I make him a batch for his birthday present. This soup also freezes well.

Steps:
- Rinse split peas well.
- Heat peas and water to boiling.
- Boil uncovered for 2 minutes; remove from heat. Cover and let stand for 1 hour.
- Stir in onions, celery, bay leaves, bouillon cubes, salt, pepper, garlic powder and oregano leaves. Mix well.
- Add ham bone.
- Heat to a boiling; reduce heat, cover and simmer for 1 1/2 hours; stirring occasionally.
- Remove ham bone and bay leaves.
- Stir in ham and carrots.
- Heat to a boiling; reduce heat, cover and simmer about 30 minutes or until carrots are tender and soup is desired consistency; stirring occasionally.
