BAKED APPLE DONUTS



Baked Apple Donuts image

Homemade apple donuts, packed with fresh apple and apple sauce. Coated with a crunchy cinnamon sugar. Baked and perfectly delicious!

Number Of Ingredients 16

4 cups all-purpose flour
4 teaspoons baking powder
1 ½ teaspoon salt
½ teaspoon baking soda
1 ½ tablespoon ground cinnamon
¼ teaspoon ground nutmeg
¼ cup unsalted butter, melted and cooled
2 eggs
1 cup sugar
½ cup buttermilk
1 cup unsweetened applesauce, from jar
1 ½ cup fresh apple, peeled and grated
unsweetened applesauce OR melted butter
1 cup sugar
1 tablespoon ground cinnamon
dash of ground nutmeg, optional

Steps:

  • Preheat oven to 375.
  • In a large bowl, whisk together flour, baking powder, salt, baking soda, cinnamon and nutmeg.
  • In another large bowl, stir together melted butter, eggs, sugar, buttermilk and applesauce. Stir in fresh apple.
  • Add 1/3 of the flour mixture to the egg mixture. Stir with wooden spoon. Add another 1/3 of flour mixture and stir. Add remaining flour and stir just until combined.
  • Spoon batter into a large ziplock bag. Seal and snip the corner off one end. Squeeze batter into the cavities of a donut pan sprayed with non-stick baking spray. Fill each cavity 2/3 to 3/4 of the way full. To help donuts keep their pretty shape when baking, use a clean finger to gently even out the batter in each cavity and clean off the center knob of the pan. Bake at 375 for 12 to 14 minutes, until the tops of donuts spring back slightly when touched. Let cool 5 minutes before removing from pan.
  • For the outside coating, combine sugar, cinnamon and nutmeg in a bowl. Using a pastry brush, cover each donut with a light coating of applesauce, or alternatively, dip quickly into melted butter. Then dip into cinnamon sugar and toss to coat. Let cool completely before eating, if possible. A second dip into the cinnamon sugar creates an extra crunchy coating. Best enjoyed the same day!

4 medium tart apples, peeled and chopped (4 cups)
1 cup chopped pecans
1 package (11 ounces) butterscotch chips

Steps:

  • In a large bowl, beat the sugar, oil, eggs and vanilla until well blended. In another bowl, combine the flour, baking powder, baking soda, salt and cinnamon; gradually beat into sugar mixture until blended. Stir in apples and pecans., Pour into a lightly greased 13x9-in. baking dish. Sprinkle with chips. Bake at 325° for 55-60 minutes or until a toothpick inserted in the center comes out clean. Cover loosely with foil during the last 10-15 minutes to prevent overbrowning if necessary. Cool on a wire rack.

1 large egg
1 cup granulated sugar ((214 grams))
1 1/4 cup all-purpose flour ((168 grams))
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon baking powder
1 1/2 cups finely chopped apples
1/2 cup walnuts ((chopped))
1 cup butterscotch chips

Steps:

  • Preheat the oven to 350 degrees.
  • In a large bowl, mix together the canola oil, egg and sugar.
  • In a separate bowl, sift together the flour, baking soda, salt, cinnamon and baking powder.
  • Add the dry ingredients to the wet ingredients and mix just until combined.
  • Fold in the chopped apples.
  • Spray an 8x8 pan with cooking spray.
  • Spread this mixture in the bottom of the prepared pan.
  • Sprinkle the walnuts and butterscotch chips on top of the cake batter.
  • Bake at 350 degrees for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the bars to cool and cut them into squares.
  • This cake is best baked one day before serving.

1 teaspoon salt

2 cups diced apples
1 cup milk
2 large eggs, beaten
½ cup butter
1 cup sugar
2 teaspoons ground cinnamon

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease two 12-cavity mini doughnut pans.
  • Combine flour, sugar, baking powder, salt, nutmeg, and cinnamon in a large bowl; mix together with a fork until combined. Add shortening and mix with the fork until broken up into small clumps.
  • Mix together apples, milk, and eggs in a separate bowl. Add to flour mixture and stir just until blended. Spoon batter into the prepared doughnut pans.

1 teaspoon baking powder

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 10-inch Bundt® pan.
  • Toss apples, cinnamon, brown sugar, and nutmeg together in a bowl.
  • Combine cake mix, pudding mix, sour cream, water, vegetable oil, and eggs in a large mixing bowl. Mix on low speed with an electric mixer until completely blended, 1 to 2 minutes. Pour 2/3 of the batter into the prepared pan.
  • Drain and discard any accumulated juices from the apple mixture. Scatter apples over the batter in the pan, then pour remaining batter over top. Smooth with a spatula to cover apples completely.
  • Bake in the preheated oven until top is dry and springs back when touched firmly, 55 to 60 minutes.
  • Remove from the oven and cool on a wire rack for 15 to 20 minutes. Run a table knife around the edges to loosen. Invert carefully onto a serving plate or cooling rack. Let cool completely before serving.

I was looking through the "The Best of Country Cooking 2007"and I came across this recipe.It was ssubmitted to the above cookbook by Nancy Zimmermean from Cape May Court House,New Jersey.I decided to try it,and it wasn' t too bad :).I have found out that the amount of vegetable oil that was listed in the ingredients made the cake just a little too oily for me.I would suggest cutting the oil to 1/4 cup.Since my SO doesn't care for pecans I left those out.And I also found out that 45 minutes is too long to bake, so 35 minutes might be better.So if you try this recipe,please consider the changes that I have made.Submitted to "ZAAR" on April 28,2008.

1 pkg. (3.4 oz.) JELL-O Butterscotch Flavor Instant Pudding
1 cup water
4 eggs
1/3 cup oil
1/4 cup plus 3 Tbsp. milk
3 McIntosh apples (1 lb.), peeled, coarsely chopped
20 KRAFT Caramels
1/4 tsp. ground cinnamon

Steps:

  • Heat oven to 350ºF.
  • Beat cake mix, pudding mix, water, eggs, oil and 1/4 cup milk in large bowl with mixer until blended. Stir in apples. Pour into greased and floured 12-cup fluted tube pan or 10-inch tube pan.
  • Bake 50 min. to 1 hour or until toothpick inserted near center comes out clean. Cool cake in pan 15 min. Loosen cake from sides of pan with knife. Invert onto wire rack; gently remove pan. Cool cake completely. Transfer to plate.
  • Microwave caramels, remaining milk and cinnamon in microwaveable bowl on HIGH 1-1/2 min. or until caramels are completely melted and sauce is smooth, stirring every 30 sec. Cool 10 min. or until slightly thickened. Drizzle over cake just before serving.
