SHOYU CHICKEN RECIPE

Shoyu Chicken is a chicken dish with shoyu soy sauce, ginger and scallions; served over rice with a side of Hawaiian Mac Salad.

3/4 cup shoyu soy sauce
1 1/2 cups water
2 tablespoons honey
1/2 cup packed dark brown sugar
1 (2-inch knob) fresh ginger (peeled and thinly sliced)
3 whole garlic cloves (peeled and crushed)
2 pounds bone-in, skin-on chicken thighs
1/2 Maui onion (or yellow onion) (peeled and cut into 3/4-inch wedges)
3 whole green onions (white and green parts, cut into 2-inch pieces)
1 1/2 tablespoons cornstarch
3 cups steamed rice, for serving

Steps:

  • In a heavy Dutch oven or pot, mix the soy sauce, water, honey, brown sugar, ginger, and garlic together. Nestle the chicken thighs in the sauce, skin side up, submerging the meat as much as possible. Bring the mixture to a boil over medium-high heat. When the sauce comes to a boil, add the Maui or yellow onion wedges and green onion pieces and turn the heat to medium-low. Cover the pot with a lid and let simmer for 30 minutes. Using a pair of kitchen tongs, gently turn all the chicken pieces over. Cover the pot again and simmer for another 30 minutes.
  • Check the tenderness of the meat with a fork; if you can easily insert the fork into the meat, the chicken is done. Remove the cooked thighs from the sauce, reserving it, and place them on a rimmed baking sheet.
  • Preheat the broiler.
  • In a small bowl, whisk the cornstarch with 1/4 cup of the sauce until smooth, then add the cornstarch mixture back to the pot with the remaining sauce and cook over medium-low for 4 to 5 minutes, until the sauce has thickened. Broil the chicken thighs for a minute or two, watching carefully to make sure you do not burn the skin. The goal is to just quickly brown the skin.
  • Serve the chicken with the thickened sauce and rice.

Shoyu Chicken is a popular local Hawaii dish that is found at many restaurants in Hawaii. It is also easy to make at home with basic pantry ingredients. It's a simple, comforting meal.

2 pounds skin-on, bone-in chicken thighs (about 4 pieces)
1/2 cup shoyu
1/2 cup sugar
1/2 cup water
2 tablespoons rice vinegar
3 garlic cloves, smashed
1 2-inch knob of ginger, peeled and sliced
2 stalks green onions (optional)
1 tablespoon sesame seeds (optional)

Steps:

  • Over medium-high heat, brown chicken (skin-side down) in a saucepan. Brown for 5 minutes, until the skin is a deep golden color.
  • Mix together in a bowl: shoyu, sugar, water, and rice vinegar. Pour the liquid mixture over the chicken in the sauce pan.
  • Add in the smashed garlic and sliced ginger. Bring mixture to a boil, then turn back down to low heat. Put on a lid and let the chicken simmer (skin side up) for 10 minutes.
  • Lift the lid. Turn the chicken skin-side down, and simmer for another 10 minutes. Remove chicken onto a plate. Reduce the sauce over medium heat until thick (like the thickness of honey).
  • Serve the chicken over a big bowl of rice. Finish with chopped green onions, a sprinkle of sesame seeds, and drizzle on the sauce. It's onolicious ^_^

1 (4 pound) whole chicken, cut into pieces
2 ½ pounds cubed beef stew meat
1 ½ pounds pork shoulder roast
7 cups water
3 cups chicken broth
3 cloves garlic, whole
2 bay leaves
water to cover
1 tablespoon vegetable oil
2 cups diced onion
2 cups diced carrots
2 stalks celery, diced
1 clove garlic, minced
6 potatoes, unpeeled and diced
1 ½ cups fresh green beans, cut into 1 inch pieces
1 (14.5 ounce) can whole peeled tomatoes, drained
1 ½ teaspoons salt
1 teaspoon dried rosemary
½ teaspoon ground black pepper
½ teaspoon dried thyme
½ cup frozen green peas
1 ½ teaspoons grated lemon zest
½ teaspoon crushed red pepper
½ cup chopped fresh parsley, for garnish

Steps:

  • Combine the chicken, beef, pork, water and broth in a large pot and bring to a boil. Add whole cloves of garlic and bay leaves, then reduce heat to low, cover and simmer for 2 hours.
  • Remove chicken, beef and pork. Strip meats from bones and cut into bite size pieces. Strain stock in pot and add water to yield 8 cups of stock. Return meats to broth.
  • Heat oil in a medium skillet and saute the onion, carrot, celery and minced garlic for about 5 minutes. Add saute mixture to pot along with the potatoes, beans, tomatoes, salt, rosemary, pepper and thyme. Bring to a boil, reduce heat to low and simmer uncovered for about 10 minutes. Stir in the peas, lemon zest and red pepper. Heat through and serve garnished with parsley.

1 cup brown sugar
1 cup water
4 cloves garlic, minced
1 onion, chopped
1 tablespoon grated fresh ginger root

1 teaspoon ground cayenne pepper
1 teaspoon ground paprika
5 pounds skinless chicken thighs

Steps:

  • Whisk together the soy sauce, brown sugar, water, garlic, onion, ginger, black pepper, oregano, red pepper flakes, cayenne pepper, and paprika in a large glass or ceramic bowl. Add the chicken thighs, and toss to evenly coat. Cover the bowl with plastic wrap, and marinate the chicken in the refrigerator for at least 1 hour.
  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • Remove the chicken thighs from the marinade. Discard the remaining marinade. Grill the chicken thighs on the preheated grill until cooked through, about 15 minutes per side.

This is the easiest and best tasting Hawaiian chicken dish I've ever found. I made it for my church's luau and the chicken ran out long before the roast pig did.

12 boneless chicken thighs (or a mix of boneless thighs and breasts)
2 cups soy sauce
2 cups water
1 clove crushed garlic
1 small chopped onion
1 cup sugar

Steps:

  • Put the soy sauce, water, garlic, onion, and sugar in a large pot.
  • Heat slowly so the sugar dissolves.
  • If it is sour then add more sugar, too salty then add more water.
  • If the sauce tastes good then throw in the chicken and simmer about 45 minutes.
  • The liquid ingredients should thicken to a very good sauce.
  • Serve over rice.

5 1/2 to 6 pounds chicken thighs
5 cups low-sodium chicken broth
2 cups low-sodium soy sauce
1 cup packed light brown sugar
3/4 cup mirin
8 medium garlic cloves, smashed and peeled
4-inch piece ginger, sliced 1/2-inch thick and smashed
1 teaspoon freshly ground black pepper
5 tablespoons cornstarch dissolved in 5 tablespoons water
Thinly sliced green onions, for garnish

Steps:

  • Combine all ingredients except cornstarch and green onions in a large pot and bring to a boil over high heat. Reduce to low and simmer, covered, turning occasionally, until chicken is tender, about 30 to 35 minutes more.
  • Remove chicken to a serving platter. Remove garlic and ginger and discard. Bring sauce to a boil, skim off excess fat, and cook until reduced slightly, about 10 minutes. Whisk in cornstarch mixture and bring to a boil. Remove from heat, add chicken, turn to coat, and serve chicken with sauce and sliced green onions.

1 1/4 lbs chicken
1/4 cup peanut oil
1/4 teaspoon ginger
2 garlic cloves, crushed
1 tablespoon sherry wine
1/2 cup water
3 tablespoons brown sugar
1/2 cup soy sauce

Steps:

  • Mix sherry, water, brown sugar and soy sauce.
  • Heat oil in dutch oven, fry chicken until brown.
  • Sprinkle ginger and garlic on top of chicken.
  • Add remaining ingredients.
  • Cover and cook slowly for 1 hour or until done.
  • *You could also cook it in the oven @ 325 for 1 hour.
  • *If you like you can add Tofu or chopped cabbage when adding the ingredients to pot to simmer.

BOOYAH!
4 Tbsp butter (for browning chicken and other meats)
1 large whole stewing chicken cut up into parts (browned)
1 1/2 lb each: beef and pork (cubed and browned)
1 large rutabaga (peeled and cubed)
3 lb carrots (cut large)
4 lb potatoes (cut large)
1 entire stalk celery (chopped)
3 large onions (chopped large)
1 small head cabbage (either chopped or shredded)
6 beef bouillon cubes
1/2 lemon (pulp, juice and zest)
6 clove garlic (minced)
1 tsp each: pepper, garlic powder, sage
2 qt tomatoes (or 8 large fresh ones)
1 can(s) each: corn, green beans, kidney beans navy beans
1 c rice
1 small bag frozen peas (or fresh)
water enough to cover meats and veggies.
OPTIONAL
beef or chicken broth can be added for desired amount of liquid.

Steps:

  • 1. Cut up the chicken into parts. Brown in skillet in 2 Tablespoons butter (can use olive oil). Place the browned chicken into a large pot and just barely cover with water (some of the water should be used to clean drippings from skillet and add to the pot for flavor. Bring to a hard boil for 10 minutes. Turn down the heat to high simmer.
  • 2. Cut up the beef and pork into cubes. Brown them in skillet with 2 Tablespoons of butter. Place meat in pot with chicken parts and simmer. Add water to the skillet to aquire the drippings to add to the pot.
  • 3. Peel and cube the rutabega and add to the pot.
  • 4. Peel and cut up the carrots. Add to the pot.
  • 5. Chop up the celery and onion and add to the pot.
  • 6. Chop up the cabbage and add to the pot.
  • 7. Peel the potatoes and cut into chunks. Add to the pot.
  • 8. Add the rice to the pot along with two cups of hot water or broth.
  • 9. When the rice is cooked: Add the bouillon cubes, lemon zest, pulp and juice, minced garlic, spices, tomatoes, green beans, kidney beans and navy beans. Simmer 10 minutes longer. Stirring so the rice doesn't stick and burn. Add the frozen (or fresh) peas. It will be ready to serve in about 2 minutes! Enjoy!
  • 10. **** Add water or broth while cooking if needed. Some make this like a soup, some make it like a stew or a chowder..... doesn't matter... it is all good!
