1 medium Uncooked carrot(s) diced
1 medium Uncooked onion(s) chopped
3.5 oz Dried shiitake mushroom(s) stems removed, thinly sliced (5 mushrooms)
0.75 cup(s) Dry textured vegetable protein TVP
1.25 cup(s) Vegetable broth or water
1 tbsp(s) Balsamic vinegar
1 tbsp(s) Fresh lemon juice
1 tbsp(s) Fresh basil fresh, chopped, plus more for garnish
0.125 tsp(s) Table salt or to taste
0.125 pinch Black pepper or to taste
1 medium Uncooked vidalia onion(s) chopped
1.25 cup(s) Canned tomato sauce seasoned

Steps:

  • Preheat oven to 400°F. Coat a baking sheet with cooking spray and roast 4 portobello mushroom caps until tender, about 20 to 25 minutes. Chop remaining mushroom cap and set aside. Remove mushroom caps from oven and keep warm.
  • Meanwhile, coat a nonstick stick skillet with cooking spray and set over medium heat. Add carrot and onion; cook until soft and starting to brown, about 10 minutes. Add reserved chopped portobello cap and shitake mushrooms and cook to soften mushrooms, about 4 to 6 minutes.
  • Add TVP and broth (or water) to mushroom mixture. Cook until water is absorbed, about 5 minutes. Add vinegar and lemon juice. Stir in fresh basil and season to taste with salt and pepper.
  • Arrange portobello caps in a shallow roasting pan. Scoop 1/2 cup of TVP filling over each mushroom and top each with 1/3 cup of tomato sauce. Warm in oven 10 minutes. Garnish with fresh basil before serving. Yields one stuffed cap per serving.

On a quick trip to the supermarket, I came across a great deal on some portobello mushrooms. After I made this recipe, I topped it off with additional marinara sauce, fried slices of fresh garlic and my own concoction of a "Fried Red Tomato". This turned out great!

4 large portobello mushroom caps
1/4 tsp ground black pepper
1 c part-skim ricotta cheese
1/4 c freshly grated parmesan cheese
1/4 c shredded mozzarella cheese
1 9 oz. package frozen chopped spinach, thawed & drained of excess water
4 clove garlic, minced
1/2 small onion, minced
1 tsp italian seasoning
1/2 tsp garlic salt
1 c marinara sauce

Steps:

  • 1. Preheat oven to 450 degrees. Line a rimmed baking sheet with foil and spray with non-stick cooking spray. Place mushroom caps, gill-side up, on the baking sheet. Sprinkle with 1/8 teaspoon pepper. Roast until tender, about 20-25 minutes.
  • 2. Meanwhile, blend ricotta cheese, spinach, Parmesan cheese, mozzarella cheese, Italian seasoning, half of the minced garlic and half of the minced onion in a medium bowl. Season with salt and pepper. Place the marinara sauce in a small pot with the remaining minced garlic and onions. Season with garlic salt. Heat on low until heated through.
  • 3. When the mushroom caps are tender, carefully pour out any liquid in the caps. Return the caps to the baking sheet, gill-side up. Spread 1 to 2 tablespoons of marinara sauce into each mushroom cap; cover the remaining sauce and keep warm. Mound a generous 1/3 ricotta/spinach filling into each mushroom cap. Bake until hot, about 10 minutes. Serve with remaining sauce.

1 tablespoon butter
2 cloves garlic, minced
4 cups fresh spinach
8 oz cream cheese
salt, to taste
pepper, to taste
¼ cup breadcrumb
¼ cup parmesan cheese

Steps:

  • Preheat oven to 375˚F (190˚C).
  • Remove the stems from the mushrooms. Place the top half on a baking sheet.
  • Mince the stems.
  • Melt the butter in a pan and add the minced stems and minced garlic. Stir and cook for 2 minutes.
  • Add the spinach, cook until it wilts.
  • Add the cream cheese, salt, and pepper. Stir until the cream cheese is melted and everything is well-combined.
  • Take a spoonful of the spinach mixture and fill each mushroom top.
  • Mix bread crumbs and Parmesan cheese in a bowl and sprinkle the mixture on top of the dip stuffed mushrooms.
  • Bake for 12-15 minutes or until golden brown.

1 cup fat-free ricotta cheese

2 cups fresh spinach (finely chopped)

Steps:

  • Preheat the oven or grill to 425 or medium high heat.

4 6-inch portobello mushroom caps
4 cups spinach, chopped
1 cup breadcrumbs (preferably panko)
1 cup shredded mozzarella cheese
2 shallots (1 finely chopped, 1 thinly sliced)
1 large tomato, diced
3 tablespoons grated pecorino romano cheese, plus shaved pecorino for topping
3 tablespoons extra-virgin olive oil, plus more for drizzling
Kosher salt and freshly ground pepper
1/2 cup ricotta cheese
4 stalks celery, peeled and thinly sliced

Steps:

  • Preheat the broiler. Mist a foil-lined broiler pan with cooking spray. Put the mushrooms gill-side down on the pan; broil 5 minutes.
  • Meanwhile, toss the spinach, breadcrumbs, mozzarella, chopped shallot, tomato, 2 tablespoons each pecorino and olive oil, 1/2 teaspoon salt, and pepper to taste in a medium bowl.

6 garlic cloves, peeled and left whole
1 bay leaf
2 tablespoons cream
1/2 cup parmesan cheese, grated

4 portabella mushrooms (5 inches in diameter, stems removed)
4 teaspoons olive oil
2 teaspoons red wine vinegar
salt & freshly ground black pepper
1/2 teaspoon fresh thyme, chopped
4 teaspoons olive oil
stems mushroom, finely chopped
1/2 cup onion, finely chopped
1/4 cup red wine
2 tablespoons chopped fresh parsley
1 teaspoon fresh rosemary, finely minced

Steps:

  • Cook potatoes, garlic and bay leaf in boiling water until very tender.
  • Drain. Discard bayleaf.
  • Return potatoes to pot and mash till smooth.
  • Add cream.
  • Cool slightly.
  • Add Grated cheese. Reserve 1 tbsp to sprinkle on top.
  • Season with salt, white pepper and nutmeg.
  • Stir in beaten eggs.
  • Set aside.

  • Set aside.
  • Heat 4 tsp olive oil in skillet.

  • ADD parsley, rosemary, amd thyme.
  • Add red wine and cook til evaporated.
  • Season to taste with salt and pepper.
  • Bake caps at 400°F for 10 minutes.
  • Reduce heat to 350°F.
  • Divide onion mixture equally into bottom of caps.
  • Mound potato mixture on top.
  • Sprinkle with reserved cheese.
  • Bake about 25 minutes until potatoes are golden and heated through.

1/4 cup Marsala (optional)
4 large fresh thyme sprigs
6 large portobello mushrooms
Filling:
1 10-ounce package frozen spinach
1 pound button mushrooms
2 tablespoons olive oil
1 cup chopped sweet onion (such as Maui or Vidalia)
3 garlic cloves, pressed
1/4 cup plus 6 tablespoons finely grated Parmesan cheese
1/4 cup unseasoned dry breadcrumbs
1 5-ounce package soft fresh goat cheese, crumbled

  • For marinated mushrooms:
  • Whisk first 6 ingredients and Marsala, if desired, in medium bowl for marinade. Stir in thyme sprigs. Cut stems from mushrooms and place stems in processor. Add chopped mushrooms, sprinkle with salt, and increase heat to high. Cook until almost all liquid evaporates, stirring often, about 8 minutes. Season mushroom mixture with salt and pepper. Transfer to large bowl; cool to room temperature.
  • Add spinach, 1/4 cup Parmesan, and breadcrumbs to mushroom mixture; toss to distribute evenly. Add goat cheese and toss gently to distribute evenly. Season filling to taste with salt and pepper. DO AHEAD: Can be made 2 hours ahead. Cover filling and let stand at room temperature.
  • Preheat oven to 400°F. Transfer marinated mushrooms, with some marinade still clinging, to rimmed baking sheet, gill side down. Roast until beginning to soften, about 15 minutes. Turn mushrooms over. Divide filling among mushrooms. Sprinkle remaining 6 tablespoons Parmesan cheese over and bake until heated through and cheese begins to brown, about 15 minutes.
