SPINACH AND SAUSAGE STUFFED MUSHROOMS



Spinach and Sausage Stuffed Mushrooms image

I found the original recipe for this on the back of the Stouffer's box and have tinkered a bit with the ingredients and directions. This is an excellent use of their Spinach Souffle.

1 package stouffer frozen spinach souffle, defrosted
2 tablespoons butter or 2 tablespoons margarine
3 tablespoons chopped onions
1 clove garlic, crushed
3/4 cup water or 3/4 cup chicken broth
2 1/3 cups herb stuffing mix (not crouton style)
1/2 lb bulk sausage, thoroughly cooked,drained and crumbled (I use breakfast sausage)
1/4 cup parmesan cheese, plus additional for garnish
2 1/2-3 lbs whole white mushrooms, stems removed and chopped

Steps:

  • Melt butter in medium saucepan; add onion, garlic and mushroom stems, cook until onion is translucent.
  • Add water (or broth); heat to boiling.
  • Remove pan from heat.
  • Add stuffing mix and stir until moistened.
  • Stir in souffle, cooked sausage and 1/4 cup parmesan cheese.
  • Stir well.
  • Arrange mushrooms on baking sheet and fill with spinach mixture, mounding slightly.
  • Sprinkle with additional parmesan cheese.
  • Bake in a preheated 400 degree oven for 10- 15 minutes or until cheese and mushrooms are lightly browned.
  • Enjoy.

PORTOBELLO STUFFED WITH SAUSAGE, SPINACH AND SMOKED MOZZARELLA



Portobello Stuffed with Sausage, Spinach and Smoked Mozzarella image

3/4 pound mild Italian sausage
1 medium Spanish onion, sliced
6 tablespoons olive oil
1/2 cup dry red wine
8 ounces fresh spinach leaves, stems removed and coarsely chopped
1/2 cup water
Salt and freshly ground black pepper
4 tablespoons chopped fresh basil leaves
4 tablespoons chopped fresh flat-leaf parsley
12 ounces fresh smoked mozzarella, cut into small cubes
4 large portobello mushrooms, stems removed
2 plum tomatoes, thinly sliced

Steps:

  • Preheat grill to medium-high heat.
  • Brush sausages and onion slices with olive oil and place on the grill. Cook until browned on all sides.
  • Put the sausage and onion into a saute pan, add the wine and cook until the wine is completely reduced. While the wine is reducing, break up the sausage into small pieces. Add the spinach, 1/2 cup of water and season with salt and pepper. Cook until the spinach has wilted, about 2 minutes. Remove from the heat and stir in the 2 tablespoons of the basil, 2 tablespoons of the parsley and the cheese and let cool slightly.
  • Heat the grill to high.
  • Brush the mushroom caps on both sides with the remaining oil and season with salt and pepper. Place the mushrooms on the grill, top side down and cook until golden brown, about 4 minutes. Remove the mushrooms from the grill and place on a flat surface, cap side down. Fill the mushrooms with the sausage mixture and top each with a few slices of tomato. Season the tomatoes with salt and pepper and place on the grill, cap side down, close the cover and cook until the mushroom and filling have heated through, the cheese has melted and the tomatoes are soft, about 5 minutes. Remove to a platter and sprinkle tops with the remaining parsley and basil.

  • Crumble sausage into a large skillet and cook over medium-high heat, stirring occasionally, until no longer pink. Stir in the chopped mushroom stems and continue to cook until they have released most of their juices, about 5 minutes. Stir in the garlic and crushed red pepper, if desired, and cook just until fragrant, about 30 seconds more. Stir in the spinach; cover and cook just until spinach is wilted, about 2 minutes. Transfer sausage mixture to a food processor or blender. Cover and pulse until mixture is evenly chopped. Add the egg and pulse just until incorporated.
  • Fill each mushroom cap with about 1 tablespoon of the sausage mixture. Place the filled caps on a foil-lined 15x10x1-inch baking pan. In a small bowl stir together the panko, dried basil, salt and pepper. Add olive oil and toss to combine. Sprinkle a bit of the panko mixture over the top of each stuffed mushroom. Bake in a 400°F oven for 18 to 20 minutes or until topping is golden. Top each with additional spinach, if desired.
