STEAK AND CHEESE QUESADILLAS



Steak and Cheese Quesadillas image

Another version of beefy cheesy quesadillas. This is a very good reason to make some extra steak, and tuck it into the fridge for the next day.

Number Of Ingredients 10

1 teaspoon olive or vegetable oil
1 cup chopped red onion
Kosher salt and freshly ground pepper (to taste)
1 ½ cups chopped spinach
1 teaspoon seeded minced jalapeno
3 cups thinly sliced and roughly chopped cooked steak
1 teaspoons unsalted butter (divided)
8 8-inch flour tortillas
3 cups (12 ounces) cheese (such as a combo of cheddar and Monterey Jack)
Steak sauce, guacamole, sour cream and salsa (to serve, if desired)

Steps:

  • Heat a large skillet over medium high heat and add the oil. Add the onions, season with salt and pepper, and saute for 4 minutes, until the onions have softened. Add the spinach and jalapeno, and stir for another minute until the spinach has wilted. Remove them to a bowl, and stir in the steak.
  • Wipe out the skillet and return it to medium high heat. Add a half teaspoon of butter, and turn to coat the bottom of the pan. Place a tortilla in the pan. Sprinkle 3 tablespoons of the cheese over half of the quesadilla, and distribute 1/8 of the steak mixture over the cheese. Top that with another 3 tablespoons of the shredded cheese. Flip the bare half of the tortilla over the filling, cover the pan, and sauté for about 2 minutes until the bottom is golden and the cheese has started to melt, then use a spatula to flip the half-moon quesadilla, and continue to cook, uncovered, until all of the cheese is melted and the underside is browned, 2 to 3 minutes.
  • Remove the quesadilla to a cutting board and let the quesadilla sit for a minute before you slice into 2 or 3 wedges. Repeat until all of the quesadillas are cooked. Serve with steak sauce, guacamole, salsa and sour cream, as desired.

SPICY FAJITA STEAK QUESADILLA

Number Of Ingredients 6

1 recipe of Spicy Steak Fajita Filling (recipe below)
8 x 8-9 inch Tortillas (recipe below or store bought)
1 cup of Greek Yoghurt
1 1/2 cups - 2 cups of Freshly Shredded Cheese (I used a mix of Pepper Jack, Cheddar and Provolone)
Salt and Pepper to taste
1/4 bunch cilantro chopped (leaves and stems)

Steps:

  • Spread 2 - 3 heaped teaspoons of yoghurt on a tortilla. Sprinkle a pinch of salt.
  • Add some of the onion/bell pepper mix and 1/8th of the thinly sliced Steak on one half of the tortilla.
  • Sprinkle about (loosely packed) 1/4 cup of shredded cheese and some chopped cilantro.
  • Fold over and place this on the heated pan - about 2-3 minutes on one side on low-medium heat. Start with medium heat, If the sides are browning too fast, lower the heat to low. Regulate the heat according to your stove top.
  • When the cheese has melted, remove tortilla from the heat and cut it in half.
  • Serve while hot with some Guacamole.

SPICY QUESADILLA SAUCE

1 cup mayonnaise (such as Hellman's®)
3 tablespoons canned diced jalapeno peppers, drained (reserve juice)
1 tablespoon white sugar
2 teaspoons paprika
2 teaspoons ground cumin
½ teaspoon cayenne pepper
½ teaspoon garlic powder
¼ teaspoon salt

Steps:

  • Mix mayonnaise, jalapeno peppers, 3 tablespoons of the pickling juice from the peppers, sugar, paprika, cumin, cayenne pepper, garlic powder, and salt together in a bowl.
  • Cover bowl with plastic wrap and refrigerate 4 to 6 hours before serving.

4 flour tortillas, each 12 inches in diameter
3/4 cup shredded cheddar cheese
1 (8 ounce) sirloin steaks, grilled, thinly sliced
1 jalapeno, minced
3/4 cup salsa, drained of excess liquid
1 tablespoon vegetable oil

Steps:

  • Place 2 of the flour tortillas on a work surface; evenly spread 1/4 cup of the cheese on top of each tortilla. Divide the steak evenly between the 2 tortillas. Sprinkle with jalapeno to taste. Spoon 1/4 cup of the salsa over each; top with the remaining cheese. Place another tortilla on top of each quesadilla; press down firmly with your hands to seal.
  • Heat a large skillet over high heat; add 1 1/2 teaspoon of the oil. Lower heat to medium; transfer one of the quesadillas to the pan. Cook until bottom tortilla is golden brown, about 2 minutes. Slide quesadilla to a dinner plate; invert another plate over it. Hold them together; flip plates to leave the quesadilla browned side up. Slide tortilla back into the hot pan to cook the other side until golden brown, about 2-3 minutes. Repeat with remaining quesadilla.

1 cup grated white Cheddar cheese
1 cup grated Monterey Jack cheese
1 cup grated pepper jack cheese
6 tablespoons salted butter
Six 8-inch flour tortillas
Pinch of kosher salt
Pinch of freshly ground black pepper
2 Roma tomatoes, diced
One 4-ounce can diced green chiles, drained
9 fresh cilantro sprigs, for garnish

Steps:

  • Toss together the Cheddar, Monterey Jack and pepper jack in a bowl; set aside.
  • Heat 2 tablespoons of the butter in large skillet over medium heat. Place a single tortilla in the skillet. Sprinkle a little less than a third of the cheese blend over the tortilla. Sprinkle with salt and pepper. Add about a third of the diced tomato and a third of the chiles. Sprinkle a touch more cheese over the whole thing and gently top and press with a second tortilla. Cook until golden on the bottom, about 3 minutes.
  • Carefully flip the quesadilla to the other side. Continue cooking until the second side is golden, 3 to 4 minutes more. Repeat with the remaining ingredients. Slice each quesadilla into wedges and garnish with cilantro sprigs.

1 (15 1/2 ounce) can black beans, drained and rinsed
1/2 cup cilantro, roughly chopped
2 plum tomatoes, cut into 3/4-inch pieces
1 avocado, halved, pitted, peeled and cut into 3/4 inch pieces
1 tablespoon fresh lime juice
1/8-1/4 teaspoon cayenne
coarse salt
ground pepper
1 (8 ounce) strip steaks (1 inch thick)
1/2 teaspoon dried oregano
3 teaspoons olive oil
4 (10 inch) flour tortillas
1 1/2 cups monterey jack pepper cheese, grated
1 medium red onion, halved and thinly sliced
1/4 cup reduced-fat sour cream

Steps:

  • In medium bowl, combine black beans, cilantro, tomatoes, avocado, lime juice and cayenne; stir to combine.
  • Season with salt and pepper.
  • Rub steak with oregano; season with salt and pepper.
  • In a 10-inch skillet, heat 1 t oil over high.
  • Add steak to skillet, and cook, turning once, until browned and still rare, 2-3 minutes per side. (Steak will cook a little longer in the quesadillas during baking).
  • Transfer steak to a cutting board; let rest 5 minutes before slicing 1/4 inch thick.
  • Preheat oven to 425 degrees with racks in upper and lower thirds.
  • Brush one side of each tortilla with remaining 2 teaspoons oil.
  • Place 1 tortilla, oiled side down, on each of two baking sheets.
  • Dividing evenly, layer with half of the cheese, then onion and steak, ending with remaining cheese.
  • Top with remaining tortillas, oiled side up.
  • Press lightly to seal.
  • Bake, turning over once (with wide spatula), until lightly browned and crispy, about 5 minutes per side.
  • Transfer to a cutting board; cut each quesadilla into 6 triangles.
  • Serve with black bean salsa and sour cream.

Very, Very good, if you can find the sundried tomato tortillas, they add a wonderful taste, as compared to the plain ones. We pass the salsa also, with the sour cream. More heat can be added if desired and the recipe can be scaled down to one or two.

6 inches 10-inch sun-dried tomato tortillas
1 tablespoon olive oil
2 red peppers, thinly sliced
1 large onion, thinly sliced
2 jalapeno peppers, thinly sliced
1/2 cup chopped black olives
2 cloves garlic, smashed
1 teaspoon chili powder
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
2 cups shredded cheese
sour cream (optional)

Steps:

  • In a large skillet heat oil.
  • Cook peppers, onions, garlic, jalapeno, chili powder, cumin and cayenne, stirring often until peppers and onions are limp, about 5 minutes.
  • Remove from heat and add olives.
  • Arrange 3 tortillas in single layer on baking sheets.
  • Divide onion and pepper mixture evenly over tortillas, spread to 1/2 inch off edges.
  • Top with shredded cheese, spread evenly between 3 tortillas.
  • Place remaining 3 tortillas on top, press down lightly.
  • Bake at 450 degrees until tortillas are lightly browned.
  • 8 to 10 minutes.
  • Cut into 4 to 6 wedges.
  • Arrange on platter and serve with sour cream, if desired.
