CHERRY WHEAT GERM MUFFINS
Dried cherries brighten muffins featuring nutty toasted wheat germ - perfect for a bread basket.

Steps:
- Heat oven to 400°F. Place paper baking cup in each of 12 regular-size muffin cups; spray paper cups with cooking spray.
- In large bowl, stir flour, cherries, wheat germ, brown sugar, baking powder, baking soda, salt and allspice; make well in center of mixture. In medium bowl, beat buttermilk, oil and egg with whisk; add to flour mixture, stirring just until moistened. Divide batter evenly among muffin cups.
- Bake 15 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes; remove from pan to cooling rack. Serve warm or cool.

Steps:
- Preheat oven to 400*F.
- Line or grease muffin tin.
- Beat egg, mix with milk.
- Add wheat germ to milk and egg mixture- let stand a minute or two to 'hydrate'.
- Sift dry ingredients into slurry mix.
- Add oil and honey and stir.
- Fill muffin cups about half full.
- Bake 15-20 min.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Line 2 muffin tins with paper liners.
- Mix oats, 1/3 cup sugar, lemon juice, wheat germ, water, and lemon zest together in a small bowl.
- Mix cherries with 2 tablespoons sugar in a small bowl.
- Combine remaining 2/3 cup sugar, flour, baking powder, cinnamon, and ginger in a large bowl. Stir in oat mixture. Mix in yogurt, eggs, oil, and butter until batter is thick and smooth.
- Fold cherries into the batter. Divide batter evenly among muffin cups, filling each 3/4 full.
- Bake in the preheated oven until tops start to brown and a toothpick inserted into the center comes out clean, 18 to 20 minutes. Cool in the tins for 5 minutes before transferring to a wire rack to cool.

- Preheat oven to 425 degrees F.
- In large bowl, combine flour, wheat germ, baking powder, baking soda, salt, cinnamon and nutmeg.
- In medium bowl, beat egg replacer with brown sugar, oil, applesauce and soy milk.
- Mix with dry ingredients just until evenly moistened.
- Spoon into muffin tins.
- Mix 2 teaspoons of sugar and 1/4 teaspoon cinnamon and sprinkle on top of muffins.
- Bake for 15-17 minutes.

I developed a love for wheat germ muffins when my mother worked at Woodward's. We tried to recreate them. This recipe comes very close. Don't worry...it freezes very well.

- Mix flour, 3/4 cup sugar, baking powder, and salt together in a bowl.
- Whisk oil, milk, egg, and almond extract together in a small bowl. Pour into flour mixture; stir gently until incorporated. Fold cherries into the batter.

- Mix the buttermilk and water in a bowl. Beat in the egg thoroughly. Stir in the wheat germ and let stand for 2 - 3 minutes to absorb moisture, while you prepare the dry ingredients.
- Mix the whole wheat flour, baking soda and salt on to a square of waxed paper or in another bowl. Add the mix to the wheat germ mixture and mix just until the flour mixture is moistened. Stir in the honey and oil. Spoon into greased or paper-lined muffin cups, filling them no more than 2/3 full.
- Bake at 400°F for 20 - 25 minutes, until browned and done (a toothpick inserted into the muffin comes out dry).
