- Heat oven to 375°F. In large bowl, beat butter, brown sugar, vanilla and egg with electric mixer on medium speed, or mix with spoon. On low speed, beat in remaining ingredients except chocolate chips and walnuts. Stir in chocolate chips and walnuts.
- On ungreased cookie sheet, drop dough by rounded teaspoonfuls about 1 inch apart.
- Bake 7 to 9 minutes or until light brown (centers will be soft). Cool 1 to 2 minutes; remove from cookie sheet to cooling rack.

- Preheat oven to 375° degrees.
- Combine flour, baking soda, salt, cayenne pepper, and cinnamon. Set aside.
- In mixer, cream butter. Add granulated and brown sugar and mix well. Add vanilla extract and egg beating well.
- Add dry ingredients to mixer bowl and beat until well mixed. Add chocolate chips.
- Use medium sized cookie scoop and place dough balls approximately 2 inches apart on baking sheet.
- Bake for 9 to 11 minutes or until golden brown. Let sit for one minute then remove to wire rack to cool completely.

- Preheat oven to 375 degrees F (190 degrees C). Line 2 baking sheets with parchment paper.
- Beat 1 1/2 cups sugar, butter, vanilla extract, and salt together in a bowl until fluffy. Beat in eggs; add cream of tartar and baking soda. Beat in cocoa powder, 1/2 teaspoon cinnamon, and cayenne powder. Beat in flour. Stir chocolate chips into the dough.
- Mix remaining 1/4 cup sugar and 1/2 teaspoon cinnamon together in a bowl.
- Roll heaping tablespoons of dough into balls. Roll balls in the sugar-cinnamon mixture and place on the prepared baking sheets.

- Preheat oven to 375°.
- Mix together first 6 ingredients and set aside.
- Cream shortening, sugars and vanilla until well mixed.
- Add eggs, one at a time, beating well after each addition.
- Add flour mixture slowly and beat well.
- Stir in chocolate chips and walnuts by hand.
- Drop dough by tablespoonful onto ungreased cookie sheet.
- Bake for 9 to 11 minutes or just until cookies brown.

- 1. for cookies, preheat the oven to 350°. Line a baking sheet with parchment paper. Mix the flour, baking powder, red pepper flakes, and salt in a small bowl. Heat the raisins and coffee liqueur in a small pan over low heat.
- 2. Melt the chocolate with the butter in a double boiler over barely simmering water. Set aside to cool. Beat the eggs and sugar in a large bowl with electric mixer at high speed until very pale and creamy, about five minutes
- 3. With mixer at medium speed, beat in the chocolate and vanilla. With mixer at low speed, beat in the mixed dry ingredients and then the raisin mixture and chocolate chips. Drop tablespoons of the dough 1 inch apart on the prepared baking sheet. Bake until risen slightly, 10 to 12 minutes. Cool on the baking sheet for five minutes. Transfer to wire racks and let cool completely. Glaze: melt the white chocolate and red pepper flakes in a double boiler over barely simmering water. Drizzle over the cooled cookies and let rest until set, about 30 minutes. Makes about 18
