Steps:

  • In a medium bowl, mix the eggs, sour cream, mustard, salt, and black pepper.
  • Heat the butter in a 10-inch skillet until melted. Add the onions and cook over medium-low heat until softened.
  • Pour the egg mixture into the skillet. As the eggs cook, lift the moisture from the bottom and sides of the pan so the uncooked part flows to the bottom. Cook until the eggs are thick and creamy, throughout, but still moist.

Steps:

  • Place sour cream in microwaveable container.
  • Add chopped green onion.
  • Make a well in the sour cream and break in 2 eggs.
  • Cover and microwave at 60% power for 2 1/2 to 3 1/2 minutes, or until whites are cooked.
  • Sprinkle with paprika and serve on toast.

Kosher salt and freshly ground black pepper
1 teaspoon butter
1 tablespoon chopped chives

Steps:

  • Mix together the sour cream and eggs in a small bowl. Sprinkle with salt and pepper and mix well.
  • Melt the butter in a nonstick pan over medium-low heat. Add the eggs and gently scramble. Remove from the heat, sprinkle with the chives and serve.

This recipe started out as I received it with just basically sour cream, green onions, paprika, and of course an egg, cooked in microwave and served on toast. However I decided to kick it up a bit so here that recipe. Note: all ingredients and cooking time and can be adjusted to your taste.

2 tablespoons sour cream
1 tablespoon mayonnaise
1/4-1/2 teaspoon dijon-style mustard
1/4 teaspoon balsamic vinegar (optional)
1 tablespoon green onion, chopped
1/8 teaspoon paprika
1 egg
salt and pepper
1 slice toast

Steps:

  • Mix sour cream, mayo, mustard, and vinegar until well blended.
  • Spread mixture in a small micro wave safe bowl, creating a nest for the egg.
  • Sprinkle the chopped green onions and then paprika over the mixture.
  • Crack the egg into the center of the mixture.
  • Put bowl in the micro wave and cook for about 1 1/2 minutes depending on how well you like your egg cooked, at 60% power.
  • Remove and serve over slice of buttered toast (caution bowl will be hot!).
  • Sprinkle with salt and pepper and enjoy!
  • Optional: At 1 minute 15 seconds sprinkle a little grated or shredded cheese of your choice on top and continue cooking for the remaining 15 seconds.

Here's a delightful brunch number that takes great advantage of the first sorrel of spring, with the zesty leaves folded into a sauce made of scallions and loads of butter. Add eggs and cook until just set, then scoop everything up with toast.

2 fat scallions, trimmed
2 tablespoons unsalted butter
1 large bunch sorrel (about 4 ounces), stems trimmed
1/4 teaspoon kosher salt, more to taste
Ground black pepper
1/4 cup heavy cream
4 large eggs
Chile flakes, like Aleppo, Turkish or crushed red pepper
Flaky salt, like Maldon, for serving
Buttered toast, for serving

Steps:

  • Thinly slice scallions, separating darker green parts for garnish.
  • In a skillet over medium heat, melt butter. Add light green and white parts of scallion and sauté until wilted, 2 minutes. Add sorrel leaves, salt and pepper. Cook, stirring, until sorrel wilts and starts to break down, turning olive-green in color, about 3 minutes. Stir in cream and let simmer for 1 minute to thicken a bit.
  • Carefully crack eggs into skillet; they should fit in one layer. Lower heat to medium-low and sprinkle eggs with salt and pepper. Cover pan and let cook for 2 minutes, then turn off heat and let eggs rest, covered, until done to taste, about another 30 seconds for very runny yolks (the whites should cook through).
  • Carefully scoop eggs and sorrel sauce into two bowls. Season with chile and flaky salt; garnish with scallion greens. Serve with toast.

PERFECT POACHED EGGS

water (1 1/2-inch in bottom of pot or a deep skillet)
2 tablespoons vinegar
8 eggs

Steps:

  • Pour 2 tablespoons of vinegar into the poaching water.
  • Crack open eggs one at a time, into a small bowl.
  • Bring the water to a boil, then reduce temperature.
  • When water reaches a gentle simmer, pour egg into a ladle.
  • Gently transfer eggs into simmering water.
  • The egg whites will coagulate instantly & the vinegar will change the pH level of the poaching water.
  • Poach the eggs for 3 minutes spooning the simmering water over the eggs.
  • When the whites become opaque and feel firm to the touch they are done.
  • Gently remove eggs with a slotted spoon and lay them on sheets of paper towel to dry.
  • Serve immediately.

1/4 cup sliced leeks, light green and white parts only
Salt
2 sprigs thyme, leaves roughly chopped
2 sprigs parsley, leaves roughly chopped
1 large farm-fresh egg
About 2 tablespoons half-and-half
Coarsely ground black pepper
Grilled or toasted bread slices

Steps:

  • Set a rack in the middle of the oven and preheat to 400 degrees. In a small sauté pan, melt the butter over medium heat. Add the leeks, a splash of water and a pinch of salt and cook until the leeks are tender, about 2 minutes. Add the herbs and transfer to a 6-inch cazuela, cocotte or other ceramic dish, covering the bottom with the butter, leeks and herbs.
  • Crack the egg into the middle of the dish. Add enough half-and-half to barely cover the white. Sprinkle with salt and coarsely ground pepper. Cook until the white is set, 8 to 12 minutes. Serve with grilled or toasted bread.

Meet the easiest way to poach eggs-just drop 'em right into a sous vide water bath. The texture is different than your standard poached egg; it's creamy and custardy throughout both the yolk and white. This recipe makes six eggs, but you could use any number of eggs you like! The ratio for the outcome is 1:1, meaning that for every egg you put in, you get a cooked one out.

Steps:

  • Clip (or stand) sous vide machine to a tall large pot. Fill pot with warm water. Turn on machine and heat water to 153°F. Not 155°F-not 150°F. 153°F.
  • Gently lower eggs into water. (We like to put each one in a spoon and lower it in just to make sure it doesn't crack.) Cook 25 minutes.
  • Transfer eggs to an ice bath and let cool. Transfer to an airtight container and chill; they'll keep in the fridge for about a week.
  • When you want to eat one warm (though there is nothing wrong with eating a cold, poached egg), use sous vide machine set to 150°F or a small pot of hot water to heat it up for a few minutes. Then crack it into a bowl or small container so that you can drain off any water or floating albumin before you plate your pretty egg.

1/2 tbsp fresh chives, chopped
1/2 tbsp fresh parsley, chopped
1 tbsp bread crumbs, dry
1 tbsp, butter, unsalted, melted
1/2 tsp sea salt, fine
1 tsp black pepper, freshly ground

Steps:

  • 1. Preheat oven to 450F. Using a flat oven dish, pour the sour cream into the bottom of the dish. Now, you will want to break the eggs into the dish, one by one, try not to break the yolks. (you want the eggs whole)
  • 2. Salt and pepper the dish lightly; then sprinkle on the chives, parsley and bread crumbs. Top with a drizzle of melted butter and bake in a 450F oven until the eggs are set to your liking.
