APPLEBEE'S QUESADILLA BURGERS (COPYCAT)
I have never eaten Applebees Quesadilla burgers but I can say that these burgers are awesome! You can adapt this to make as many burgers as you need. I used a little over a pound of hamburger for 4 burgers and had left over seasoning.

Steps:
- For hamburgers:.
- Combine all seasoning ingredrients. Use one heaping Tblsp of seasoning mix per pound of hamburger meat. Mix into hamburger meat until well combined. Fry or grill. ( I used George Foreman grill).
- Assembling the complete burger:.
- Heat a large frying pan over medium heat. Spread butter on one side of each tortilla. Put one tortilla, butter side down in the hot pan. Sprinkle the cheeses evenly onto the center of the tortilla in the pan- but not all the way to the edges. Put the tomato, onion, bacon and jalapeno over the cheese, add the cooked seasoned burger and cover with the other tortilla butter side up (like a grilled cheese sandwhich). When the bottom is browned, about 45-90 seconds, flip the quesadilla and grill the other side. Remove the quesidilla from the pan and using a pizza cutter, cut throught the middle. Serve.

QUESADILLA BURGERS
This is a burger that I created when my family was getting burned out on regular burgers, it was a huge hit and they request these often!

Steps:
- Combine the turkey and beef together. Form into four large patties. Pat them down so they are about 1/2 inch thick or thinner. Salt and pepper to taste.
- Heat an electric skillet to Med-high heat. Spray with non-stick cooking spray, and then cook your patties until desired doneness.
- Cut the burger patties in half so you have 8 "half moons" and put a slice of pepper jack on each half, let cheese melt and keep warm.
- Meanwhile, spray your skillet again and place the tortillas on one at a time lay them on the skillet to warm and lightly brown. Just before the tortilla is done, lay one of the burger halves, straight side in the middle, on the tortilla.
- Remove from heat and place quacamole, sour cream ,and salsa in the tortilla before your cheese cools, fold up taco style and enjoy.
SPICY & CHEESY QUESADILLA BURGERS
Yet another Mexican-inspired burger. Who needs bread when you can use tortillas? These are a tasty combination of two awesome things, I think.

Steps:
- With your hands, combine the ground beef with the spices (red pepper through adobo seasoning/salt). Divide the meat into four same-sized portions, then form each into a burger patty. You want thin, very flat and very round burgers.
- Heat some olive oil in a skillet over medium-high heat. Fry each patty for 5-10 minutes (until desired doneness), flipping once halfway through. Alternately, you can grill or broil the burgers. Set patties aside when done and keep warm.
- Wipe down the skillet and return to heat. Brush one side of each tortilla with olive oil. Place tortilla oiled-side down onto hot skillet. Place 3 tablespoons of cheese on the tortilla, leaving same space empty near the edges. Top the cheese with 2 tablespoons of pico de gallo, then top with a burger patty. Now, top the burger with 1 tablespoon chopped jalapenos and then 3 tablespoons of cheese. Finally, place another tortilla on the quesadilla with the oiled-side facing you.
- Cook until the bottom of the tortilla is browned and cheese is fully melted, about 1-2 minutes. Flip, and cook another 1-2 minutes.
- Repeat steps 3 and 4 until all quesadillas are constructed and cooked.
- Cut each each quesadilla in half and serve right away with a bit of sour cream. Serve alongside rice & beans for a complete and satisfying meal.

SPICY BREAKFAST QUESADILLAS
A spicy and fun breakfast or brunch your whole family will love, with sausage, egg, cheese, and green onions. This is such a versatile dish. I basically make them with whatever I have on hand at the time. Serve with salsa, hot sauce, and sour cream, if desired.

Steps:
- Spray a skillet with cooking spray and heat over medium-low heat. Add sausages and cook, turning often, until cooked through and browned, 12 to 16 minutes. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C). Remove sausages from the skillet and chop when cool enough to handle.
- Beat eggs in a small bowl with milk.
- Spray a small skillet with cooking spray and set over low heat. Add the beaten eggs, green onions, salt, and pepper; cook until edges are set, then gently turn with a spatula until scrambled, 3 to 5 minutes. Remove eggs to a plate and wipe out the skillet with a paper towel.
- Place 1 tortilla in the skillet over low heat. Top with 1/2 of the nacho cheese sauce, 1/2 of the chopped sausage, and 1/2 of the scrambled eggs. Top with another tortilla and cook, carefully turning once, just until lightly browned on both sides, about 5 minutes. Remove to a plate and repeat to cook remaining quesadilla.
