MIXED BERRIES WITH SPICED MAPLE SYRUP



Mixed Berries with Spiced Maple Syrup image

1/2 cup pure maple syrup
1 cinnamon stick
1 star anise
1/2 teaspoon whole cloves
Pinch of kosher salt
1/4 cup heavy cream, chilled
1/4 cup creme fraiche, chilled
2 teaspoons spiced syrup
1/2 teaspoon pure vanilla extract
3 cups mixed berries, rinsed and halved or quartered if large
2 tablespoons chopped Marcona almonds, optional

Steps:

  • In a small saucepan, combine the syrup, cinnamon, star anise, cloves and salt. Bring to a simmer over medium heat, then reduce the heat and simmer gently for 5 minutes. Remove from the heat and allow the mixture to cool completely. Strain the syrup through a fine mesh strainer, discarding the spices. Cool to room temperature.
  • In a medium bowl, combine the heavy cream, creme fraiche, 2 teaspoons of the spiced syrup and vanilla. Using a large whisk or handheld mixer, beat until the cream thickens and soft peaks begin to form (careful not to over whip).
  • Divide the berries among 4 coupe glasses or dessert dishes. Dollop with the whipped creme fraiche and drizzle with 1 to 2 teaspoons of the syrup. Sprinkle with almonds, if using. Leftover syrup will keep for 2 weeks in the refrigerator in a sealed jar.

1/2 cup good flavored honey

Steps:

  • Heat wine, water, honey and cheesecloth bag and simmer, uncovered for 20 to 30 minutes or until 1 1/2 cups of liquid remain. Remove and discard cheesecloth.
  • Use to spoon over citrus, bananas, kiwi, fresh apricots, peaches and nectarines
  • In a cheesecloth, tie 12 crushed cardamom pods, whole coriander seeds, whole cloves and allspice or anything else you really like.

2 inches fresh ginger root, peeled
4 to 6 cups fresh fruit chunks

Steps:

  • Bring sugar and water to a boil in a small saucepan over moderate heat. Add ginger and reduce heat to simmer. Stir until sugar dissolves and ginger infuses syrup, about 2 minutes. Remove from heat and take out ginger. Cool and pour over chunks of pineapple, sliced kiwi, sliced bananas, or any of your favorite fruit combinations.

2 cups berries or diced fruit, (pitted or cored) such as pears, peaches, or plums
1 cup maple syrup
1 vanilla bean, (optional)

Steps:

  • Combine fruit and syrup in a small bowl. If using berries, press them with the back of a spoon until they just start to break apart. For a smoother syrup, press through a sieve.
  • Split vanilla bean, if using, and scrape seeds into mixture. Add bean to bowl.
  • Transfer mixture to a bottle or another container, cover, and refrigerate. Use within 3 or 4 days. Before serving, the syrup can be warmed in a small saucepan over low heat to desired temperature.

A little of this over cut-up fresh fruit which is then chilled -- heaven! You can vary the spices, adding such things as star anise or cardamom pods, cloves, allspice berries. If you have access to unsprayed rose petals, make your own rose water--there are recipes on Zaar--and save a ton of money. Note: cooking time is really cooling time.

My hubby likes to use fruit syrup on his pancakes and waffles, but it's so expensive to buy in stores, so, I started making this version. He likes it just as well as store bought! (yield below is a rough guess!)

Steps:

  • Combine juice and sugar in medium sauce pan.
  • Bring to a boil.
  • Let boil for a few minutes (until sugar is completely dissovled).
  • Let cool for about 30 minutes.
  • Pour into containers (I used an old glass syrup bottle) and store in fridge.

  • Finely grate peel from 2 oranges. Mix peel and 1 tablespoon sugar in small bowl. Using small sharp knife, cut off peel and white pith from all oranges. Working over large bowl, cut between membranes to release segments. (Can be made 1 day ahead. Cover orange segments and sugared peel separately and chill.) Divide oranges and juice among 8 bowls. Drizzle syrup over and sprinkle with sugared orange peel.
