1 3/4 pounds ground pork (not lean)
1 small onion, grated and squeezed dry
4 cloves garlic, finely grated
2 tablespoons minced fresh sage
1 tablespoon minced fresh thyme
3 tablespoons pure maple syrup
1 tablespoon paprika
1/2 teaspoon ground allspice
1/2 teaspoon ground coriander
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper

2 tablespoons extra-virgin olive oil

Steps:

  • Mix the pork, onion, garlic, sage, thyme, syrup, paprika, allspice, coriander, cayenne, 2 1/2 teaspoons salt and 1/2 teaspoon black pepper with your hands. Form into 18 patties, 2 inches wide and 1/2 inch thick; put on a foil-lined baking sheet, cover and chill overnight.
  • The next day, preheat the oven to 350 degrees F. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Cook half of the patties, turning once, until golden, about 5 minutes. Transfer to a baking sheet. Wipe out the skillet. Repeat with the remaining 1 tablespoon oil and patties, then transfer the patties to the oven to finish cooking, 5 to 10 minutes.

  • Crumble pork into a large bowl. Sprinkle with seasonings; mix well. Shape into four 3-in. patties., In a large skillet, cook patties over medium heat for 5-6 minutes on each side or until a thermometer reads 160°. Drain on paper towels.

1 teaspoon salt
1 teaspoon crushed red pepper
½ teaspoon ground marjoram
½ teaspoon ground black pepper

1 tablespoon olive oil

Steps:

  • Combine ground pork, sage, salt, crushed red pepper, marjoram, black pepper, onion powder, and thyme leaves in a large bowl; mix until evenly combined. Form mixture into 10 small patties.
  • Heat oil in a large skillet over medium-high heat. Working in batches, cook patties for 3 minutes. Flip and cook 3 minutes more or until juices run clear. An instant-read thermometer inserted into the center should read at least 160 degrees F (73 degrees C). Transfer patties to a paper towel-lined plate to absorb any excess grease.

1-1/2 teaspoons ground coriander

Steps:

1 small onion, finely chopped

1 1/2 teaspoons chili powder
1/2 teaspoon hot pepper sauce

1/2 teaspoon dried oregano
1/4 teaspoon cinnamon
1/4 teaspoon ground cumin
1/4 teaspoon clove

Steps:

  • In large bowl, beat egg until foamy.
  • Add pork, breadcrumbs onion, garlic, chili powdeer, hot pepper sauce, salt and pepper, oregano, cinnamon, cumin and cloves.
  • Mix well.
  • Divide mixture into 8 equal portions.
  • Form into patties.
  • Place on roasting rack.
  • Cover with paper towel and microwave on HIGH for 2 minutes.
  • Turn patties over.
  • Microwave covered with paper towel at HIGH for 3 minutes or until cooked through, rotating rack once.

2 pounds coarsely ground fresh pork butt, chilled
1/2 pound coarsely ground fresh pork fat (available at butcher shops), chilled
2 large garlic cloves, minced and mashed to a paste with 2 teaspoons salt
2 teaspoons black pepper
1 tablespoon dried sage, crumbled
3 tablespoons minced fresh thyme leaves or 1 tablespoon crumbled dried, plus, it desired, fresh thyme sprigs for garnish
1/2 teaspoon cayenne, or to taste
2 tablespoons vegetable oil

Steps:

  • In a bowl combine well the pork butt, the pork fat, the garlic paste, the pepper, the sage, the thyme leaves, and the cayenne and chill the mixture, covered, overnight. Divide the mixture into 16 balls and flatten each ball into a 1/3-inch-thick patty. In a large skillet heat the oil over moderate heat until it is hot but not smoking, in it fry the patties in batches for 4 minutes on each side, or until they are golden brown and no longer pink within, and drain them on paper towels. Transfer the patties to a serving plate and garnish them with the thyme sprigs.
