This great little drop cookie is from Household Searchlight cookbook, and a recipe that I grew up making...it was the first recipe I was ever given free reign of the kitchen with...they are great with cold milk or a cup of hot coffee or cocoa.

Number Of Ingredients 13

1 cup sugar
1/2 cup shortening
1 egg
1/2 teaspoon baking soda
1/2 cup nuts
1 teaspoon clove
3/4 cup coffee
1/4 teaspoon salt
1 teaspoon baking powder
1/2 cup raisins
1/2 teaspoon cinnamon
1 teaspoon vanilla
2 cups flour

Steps:

  • Cream shortening and sugar.
  • Add beaten egg.
  • Mix thoroughly.
  • Sift Flour, measure and sift with baking soda, salt, baking powder and spices.
  • Add Alternately with coffee to shortening/sugar mixture.
  • Add raisins, nuts and flavoring.
  • Mix thoroughly.
  • Add additional flour if necessary to make a drop cookie dough.
  • Drop by teaspoonfuls onto well oiled baking sheet.
  • Make in moderate oven (400 degrees F.) about 15 minutes -- 36 servings.

2 teaspoons Folgers® Classic Instant Coffee Crystals
1 teaspoon hot water
1/2 cup Crisco® Butter Flavor All-Vegetable Shortening or 1/2 stick Crisco® Baking Sticks Butter Flavor All-Vegetable Shortening
3/4 cup brown sugar, firmly packed
1 large egg
1/2 teaspoon vanilla extract
1 1/2 cups Pillsbury BEST® All Purpose Flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/3 cup chocolate, decorator bits

Steps:

  • DISSOLVE instant coffee in hot water. Beat shortening, brown sugar, egg, vanilla and coffee mixture in large bowl with electric mixer until light and fluffy. Mix in flour, baking powder, cinnamon, nutmeg and salt.
  • DIVIDE dough into two equal parts. Shape each half into a roll 7-inches long x 1 1/2-inches in diameter. Roll in chocolate decorator bits, pressing lightly. Wrap tightly. Refrigerate at least 2 hours.
  • HEAT oven to 375ºF. Cut rolls into 1/4-inch slices. Place slices 1-inch apart on ungreased baking sheet.
  • BAKE 6 to 8 minutes or until set. Cool on rack.

  • 2. Drop by teaspoon on greased cookie sheet.
  • 3. Bake at 350 degrees for 8-10 minutes.

3 cups flour

Steps:

  • Dissolve baking soda in 2 tablespoons hot water.
  • Cream butter and sugar; add eggs.
  • Add spices, coffee and soda mixture.
  • Mix nuts and flour. Add to mixture.
  • If dough not stiff add little more flour.
  • Drop mixture on greased cookie sheet by the teaspoon.
  • Bake in 375°F degree oven for 15 minutes.
