GINGER SPICED HOT COCOA



Ginger Spiced Hot Cocoa image

8 ounces 1 percent low-fat milk
1/4-inch piece peeled, fresh ginger, sliced into 2 rounds
2 teaspoons unsweetened cocoa powder
2 teaspoons sugar
2 teaspoons water
1/4 teaspoon dark chocolate shavings (about 1/8-ounce)

Steps:

  • In a small saucepan heat the milk and ginger over a medium-low heat until scalding, about 4 minutes. While the milk is warming, put cocoa powder and sugar into a mug. Add the water to the mug and stir until the mixture has the consistency of a paste. Remove the ginger from the warmed milk. Add the chocolate mixture to the milk and whisk until slightly frothy. Pour the hot chocolate into the mug and top with chocolate shavings.

  • Sift 1 cup confectioners' sugar, 1/4 teaspoon ground cardamom and 1/2 cup cocoa powder into a bowl. Bring 6 cups milk to a simmer over medium heat. Whisk in the cocoa mixture until smooth. Fold 1/2 teaspoon orange zest into 1 cup whipped cream. Divide the cocoa among 6 mugs. Top with the whipped cream.

Gently seasoned with a touch of chile powder, cinnamon and vanilla, this fragrant hot chocolate recipe is not too sweet and very complex. Using both cocoa powder and chocolate gives the roundest, deepest chocolate flavor while a mix of whole milk and cream makes it wonderfully rich and thick.

3 ounces bittersweet chocolate, chopped
2 tablespoons unsweetened cocoa powder
2 tablespoons sugar, or to taste
3/8 teaspoon ancho chile powder, or to taste
1 3/4 cups whole milk
1/4 cup heavy cream
1 cinnamon stick
1 teaspoon vanilla extract
Marshmallows or whipped cream, optional

Steps:

  • In a medium pot, whisk together chocolate, cocoa, sugar and chile. Place pan over medium-low heat and whisk until chocolate begins to melt. Slowly whisk in milk, then cream. Drop in cinnamon stick. Bring to a simmer.
  • Remove pot from heat. Cover pot tightly and steep 1 hour. Whisk in vanilla and taste for sweetness, adding more sugar if you like. Warm over low heat before straining and serving hot, with marshmallows or whipped cream if desired.

I made this recipe up in high school as a treat for shoveling the driveway after many New England snow storms. Now I make a huge batch every fall for my kids to enjoy. This year I gave our mason jars of it for Christmas and it was a huge hit so I'm posting the recipe.

2 cups sugar
1 cup unsweetened baking cocoa
2 teaspoons cinnamon
1 teaspoon allspice
1/4 teaspoon salt

Steps:

  • Sift the cocoa in a bowl and add the other ingredients. Mix together with a wire whisk.
  • When you would like to enjoy a cup of cocoa warm up a mug of milk. 1-2 minutes in the microwave depending on the size of the mug or heat the milk on the stove top. Add 1-2 tablespoons of cocoa to the milk once it's heated. Stir until dissolved. Makes 24 servings.

1 teaspoon salt
2 teaspoons vanilla
1 cup Irish cream liqueur
1/2 cup vodka, if desired
Whipped cream, chocolate chips, chocolate cookie straws for serving, if desired

Steps:

  • In 3-quart saucepan, heat milk, cocoa, sugar and salt over medium heat, beating with whisk often until cocoa is fully incorporated and mixture is warm and smooth. Remove from heat; stir in vanilla, liqueur and vodka.
  • Carefully pour mixture into heatproof punch bowl. Serve immediately with whipped cream, chocolate chips and chocolate cookie straws.

Steps:

  • Mix first 4 items together, in a good sized mug.
  • Add boiling water, stir till smooth.
  • Heat milk for 3 minutes over LOW heat until hot.
  • Stir the milk into the cocoa mixture until well mixed.
  • Stir in vanilla and almond extracts.
  • Enjoy--.

  • Preheat the oven to 275°F. Line a baking sheet with a silicon baking mat or with parchment paper. Set aside.
  • Whisk together the egg white, vanilla bean paste, and a few drops of water in a mixing bowl. Beat mixture until it is light and frothy. Add the almonds and toss to evenly coat with the egg white mixture.
  • In a separate bowl, combine the sugars, cocoa powder, cinnamon, cayenne, and salt. Whisk together very well, being sure to remove any lumps. Add the almonds, and toss to coat. Spread the coated almonds out on the prepared baking sheet. Roast for 30 – 40 minutes, stirring every 10-15 minutes. Keep a close watch on the almonds because they will burn quickly.
  • Once the almonds are done, spread them out on a large piece of parchment or waxed paper until they have cooled completely. Store in an airtight container.
