Steps:
- In a small saucepan heat the milk and ginger over a medium-low heat until scalding, about 4 minutes. While the milk is warming, put cocoa powder and sugar into a mug. Add the water to the mug and stir until the mixture has the consistency of a paste. Remove the ginger from the warmed milk. Add the chocolate mixture to the milk and whisk until slightly frothy. Pour the hot chocolate into the mug and top with chocolate shavings.

- In a medium pot, whisk together chocolate, cocoa, sugar and chile. Place pan over medium-low heat and whisk until chocolate begins to melt. Slowly whisk in milk, then cream. Drop in cinnamon stick. Bring to a simmer.
- Remove pot from heat. Cover pot tightly and steep 1 hour. Whisk in vanilla and taste for sweetness, adding more sugar if you like. Warm over low heat before straining and serving hot, with marshmallows or whipped cream if desired.

I made this recipe up in high school as a treat for shoveling the driveway after many New England snow storms. Now I make a huge batch every fall for my kids to enjoy. This year I gave our mason jars of it for Christmas and it was a huge hit so I'm posting the recipe.

- Sift the cocoa in a bowl and add the other ingredients. Mix together with a wire whisk.
- When you would like to enjoy a cup of cocoa warm up a mug of milk. 1-2 minutes in the microwave depending on the size of the mug or heat the milk on the stove top. Add 1-2 tablespoons of cocoa to the milk once it's heated. Stir until dissolved. Makes 24 servings.

- Preheat the oven to 275°F. Line a baking sheet with a silicon baking mat or with parchment paper. Set aside.
- Whisk together the egg white, vanilla bean paste, and a few drops of water in a mixing bowl. Beat mixture until it is light and frothy. Add the almonds and toss to evenly coat with the egg white mixture.
- In a separate bowl, combine the sugars, cocoa powder, cinnamon, cayenne, and salt. Whisk together very well, being sure to remove any lumps. Add the almonds, and toss to coat. - Once the almonds are done, spread them out on a large piece of parchment or waxed paper until they have cooled completely. Store in an airtight container.
