12 whole chicken wings
2 tablespoons garlic salt
2 tablespoons black pepper
2 tablespoons cayenne pepper
2 tablespoons fresh Greek oregano leaves
2 cups Blue Cheese Dressing, recipe follows
1/4 pound blue cheese
1 cup mayonnaise
1 tablespoon red wine vinegar
1 tablespoon lemon juice
2/3 cup evaporated milk
1/4 teaspoon garlic salt
1/4 teaspoon celery seed

Steps:

  • Rinse the chicken wings under cold running water, then drain and blot dry completely with paper towels. Place the wings in a large bowl and sprinkle with the garlic salt, pepper, cayenne, and oregano. Season just 1 side of the wings for mild, or for hotter wings, turn the wings to coat the other side with seasonings and then cover and marinate in the refrigerator for 24 hours.
  • Preheat a grill to medium-high.
  • Grill chicken wings, turning once, until the juices run clear when pierced with a fork. Serve immediately with a side of Blue Cheese Dressing.
  • Blend all ingredients together in a food processor. Transfer to a bowl, cover, and refrigerate until ready to serve.

18 chicken wings
1 medium onion
2 garlic cloves
3 scallions
1/2 cup soy sauce
2 teaspoons whole allspice, crushed in a mortar
2 teaspoons crushed hot red pepper flakes, or to taste
1/4 teaspoon freshly grated nutmeg
1 tablespoon sesame oil
1 teaspoon brown sugar

Steps:

  • Separate the chicken wings at the joints. Reserve the wing tips for another use, like making stock. Place the remaining 36 pieces in a glass or ceramic bowl.
  • Chop the onion, garlic and scallions. Place in a blender or food processor with the remaining ingredients and process to make a thick sauce. Pour this sauce over the chicken wings, cover and allow to marinate in the refrigerator at least four hours or overnight.
  • Preheat a broiler. Drain the chicken wings and place them on a broiling pan. Pour any remaining marinade into a saucepan and bring it to a simmer.
  • Broil the chicken wings until they are well glazed and cooked through, about 20 minutes. Turn them once during broiling and baste them with the reheated marinade. Serve hot or warm.

  • Add the Paprika, cayenne pepper, garlic powder, ginger powder, sriracha sauce, salt, and oil olive in a bowl. Mix till well combined.
  • Wash the chicken and pat it dry with a kitchen towel/paper towel. Add in the marinade to the chicken and mix till it's well rubbed all over the chicken and all parts are covered in the marinade. Cover the bowl and put in the fridge to marinate for 30 minutes to 2 hours.
  • Bring the chicken out of the fridge, line a baking tray with baking paper, and arrange the wings on it in a single layer. Put the tray in the middle rack on the oven. Bake at a temperature of 175 C for 10 minutes then increase to 200C /400F and bake for another 15 minutes or till done.
  • When it's done, bring the baking tray out and let the chicken rest in the tray for 5 minutes. Serve and enjoy.
