Homemade Wild Blackberry Cordial image

This blackberry cordial is marvellous, and its deep flavour and richness are incomparable. You can use it in hot or cold drinks, pour on hot porridge, mix with vodka or sparkling wine, the best way to preserve the flavour of summer all year round.

1 kilogram Fresh Blackberry
800 gram Caster Sugar
1 Lemon
to taste Sparkling Water
as needed Fresh Mint

Steps:

  • Add Fresh Blackberry (1 kilogram), 1 Tbsp of Lemon (1/2), and Caster Sugar (800 gram) to a large saucepan, mix well. Cover and leave the fruit at room temperature overnight.
  • Place the saucepan on low heat for 3 minutes to gently warm up the blackberries without boiling. Stir often until the sugar has dissolved entirely and has developed a nice deep blackberry flavor to the juice.
  • Switch off the heat and carefully pour out 80% of the juice and set aside. It should be around 350-400 ml.
  • Pour the blackberry juice through a sieve, pressing with the back of your spoon to get out as much of the juice as possible.
  • Then funnel your cordial into a sterilized bottle and seal.
  • To serve, dilute 1 part cordial with 5-6 parts Sparkling Water (to taste) in a jug. Pour over crushed ice with a slice of Lemon (1/2) and Fresh Mint (as needed).

This has a a nice layer of flavors. Steeping times posted are the minimum, especially with the orange peel. Use the orange peel later for candying, in a salad, or leave it in the bottle for interest.Ginger, Allspice, Nutmeg, and or Cinnamon are fine spices to use.

2 cups crushed blackberries
3 cups brandy
1 1/2 cups honey
1 orange peel, remove pith
1 teaspoon baking spices

Steps:

  • 1. Add crushed blackberries to brandy in a wide mouthed juice bottle.
  • 2. Let steep for 2 weeks in a dark corner. Shake bottle briefly each day.
  • 3. Strain liquid from blackberry/brandy solution. Use a coffee filter for a second straining.
  • 4. Add back to clean bottle with honey, spices, and orange peel. Close and shake well.
  • 5. Let steep for a month minimum. Strain and add back peel if you like. Shake occasionally to mix up harmless deposits from the honey.

After trying lemoncello, and learning how simple it is to make, in the middle of berry season here, this was inevitable. Blackberries, vodka and simple syrup combined to produce an absolutely delicious nectar. I used what I had on hand, which was 80 proof vodka, and it does freeze. For this reason I suggest using 100 proof vodka. Other than that nothing could be simpler.

1/2 gallon fresh clean blackberry
1 (750 ml) bottle 100 proof vodka
2 cups water
2 cups sugar

Steps:

  • Fill quart jars with blackberries. Pour vodka in to cover berries. Put on the lids and put jars in a cool, dark place and forget about them for 2 to 4 weeks. Then, pour contents through a strainer and reserve liquid. In a heavy saucepan combine sugar and water and bring to boil, long enough to dissolve sugar. When this syrup cools a bit, add to blackberry liquid and stir. Pour liquid into container of choice and put in freezer. When chilled, it's good as is or, as we tried it, in a juice glass with ginger ale. It's indescribably good.

6 cups blackberries
1 cup sugar
6 black peppercorns
2 bay leaves
1 lemon, zested in strips
1/2 cup maple syrup
1 1/4 cups brandy (optional)

Steps:

  • In a large bowl, crush berries and sugar with potato masher.
  • Add to slow cooker and stir in 1 qt water, peppercorns, bay leaves, and lemon zest.
  • Cover and cook over low heat for 2-1/2 hours. Stir, increase heat to high, and cook 1-1/2 hours
  • Strain through fine mesh sieve without pressing on berries. Stir maple syrup into blackberry juice and let cool.
  • Stir in brandy, if using. Refrigerate up to 1 month.
  • With brandy use as a cocktail with seltzer over ice, or as a sauce for pork or chicken.
  • Without brandy, whisk with olive oil for a vinaigrette, or simmer until thick and pour over pancakes, waffles, or ice cream.

Steps:

  • Combine blackberry juice, sugar, cloves, cinnamon stick, and lemon zest in a large saucepan. Slowly bring to a boil, stirring until sugar dissolves, about 5 minutes. Remove from heat and allow to cool.
  • Strain to remove spices and add rum.

This is a delicious sweet cordial using cognac (or brandy) and virtually any kind of berry can be used. This was posted in response to a forum request. Cognac VS should work well with this recipe.

Number Of Ingredients 9

4 1/2 cups blackberries or 4 1/2 cups berries, of your choice
3 cups mineral water
3 whole cloves
2 peppercorns
3 cardamom pods, lightly crushed
2 cinnamon sticks, broken into 2-inch pieces
1 bay leaf
1 cup light brown sugar
1 1/4 cups cognac or 1 1/4 cups other brandy

Steps:

  • Combine the blackberries with water and spices in a medium saucepan, and bring just to boil. Reduce heat and cook on low for 30 minutes. Gently crush the berries against the side of the saucepan while it simmers. Without mashing the berries in the strainer, strain the berries through a fine sieve into a pyrex bowl. Add brown sugar and stir until dissolved. Set aside to cool.
  • Stir in Cognac or Brandy and pour into bottles. Tightly seal the bottles and store in a cool dark place for about 2 weeks.

2 c fresh blackberries
3 c brandy
1 1/2 c honey

Steps:

  • 1. Combine berries with 2 c. brandy, steep for 1 week. strain through jelly bag. Add remaining brandy and honey, bottle. (The longer you can let this sit, the better. You might want to have several thicknesses of cheesecloth and some disposable coffee filters around to strain this, and wear rubber gloves -- blackberries will stain your hands, but the resulting beverage is a favorite in our home, poured into a brandy snifter for after dinner enjoyment with some Earl Grey tea. It's also the best thing for an upset stomach.)

Steps:

  • Pour the sugar into a 1 quart jar. Fill the remaining space with berries, but do not pack down. Fill the jar with vodka so that the berries are completely covered. Seal the jar. Let the jar stand for 2 months, shaking the jar every week. The sugar should dissolve, and the vodka will become colored.
  • Strain the liquid through a metal sieve, and then through a coffee filter to remove the fruit. Pour into pretty bottles. Drink as a cordial, or use it to flavor lemonade or iced tea.
