Steps:
- Heat oven to 400°F.
- Lightly grease a 2-quart casserole pan.
- Cook macaroni according to the package, then drain.
- In casserole, stir together SPAM® Classic and macaroni.
- In a medium saucepan, melt 1 tablespoon of butter. Blend in flour, salt, mustard, black pepper, and cayenne until smooth.
- Stir in milk and cook over medium heat, stirring until mixture thickens and boils. Add the cheese and cook, stirring until it's melted.
- Pour over SPAM® mixture and mix together well.
- In a microwave-safe bowl, melt the remaining 1 tablespoon butter, then stir in breadcrumbs and paprika. Sprinkle over macaroni. Bake 20 to 25 minutes.

- 1. Cook macaroni as directed on package.
- 2. Combine soup, milk, green pepper, onion and pepper.
- 3. Place over low heat.
- 4. Add cheese and stir occasionally until cheese is melted, then mix cooked macaroni and the cubed Spam with cheese sauce.
- 5. Pour mixture into a 1 1/2 quart casserole dish.
- 6. Place in oven at 350* degrees for about 30 minutes or until sauce is bubbly.
SPAM MACARONI AND CHEESE
This decadent yet simple recipe pairs creamy macaroni and cheese with crispy, salty-sweet diced Spam for a dish that bridges Puerto Rico and the South. It's much quicker than most homemade macaroni and cheese recipes (which often require making a roux and cream sauce), without sacrificing texture or flavor. It is also incredibly adaptable, because it will work with most cheeses. If you have the time and the will, sprinkle the finished macaroni with extra cheese and bake under a low broil for 5 to 10 minutes until toasted. During tough times, a box of instant mac and cheese and a can of Spam will also yield delicious results.

- Bring 4 quarts of water to a boil over high heat in a large, heavy pot or Dutch oven.
- Meanwhile, heat a large nonstick skillet or wok over medium-high, then add Spam and fry for about 10 minutes, stirring often, until the meat is evenly browned and crispy. (Feel free to taste along the way until the Spam reaches your desired crispness.) Remove from heat until ready to use.
- Once water has come to a rolling boil, add a fistful of salt, then stir in the macaroni. Cook according to package instructions, stirring several times, until al dente, about 7 to 9 minutes. Drain the noodles in a large colander, then rinse the noodles and the pot with lukewarm water.
- Return pot to stovetop over medium heat and add 2 cups milk. While the milk is warming, combine remaining 1 cup milk and the flour in a medium bowl and whisk together until there are no lumps. Once the milk starts to steam, whisk in the milk-and-flour mixture, and continue to whisk gently until a béchamel forms as thick as plain yogurt, about 12 minutes.
- Once the sauce is thickened, reduce heat to low and slowly whisk in 4 cups shredded cheese until fully melted. Add white and black pepper, then season to taste with salt.
- Off heat, add Spam and cooked macaroni, and fold a dozen or so times until thoroughly mixed.
- Serve immediately, passing the extra cheese at the table, or transfer the macaroni to a casserole, sprinkle with the remaining cheese, and bake under low broil until toasted on top, about 5 to 10 minutes.

- Cook luncheon meat in a skillet over medium heat until evenly browned; drain. Stir in green onion; reduce heat to low.
- Melt butter in a microwave-safe bowl in the microwave, about 30 seconds. Layer croutons on the bottom of prepared baking dish; drizzle melted butter and sprinkle Cheddar cheese over croutons. Spread luncheon meat mixture over Cheddar cheese.

A great simple casserole to make and it makes a ton!!! My husband doesn't like Spam but LOVES this!!! My grandmother used to make this for us on Friday nights after she got off of work. Its been a favorite ever since. You can substitute shredded cheese for Velvetta.

This is my son J.J.'s favortie meal. If I use red potatoes I use about 9 since they are small. This is so rich and creamy. It's like Au Gratin potatoes.

- Slice potatoes into round slices, very thin.
- Chop onion and spam into small chunks and combine with potatoes. Salt and pepper these.
- Place potatoes & onions in a casserole dish.
- Mix Cheze-Whiz, soup, milk and Season All or Season Salt, in sauce pan and heat until chez-whiz is melted.
- Pour over the potatoes and spam.

- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
- Bring the water to a boil in a large saucepan over high heat. Slowly pour the grits into the water while stirring constantly. Reduce heat to medium-low, and simmer until the grits are tender and thick, 3 to 4 minutes. Stir the grits constantly as they cook. Set aside.
- Heat a skillet over medium-high heat, and sprinkle in the grated luncheon meat. Cook, turning occasionally, until the luncheon meat has browned. Pour off any excess grease, and stir half of the luncheon meat into the grits along with the tomatoes, sour cream, and half of the Cheddar cheese. Pour the grits into the prepared baking dish, and sprinkle with the remaining luncheon meat and Cheddar cheese.
- Bake in the preheated oven until the casserole is hot and the cheese has melted and is bubbly, about 30 minutes.
