CLASSIC NICOISE SALAD



Classic Nicoise Salad image

1 pound red-skinned potatoes, sliced 1/3 inch thick
Kosher salt
2 tablespoons dry white wine
10 ounces haricots verts or thin green beans, trimmed
4 large eggs
1/4 cup white wine vinegar
1/2 shallot, minced (about 2 tablespoons)
2 tablespoons dijon mustard
1 tablespoon chopped fresh thyme
Freshly ground pepper
3/4 cup extra-virgin olive oil
8 cherry tomatoes or small cocktail tomatoes, halved or quartered
1 head Boston lettuce, leaves separated
6 radishes, trimmed and quartered
2 5 1/2-ounce cans Italian or Spanish tuna packed in olive oil, drained
1/2 cup nicoise olives

Steps:

  • Put the potatoes in a medium saucepan; cover with cold water and season with salt. Bring to a simmer over medium-high heat and cook until fork-tender, about 5 minutes. Drain and transfer to a medium bowl; drizzle with the wine and let cool. Reserve the saucepan.
  • Meanwhile, bring a separate saucepan of salted water to a boil. Fill a bowl with salted ice water. Add the haricots verts to the boiling water; cook until crisp-tender and bright green, 2 to 4 minutes. Drain and immediately plunge into the ice water to cool; drain and pat dry.
  • Place the eggs in the reserved saucepan and cover with cold water by about 1 inch. Bring to a simmer over medium-high heat, then cover, remove from the heat and let stand, 10 to 12 minutes. Drain, then run under cold water to cool. Peel under cold running water.
  • Make the dressing: Whisk the vinegar, shallot, mustard, thyme, 1/2 teaspoon salt, and pepper to taste in a bowl. Whisk in the olive oil in a slow, steady stream until emulsified.
  • Toss the tomatoes ian a small bowl with salt and pepper to taste. Add about 1/4 cup dressing to the potatoes and toss. Quarter the hard-cooked eggs.
  • Divide the lettuce among 4 plates. Arrange the potatoes, haricots verts, radishes, hard-cooked eggs and tuna on top. Pour any juices from the tomatoes into the dressing, then add the tomatoes to the plates. Drizzle with the dressing and top with the olives.

Traditionally, Niçoise salads are "composed," meaning each ingredient is artfully arranged in separate little piles on the plate. Here's the truth: That's a terrible (and lazy!) way to make a salad. This one is loaded with all the best ingredients, cooked with care, and assembled like you actually give a damn. Which you do. Your guests will thank you.

For the Vinaigrette:
1 small shallot, minced (about 2 tablespoons)
1 small clove garlic, minced (about 1/2 teaspoon)
2 teaspoons Dijon mustard
4 cured anchovy fillets, either oil-packed or fully cleaned and prepped salt-packed ones , minced (about 1 teaspoon)
3 tablespoons white wine vinegar
1 tablespoon water
3/4 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
For the Salad:
3/4 pound small waxy potatoes (about 4 potatoes), such as young Yukon Golds
1/2 medium onion
2 sprigs fresh thyme
4 medium cloves garlic
1/2 cup kosher salt, plus more for seasoning
1 pound string beans, preferably French haricots verts , trimmed
4 large eggs
1/2 pound ripe tomatoes, preferably a small variety or cherry tomatoes, halved, quartered, or cut into wedges (depending on size)
10 anchovy fillets, either oil-packed or fully cleaned and prepped salt-packed ones , cut into 1-inch lengths
1 (250-gram, about 8.5 ounces) can oil-packed bonito tuna, such as Ortiz, drained (optional; see note)
3/4 cup pitted small black olives, such as Niçoise or Taggiasca, drained
2 tablespoons drained brined capers
20 torn fresh basil leaves
3 ounces (about 4 cups) lettuce greens, such as a good mesclun mix, arugula, mizuna, and/or butter lettuce
Freshly ground black pepper

Steps:

  • Add 1 tray of ice cubes to another large bowl and fill with water. Add 1 inch of water to a large pot. Place steamer insert inside, cover, and bring to a boil over high heat. Add eggs to steamer basket, cover, and continue cooking 9 minutes. Immediately place eggs in bowl of ice water and allow to cool for at least 15 minutes before peeling under cool running water. Store in the refrigerator for up to 5 days. Cut eggs into quarters lengthwise.

1/4 pound fresh green beans, trimmed
1/2 cup oil and vinegar salad dressing
1/2 teaspoon grated lemon zest
1/4 teaspoon freshly ground pepper
6 cups torn romaine
4 hard-boiled large eggs, sliced
3 pouches (2-1/2 ounces each) light tuna in water
2 medium tomatoes, chopped

Steps:

  • Place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 8-10 minutes, adding green beans during the last 3 minutes of cooking. Drain potatoes and beans; immediately drop into ice water. Drain and pat dry., In a small bowl, combine salad dressing, lemon zest and pepper. Divide romaine among 4 plates; arrange potatoes, green beans, eggs, tuna and tomatoes over romaine. Serve with dressing mixture.

1/3 cup olive oil
1/4 cup lemon juice
2 teaspoons minced fresh oregano
2 teaspoons minced fresh thyme
1 teaspoon Dijon mustard
1 garlic clove, minced
1/4 teaspoon coarsely ground pepper
1/8 teaspoon salt
1 can (16 ounces) kidney beans, rinsed and drained
1 small red onion, halved and thinly sliced
1 pound small red potatoes (about 9), halved
1 pound fresh asparagus, trimmed
1/2 pound fresh green beans, trimmed
12 cups torn romaine (about 2 small bunches)
6 hard-boiled large eggs, quartered
1 jar (6-1/2 ounces) marinated quartered artichoke hearts, drained
1/2 cup Nicoise or kalamata olives

Steps:

  • For vinaigrette, whisk together the first 8 ingredients. In another bowl, toss kidney beans and onion with 1 tablespoon vinaigrette. Set aside bean mixture and remaining vinaigrette., Place potatoes in a saucepan and cover with water. Bring to a boil. Reduce heat; simmer, covered, until tender, 10-15 minutes. Drain. While potatoes are warm, toss with 1 tablespoon vinaigrette; set aside., In a pot of boiling water, cook asparagus just until crisp-tender, 2-4 minutes. Remove with tongs and immediately drop into ice water. Drain and pat dry. In same pot of boiling water, cook green beans until crisp-tender, 3-4 minutes. Remove beans; place in ice water. Drain and pat dry., To serve, toss asparagus with 1 tablespoon vinaigrette; toss green beans with 2 teaspoons vinaigrette. Toss romaine with remaining vinaigrette; place on a platter. Arrange vegetables, kidney bean mixture, eggs, artichoke hearts and olives over top.

1/2 lb green beans, washed and trimmed
1/2 lb baby spinach leaves, washed and patted dry
1 small head romaine lettuce, washed and patted dry
2 eggs, hard-boiled and sliced
1 (12 ounce) can tuna in water, drained
2 tablespoons capers, drained
1/2 cup nicoise olive, drained
1/2 lb grape tomatoes, rinsed
1/4 cup white wine vinegar
2 tablespoons olive oil
1 shallot, minced
1 garlic clove, mincd
1/4 cup fresh tarragon, minced
1 pinch salt
1/2 teaspoon black pepper

Steps:

  • Blanch green beans until just tender, 3-4 minutes. Remove immediately and dunk in a bowl of cold water to halt cooking and set color. Drain and set aside.
  • You can arrange the salad "artfully" on 6 plates, as the author suggests, or you can combine the spinach and lettuce and add the remaining salad ingredients on top.
  • Whisk dressing ingredients together and drizzle as you wish, adding more salt or pepper to taste.

2 cups Simply Potatoes Diced Potatoes with Onion
10 ounces Baby Spinach, fresh
2 eggs, hardboiled and cut into quarters
1/2 lb fresh shrimp, peeled and deviened, tails on
1/2 cup fresh cilantro
1/2 lime, juiced
1 garlic clove
1/4 cup olive oil
2 tablespoons butter
1 (14 ounce) can black beans, rinsed and drained
1/2 cup queso fresco, crumbled
1/2 red onion, sliced
1/2 chipotle chile in adobo, chopped (can use less if too spicy)
2 tablespoons lemon juice, fresh
1/2 tablespoon Dijon mustard
1 tablespoon honey
1/2 cup extra virgin olive oil
salt and pepper

Steps:

  • For the shrimp: In a small food processor , place the cilantro, 1/4 cup olive oil and garlic and process until it is combined. Mix the shrimp and cilantro mixture in a bowl until shrimp is covered. Heat a nonstick pan on medium high . When pan is hot , add butter and place shrimp in pan and cook until shrimp is pink , don't overcook or shrimp will be tough. Place on plate and let cool.
  • For Potatoes: In a large skillet heat Simply Potatoes until heated through and browned, place on a plate to cool.
  • For salad: In a large salad bowl or platter, layer spinach over whole platter or bowl. Starting from one side , layer the potatoes in a row, then layer the shrimp, then the black beans, the hardboiled eggs, the queso fresco, and the red onion. The ingredients should cover the whole salad in rows.
  • Dressing: In a small bowl or food processor, mix the chipotle pepper, lemon juice , mustard and agave with a whisk. Slowly add the olive oil until it is combined with the ingredients and has emulsified. Season with salt and pepper. Serve with salad.
