MEXICAN FRIED RICE

Number Of Ingredients 13

3 cups cooked white rice
4 tablespoons olive oil, divided
1 small onion, finely diced
2 garlic cloves, minced
1 cup frozen corn, thawed
1 4-ounce can green chiles, drained
½ cup chopped tomatoes
1 teaspoon cumin
2 teaspoons chili powder
1 teaspoon paprika
½ teaspoon salt
¼ teaspoon black pepper
2 green onions, sliced

Steps:

  • Add two tablespoons of the olive oil to a large skillet over medium-high heat.
  • When the oil is hot, add the onion, and sauté for 3 to 4 minutes or until soft.
  • Add the tomatoes, corn, and green chiles, and cook for 2 to 3 minutes or until the liquid has cooked out.
  • Add the seasonings and garlic, and cook for 1 to 2 minutes or until the garlic begins to brown.
  • Turn the heat down to medium, add the remaining olive oil and the cooked rice.
  • Cook for 4 to 5 minutes, stirring frequently to blend the rice and seasonings.
  • Stir in the green onions, and remove the pan from the heat.
  • Top with the remaining green onions.

1 cup water
1/2 cup frozen corn, thawed
1/2 cup chopped sweet orange pepper
1/2 cup black beans, rinsed and drained
1 can (4 ounces) chopped green chilies
2 tablespoons butter
1 garlic clove, minced
1/4 teaspoon salt
1/4 teaspoon ground cumin
1/8 teaspoon ground turmeric
1 cup uncooked instant rice

Steps:

  • In a large saucepan, combine the first 10 ingredients; bring to a boil. Stir in rice. Cover and remove from the heat; let stand for 5 minutes. Fluff with a fork.

4 cups cooked rice
1 1/2 cups grated Jack
1 1/2 cups corn kernels, frozen or canned
2/3 cup milk
1/2 cup sour cream
1/2 cup thinly sliced scallion
1 (4-ounce) jar roasted red peppers, drained, patted dry and diced
1 jalapeno or serrano, seeds removed and minced, optional
Salt and cayenne pepper
Paprika, for sprinkling

Steps:

  • Preheat oven to 350 degrees F.
  • Combine all ingredients in a large bowl (reserving 3 tablespoons of cheese). Spoon into buttered souffle dish. Top with reserved cheese and sprinkle lightly with paprika. Bake until top is golden, 25 to 30 minutes.

After I made this I wasn't sure why it was called a "fried rice" but I guess if you look at it from a spicy southwestern way. Even though it's not fried it's a great dish. Very fast and easy to make!!

1 lb boneless skinless chicken breast, cubed
1 (10 ounce) package frozen corn, thawed
1 small green pepper, chopped
1 small onion, shopped
2 teaspoons canola oil
1 cup chicken broth
1 cup salsa
1 teaspoon chili powder
1/4 teaspoon cayenne pepper
1 1/2 cups uncooked instant rice
1/2 shredded low-fat cheddar cheese

Steps:

  • In a large nonstick skillet, sauté the chicken, corn green pepper and onion in oil until chicken juices run clear.
  • Stir in the broth, salsa, chili powder and cayenne; bring to a boil.
  • Add the rice.
  • Cover and remove from heat; let stand for 5 minutes.
  • Fluff with a fork.
  • Sprinkle with cheese.
  • Cover and let stand for 2-3 minutes for until cheese is melted.
