Your family will love these savory hand pies! Mashed potatoes, sausage and cheese is baked inside flaky pie crust for the ultimate handheld dinner.

1 pound Bob Evans Original Sausage
24 ounces Bob Evans garlic mashed potatoes
1 cup shredded sharp cheddar
1/4 teaspoon ground mustard
2 boxes refrigerated pie crusts ((14.1 ounces each))
1 large egg
1 tablespoon milk
1 cup beef gravy ((for dipping, optional))

Steps:

  • Brown the sausage in a skillet over medium heat. Drain well.
  • In a bowl, mix together the sausage, mashed potatoes, cheese and ground mustard.
  • Unroll one pie crust on a lightly floured surface. Gently roll the circle into more of a rectangle shape.
  • Cut the pie dough rectangle into 6 equal rectangles.
  • Spoon about ⅓ cup of mashed potato mixture onto three of the rectangles that you cut. Spoon the mixture out to about ½ inch of the sides of the dough.
  • Place the remaining dough rectangles overtop the potato mixture, matching the edges.
  • Use the tines of a fork to press the edges together all around the rectangle.
  • Use the tines of a fork to poke a few holes in the top of the hand pie to vent.
  • Place the hand pies on a non-stick baking sheet.
  • Repeat with the remaining 3 pie crusts to make a total of 12 hand pies.
  • Make an egg wash by whisking the egg and milk together in a small bowl
  • Brush the top of the hand pies lightly with the egg mixture.
  • Bake at 400 degrees Fahrenheit for 25 minutes.
  • Serve warm with warmed beef gravy for dipping.
  • Store in an airtight container in the refrigerator.

3 slices thick-cut bacon, cut into 1/4-inch pieces
3 green onions, chopped
½ pound Yukon Gold potatoes, cut into small cubes
⅔ cup shredded extra-sharp Cheddar cheese
2 tablespoons sour cream
¼ teaspoon ground black pepper
1 (14.1 ounce) package refrigerated pie crusts
1 egg, beaten

Steps:

  • Place bacon in a nonstick pan and cook over medium-high heat, stirring occasionally, until fat begins to render, about 3 minutes. Add green onions and cook until bacon is crisp, about 1 minute more. Transfer to a plate using a slotted spoon.
  • Add potatoes to the same pan and stir to coat with bacon grease. Cook over medium-high heat for 4 minutes, stirring occasionally to keep them from sticking. Remove from heat and cover with a lid. Let cool.
  • Stir bacon and green onions into the cooled potatoes; add Cheddar cheese and sour cream. Season with pepper.
  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Unroll pie crusts on a flat work surface. Cut out 24 circles using a 3-inch biscuit cutter or glass. Place a spoonful of the potato filling in the center of 12 of the circles, keeping the filling away from the edge of the dough. Cover with remaining circles, pressing tops down lightly.
  • Pick up a hand pie and pinch the edges together to seal. Return to the work surface and use a fork to crimp the edges together. Place on the prepared baking sheet. Repeat with the remaining pies.
  • Brush beaten egg over the pies using a pastry brush.
  • Bake in the preheated oven until golden brown, 18 to 20 minutes.

2 tablespoons canola oil
3 ½ cups Yukon gold potatoes, cut into 1/4-inch pieces
½ teaspoon salt
¼ teaspoon ground black pepper
3 andouille sausage links, chopped into small pieces
½ cup finely chopped onion
2 tablespoons canned chopped green chiles
2 prepared pie crusts
1 cup shredded mild Cheddar cheese
1 cup shredded Gouda cheese
1 egg
1 tablespoon milk

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Add canola oil to a 12-inch nonstick pan over medium heat. Add potatoes, salt, and pepper. Fry until potatoes are fork-tender, about 20 minutes. Transfer to a medium bowl.
  • Add sausage and onion to the same pan. Cook and stir until onion is translucent, about 5 minutes. Transfer to the bowl of potatoes using a slotted spoon. Stir in green chiles. Allow mixture to cool to room temperature.
  • Divide each pie crust into 3 pieces. Roll out each piece into an 8-inch circle. Add 3 tablespoons of the potato-sausage mixture to each circle. Mix Cheddar and Gouda cheeses together; sprinkle 3 tablespoons over the filling.
  • Beat egg and milk together to make egg wash. Fold dough over the filling in a semi-circle shape. Brush the edge of the pastry with egg wash; press to seal. Flute the border with a fork. Brush the tops with egg wash and score tops with a fork.
  • Space hand pies evenly on the prepared baking sheet.
  • Bake in the preheated oven until golden brown, about 20 minutes.

Steps:

  • Preheat oven to 400 degrees F. In 10-inch skillet, cook maple pork sausage over medium heat 8 to 10 minutes, stirring occasionally, until no longer pink; drain. Remove sausage from skillet; set aside.
  • Separate biscuits and roll each biscuit into a 5-inch round. In a medium bowl combine maple sausage, southwest style hash browns, black beans, and shredded pepper jack cheese.

The kids scarf it down and my husband fights them off in hopes of having leftovers for lunch the next day. I love it because it is a one dish meal and clean up is a breeze. Adjust dressing and cheese to taste--we like ours "dripping"!

20 ounces Simply Potatoes, Diced potatoes with onions
3/4 cup Italian dressing, divided
1 lb kielbasa or 1 lb other sausage
1 1/2 cups cheddar cheese, shredded

Steps:

  • Heat 1/4 cup Italian dressing in skillet. Cook bag of Simply Potatoes according to package directions with dressing as substitute for oil, approximately 15 minutes.
  • Slice sausage and add to potatoes. Cook on high heat until both are browned.
  • Add 1/2 cup Italian dressing (more or less to preference) and cook 2-3 more minutes.
  • Sprinkle shredded cheddar over top and allow to melt.

6 slices pepper bacon
2 1/2 cups Simply Potatoes Southwest Style Hash Browns
2 cups crystal farms monterey jack pepper cheese, shredded
3 cups simply potatoes jalapeno & cream cheese mashed potatoes
4 stalks green onions, sliced on the bias

Steps:

  • Heat oven to 400 degrees.
  • Cook bacon, cool, and crumble. To a 12-cup muffin pan, add equal amounts of bacon grease to each muffin cup.
  • To a medium bowl, add the hash browns and gently blend in 1 1/2 cups of the shredded cheese. Press about 2 tablespoons of the hash brown and cheese mixture into each muffin cup. Bake in oven for 18 - 20 minutes or edges are crispy.
  • While hash brown cups bake, peel film at corner of mashed potatoes and heat on high for 3 minutes in microwave. Remove from microwave and stir.
  • Remove hash brown cups from the oven. Spoon in equal amounts of mashed potatoes. Top with equal amounts of remaining cheese and place under broiler for 5 minutes or bake in the oven until cheese is melted.
  • Top each cup with green onions and bacon and serve. Enjoy!

I made this one morning camping, I usually make fried potatoes & eggs for everyone, but now I use Simply Potatoes, So much easier Plus you can use the different brands they sell. my favorite is southwest style. no chopping Onions, red, & green bell peppers up :-) I use hot sausage links cooked and browned ahead of time. usually the day before, I slice them like a 1/2 to 3/4 inch thick and save in fridge for the morning.

1 (20 ounce) package Simply Potatoes Southwest Style Hash Browns
3 hot Italian sausage links, cooked & browned
6 eggs, beaten
1 cup monterey jack pepper cheese, shredded
3 tablespoons olive oil

Steps:

  • In a 12" skillet add sausage links, poke holes in the links with a fork or toothpick to release some grease, add 2 cups of water and cook on medium heat turning often until water is gone, about 20 minutes. continue cooking & turning until the links are browned on all sides, remove from pan & slice the links 3/4" inch and save for next step.
  • In a 12" Skillet or dutch oven, heat 2 Tbls of oil on Medium heat.
  • Add Potatoes and the Pre-cooked, & browned, Hot sausage slices.
  • Mix well, flatten,add salt &pepper and cook on medium heat for about 8 minutes.
  • add 1 tbls of oil drizzled around on top of potatoes and turn with spatula.
  • cook for another 8 minutes or until potatoes are soft and browning.
  • turn them again if you want to brown them more. for a few minutes.
  • Reduce heat to medium-low. Add eggs. Cook for 3 to 4 minutes, stirring occasionally, until eggs are set.
  • Top with Cheese, turn off heat and cover with a lid or foil for a minute or 2.
  • so the cheese melts some.
  • serve with a cup of OJ and Toast.
