EASY SOUTHERN BLUE CRAB CAKES



Easy Southern Blue Crab Cakes image

If you like crab cakes, you will love my easy recipe for Southern Blue Crab Cakes. It's a simple, delicious combination of fresh blue crab lump crabmeat, and just enough mayonnaise, egg, and cracker crumbs to bind it together.

1 lb fresh lump Blue Crab crabmeat
20 saltine crackers (finely crushed)
1/2 cup mayonnaise
1 large egg (beaten)
1 tsp Dijon mustard
1 tsp Worcestershire sauce
1/4 tsp hot sauce
1/4 cup olive oil

Steps:

  • Pour the meat out on a clean sheet pan or plate and pick through it with your fingers to remove any remaining small pieces of shell. Handle it carefully and try not to break up the lumps. It's hard to see the bits of the shell but you can feel them with your fingers.
  • Add the "picked over" crabmeat and crushed saltines to a medium-size bowl and mix gently. Set aside.
  • Add the mayonnaise, egg, mustard, Worcestershire sauce, and hot sauce to a small bowl and whisk until smooth.
  • Combine the two mixtures and gently toss the ingredients together.
  • Cover the bowl and place it in the refrigerator for 30 minutes.
  • To form the cakes, roughly divide the mixture and then, using your hands, lightly shape it into one-half inch cakes about three inches wide, just until it holds together. I like to use a one-third cup measuring cup to make sure all of the cakes are the same size. Do not pack the mixture tightly.
  • Place the cakes on a plate lined with a sheet of wax paper or parchment paper. Cover and refrigerate for at least 30 minutes.
  • Add the olive oil to a large skillet over medium heat. When the oil is hot, add four of the cakes. Cook for about three minutes or until they are golden brown and gently turn them over using a slotted fish turner or pancake turner. I usually hold the top of the cake lightly with my fingers when turning them over to make sure they don't fall apart.
  • Cook them for another three minutes or until they are golden brown on the other side. Remove from the skillet. Drain on a wire cooling rack. Repeat with the remaining cakes.
  • Serve warm with plenty of remoulade, tartar, or cocktail sauce.

These are some mighty good crab cakes! The fresh herbs add a lovely pop of flavor. As does, the Worcestershire sauce. And the sauce tops them perfectly. Serve these as a main dish, side dish ... or they'd even be good as a sandwich. Savory and delicious!

FOR THE CRAB CAKES
2 Tbsp chopped shallot
2 eggs, beaten
2 Tbsp mayonnaise
2 tsp Dijon mustard
3/4 tsp chopped fresh basil
1/2 tsp chopped fresh thyme
3/4 c bread crumbs
2 lb lump crab meat
2 tsp Worcestershire sauce
1 tsp Old Bay seasoning
2 pinch Creole seasoning
1 1/2 tsp lemon juice
1/2 stick real butter
FOR THE SAUCE
1/4 c mayonnaise
2 Tbsp Gulden's mustard

Steps:

  • 1. In a medium bowl, combine shallot, eggs, mayonnaise and dijon mustard and mix well.
  • 2. Carefully add basil, thyme, bread crumbs and crab meat. Stir until just mixed, taking care not to break up crab lumps. Add worcestershire and lemon juice, and sprinkle in Old Bay and Creole seasonings. Mix to ensure all crab meat is well coated. Form into round and slightly flattened crab cakes.
  • 3. Mix 1/4 cup mayonnaise and 1/4 cup Gulden's mustard to make sauce. Set aside.
  • 4. Heat butter in skillet over medium heat. Saute the crab cakes on each side until crusted with a nice golden brown color.
  • 5. Serve crab cakes topped with a tablespoon of sauce. These crab cakes also are delicious served warm on a bed of fresh spinach leaves, drizzled with a raspberry vinaigrette.

1 env. (0.7 oz.) GOOD SEASONS Italian Dressing Mix
2 Tbsp. GREY POUPON Country Dijon Mustard
2 cans (6 oz. each) crabmeat, drained, flaked
25 round buttery crackers, finely crushed, divided
1 green onion, chopped
1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream

Steps:

  • Mix half the lime juice, 1/2 cup mayo, dressing mix and mustard in medium bowl until blended. Add crabmeat, 1/2 cup cracker crumbs and onions; mix lightly.
  • Shape into 18 (1/2-inch-thick) patties; coat with remaining cracker crumbs.
  • Cook, in batches, in large nonstick skillet on medium heat 2 min. on each side or until heated through and golden brown on both sides. Meanwhile, mix sour cream, lime zest, and remaining mayo and lime juice until blended.
  • Serve crab cakes with the lime sauce.

10 ounces lump crabmeat (fresh)
1 1/2 cups white breadcrumbs (or sourdough divided)
1/4 cup green onion (chopped)
1/2 cup fat-free mayonnaise (or reduced-fat, divided)
1 egg white (lightly beaten)
2 tablespoons grainy mustard (coarse grain or spicy brown, divided)
3/4 teaspoon hot pepper sauce (divided)
2 teaspoons olive oil (divided)
lemon wedge (to serve)

Steps:

  • Preheat oven to 200°F.
  • combine crabmeat, 3/4 cup bread crumbs and green onions in a medium bowl and then add 1/4 cup mayonnaise, egg white, 1 tablespoon mustard and 1/2 teaspoon pepper sauce, mix well.
  • Using 1/4 cup of mixture per cake, shape 8 1/2 inch thick cakes and then roll crab cakes lightly in remaining 3/4 cup bread crumbs.
  • Heat a large nonstick skillet over medium heat until hot; add 1 teaspoon oil and add 4 crab cakes, dook for 4 to 5 minutes per side or until golden brown and transfer to a serving platter, keep warm in oven and repeat with remaining teaspoon oil and crab cakes.
  • To prepare dipping sauce, combine remaining 1/4 cup mayonnaise, 1 tablespoon mustard and 1/4 teaspoon hot pepper sauce in small bowl, mix well.
  • serve crab cakes warm with lemon wedges and dipping sauce.

1/4 c butter
1 small onion, minced
4 large egg yolks
2 tsp coleman's dry mustard
8 slice white bread (crusts trimmed, flattened, and finely diced)
1/4 tsp cayenne pepper
2 tsp old bay seasoning
1/2 c mayonnaise
2 Tbsp freshly chopped parsley
3 dash(es) tabasco sauce
2 Tbsp worcestershire sauce
1 tsp fresh lemon juice
1 tsp salt
1/2 tsp white pepper (black pepper works also)
3 lb 3 pounds jumbo lump crabmeat picked clean
FOR THE BREADING:
2 eggs, beaten
1 c milk
1 c all-purpose flour
1 c freah bread crumbs
**PEANUT OIL IS RECOMMENDED FOR DEEP FRYING.

Steps:

  • 1. Heat butter in a small sauté pan and cook onion until transparent. Set aside.
  • 2. In a large bowl, combine onion, egg yolks and mustard. Stir in bread, cayenne pepper, Old Bay seasoning, mayonnaise, parsley, Tabasco sauce, Worcestershire sauce, lemon juice, salt and pepper.
  • 3. Gently fold in the crab meat being careful not to break up the lumps. Form into 3 ounce cakes.
  • 4. Preheat deep fryer to 350 degrees.
  • 5. In a small bowl, combine beaten eggs and milk.
  • 6. Dip crab cakes in flour and then using a slotted spoon dip in the egg wash. Sprinkle with fresh bread crumbs, coating well.
  • 7. Deep-fry 5 minutes or until golden brown.
