SPICY CHERRY CHUTNEY



Spicy Cherry Chutney image

This Spicy Cherry Chutney is sweet and sour with a bit of a kick. The perfect condiment to serve at your summer barbecue!

Number Of Ingredients 9

1 teaspoon olive oil
1 cup chopped red onion
2 tablespoons minced habanero or jalapeno pepper, (use as few or many seeds as you'd like depending on your preferred spice level)
1 teaspoon freshly grated ginger
2 cups pitted, halved cherries, (can use frozen cherries out of season)
1/4 cup sugar
3 tablespoons cider vinegar
1 tablespoon lemon juice
1/4 teaspoon Kosher salt

Steps:

  • In a medium sauce pan, heat olive oil over medium-high heat. Saute onion and pepper until onion is translucent, about 5 minutes. Stir in ginger and saute until fragrant, about 1 minute.
  • Add cherries, sugar, cider vinegar, lemon juice, and salt. Bring to a boil; lower heat to a rapid simmer and cook until sauce thickens, about 40 to 45 minutes.
  • Transfer to a bowl or serving dish and set aside to cool. Chutney will continue to gel and thicken as it cools. Serve room temperature or store in fridge and serve cold.

My mother-in-law makes this super-easy sauce every Thanksgiving. Cherries give tart cranberries a slightly sweet flavor. I serve it alongside turkey, pork and ham.

Number Of Ingredients 4

1-1/2 cups sugar
1-1/2 cups water
4 cups fresh or frozen cranberries (1 pound)
1 can (14-1/2 ounces) pitted tart cherries, drained

Steps:

  • In a large saucepan, cook sugar and water over medium heat until sugar is dissolved. Add cranberries and cherries. Bring to a boil. Cook uncovered, until cranberries begin to pop, about 6 minutes. Reduce heat; cook 20 minutes longer or until thickened. Pour into a serving dish. Cover and chill for at least 2 hours.

1 large sweet onion, finely chopped
1 small green pepper, chopped

1/3 cup packed brown sugar
1/4 cup balsamic vinegar
2 teaspoons minced fresh gingerroot
1-1/2 teaspoons grated orange zest
1/2 teaspoon ground cardamom
1/4 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon ground allspice

Steps:

  • In a large saucepan, combine all ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 45-50 minutes or until vegetables are tender and mixture achieves desired thickness, stirring occasionally. Serve warm or chilled. Refrigerate leftovers.,

1 cup dried tart cherries (about 5 ounces)
1 cup (packed) golden brown sugar
1/2 teaspoon ground cardamom

Steps:

  • Mix all ingredients in large bowl. Place half of mixture in processor. Using on/off turns, process until coarsely chopped. Transfer to medium bowl. Repeat with remaining ingredients. Chill at least 1 day and up to 2 days, stirring occasionally.

  • Bring to a boil; reduce heat to medium-low. Simmer until most berries have burst and liquid is syrupy, 20 to 25 minutes. Transfer to a bowl. Cover, pressing plastic wrap directly on surface of relish; refrigerate.

  • For sour cherry relish, bring wine and muscat to the boil in a saucepan over medium heat, add cherries, remove from heat and set aside to soak (20 minutes). Place onion in a bowl, pour over enough boiling water to cover, set aside for 5 minutes, drain (discard liquid), set aside. Bring vinegar, sugar, apple, spices, orange rind and onion to the simmer over medium heat, stir until sugar dissolves, then simmer for flavours to infuse (5 minutes). Add cherries and soaking liquid, simmer until slightly thickened (20 minutes), stir in redcurrant jelly until dissolved, simmer until softly set (10-15 minutes). Transfer to sterile jars, cool, refrigerate until required. Sour cherry relish will keep refrigerated for 2 weeks in a sterile container.
  • Make an incision through skin down backbone of turkey, carefully separate skin, sliding fingers between skin and flesh and working around each side. Cut skin at wingtips and drumsticks to remove skin in a single piece. Remove breasts from carcass with a small sharp knife, running down breastbone, and trim sinew. Remove drumsticks and reserve for another use.
  • Melt butter and garlic in a small saucepan over medium heat (30 seconds-1 minute), add lemon rind and cool slightly.
  • Cut a 20cm x 30cm piece of muslin, dampen slightly with water then dip in butter mixture. Brush turkey skin with a little butter mixture and lay flat on muslin. Place a turkey breast in centre, season to taste, brush with more butter mixture and scatter with herbs. Brush remaining breast with butter mixture, season to taste and place top-to-tail on top of other turkey breast. Brush with more butter mixture. Bring up side of skin, fold in ends and roll to enclose. Trim excess skin and secure turkey roll at intervals with kitchen string. Wrap turkey in muslin, secure with kitchen string, then weigh to determine cooking time (allow 40 minutes cooking per kilogram).
