4 large unwaxed oranges, or 2 oranges and 2 lemons
big bag of granulated sugar
100g bar of dark chocolate (or gluten-free alternative), optional

Steps:

  • Cut the fruit into 8 wedges, then cut out the flesh, leaving about 5mm thickness of peel and pith. Cut each wedge into 3-4 strips.
  • Put the peel in a pan and cover with cold water. Bring to the boil, then simmer for 5 mins. Drain, return to the pan and re-cover with fresh water. Bring to the boil, then simmer for 30 mins.
  • Set a sieve over a bowl and drain the peel, reserving the cooking water. Add 100g sugar to each 100ml water you have. Pour into a pan and gently heat, stirring to dissolve the sugar. Add the peel and simmer for 30 mins until the peel is translucent and soft. Leave to cool in the syrup, then remove with a slotted spoon and arrange in 1 layer on a wire rack set over a baking sheet. Put in the oven at the lowest setting for 30 mins to dry.
  • Sprinkle a layer of sugar over a sheet of baking parchment. Toss the strips of peel in the sugar, a few at a time, then spread out and leave for 1 hr or so to air-dry.
  • Pack the peel into an airtight storage jar or rigid container lined with baking parchment. Will keep for 6-8 weeks in a cool, dry place.
  • To make into a delicious gift, melt the chocolate in a small bowl. Dip the candied orange peel into the chocolate to half-coat them, shaking off the excess. Put them on baking parchment to set, then pack into small cellophane bags tied with ribbon or pretty kitchen string.

3 oranges

Steps:

  • With a sharp paring knife, slice off ends of grapefruits, oranges, or lemons. Following curve of fruit, cut away outermost peel, leaving most of the white pith on fruit. Slice peel lengthwise into 1/4-inch-wide strips.
  • In a medium pot of boiling water, cook peel until tender, about 10 minutes. With a slotted spoon, transfer peel to a wire rack set over a rimmed baking sheet; spread in a single layer to dry slightly, about 15 minutes.
  • In a medium saucepan, bring 1 cup sugar and 1 cup water to a boil over high, stirring to dissolve sugar. Add peel and boil until it turns translucent and syrup thickens, 8 to 10 minutes. With slotted spoon, transfer peel to wire rack, separating the pieces as needed.
  • Let peel dry 1 hour. Toss with 1/2 cup sugar to coat.

This is a good way to use up lemon rind and it goes good with coffee or on cake. It really does taste like candy, and you can do this to ANY citrus fruit. If you use oranges you can add brandy, cloves or other spices the mixture. Chop it up and put it in cookies, or just eat it by itself.

Steps:

  • Cut lemons into slices about 1/4 inch thick and remove the fruit pulp. Cut the rings in half so the peels are in long strips.
  • Bring water and lemon peel to a boil in a small pan. Drain water, and repeat with fresh cold water. Repeat the boiling step three times (see Editor's Note). Drain and set peels aside.

A very traditional stollen that I make every Christmas. This stollen is loaded with dried fruit, candied citrus and orange peel, and almonds.

8 cups all-purpose flour
3 ounces compressed fresh yeast
1 pinch white sugar
1 tablespoon lukewarm milk
1 ½ cups milk
1 cup unsalted butter
2 tablespoons unsalted butter
1 cup white sugar
2 egg yolks
½ teaspoon salt
1 ¾ cups chopped blanched almonds
1 ¼ cups raisins
6 tablespoons candied lemon peel
6 tablespoons chopped candied orange peel
2 tablespoons melted butter
2 tablespoons confectioners' sugar

Steps:

  • Place flour in a large bowl, make a well in the center, and crumble fresh yeast into it. Sprinkle in sugar and add 1 tablespoon milk. Cover and let rise at a warm place for 15 minutes.
  • Heat 1 1/2 cups milk and 1 cup plus 2 tablespoons unsalted butter in a saucepan over low heat until butter is melted.
  • Pour milk-butter mixture over yeast mixture and add 1 cup sugar, egg yolks, and salt. Knead until a soft dough forms. Cover with a clean dish towel and let rise in a warm place until doubled in volume, about 1 hour.
  • Line a baking sheet with parchment paper.
  • Mix almonds, raisins, candied lemon peel, and candied orange peel together and fold into the dough. Shape dough into a loaf and place on the prepared baking sheet. Cover and let rest until the loaf has risen again slightly, about 30 minutes.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Bake in the preheated oven until toothpick inserted in the middle comes out clean, 45 to 60 minutes. Remove from oven. Brush hot stollen immediately with 2 tablespoons melted butter and dust with confectioners' sugar.

SOFT-CANDIED CITRUS PEEL



Soft-Candied Citrus Peel image

Thin strips of soft-candied citrus peel enliven the flavor of desserts and look beautiful as garnishes for cakes, fruit compotes, sherbets, custards, and, especially, Champagne Gelée (page 114). Although it's convenient to have a jar on hand to use on a whim, they're quick and easy to make.

Yield makes about 1 cup (240 g)

Number Of Ingredients 4

5 lemons, oranges, or limes (preferably organic), washed
2 cups (500 ml) water
1 cup (200 g) sugar
1 tablespoon light corn syrup (optional; see Tip, page 252)

Steps:

  • Using a sharp vegetable peeler and working from pole to pole, remove the zest from the citrus fruits in strips about 1 inch (3 cm) wide. Try to remove only the colored portion of the rind and leave the bitter white pith on the fruit. (If you've peeled too deeply, you can lay the strips flat on a counter, pith side up, and carefully trim away the pith with a knife.) Using a sharp knife, cut the strips of zest lengthwise into pieces about as narrow as a wooden match.
  • Put the peel in a medium saucepan and add water to generously cover. Bring to a boil and cook until the peel is soft and translucent, 5 to 6 minutes.
  • Drain the peel and discard the water. In the same saucepan, bring the 2 cups water, sugar, and corn syrup, if using, to a boil, stirring to dissolve the sugar. Add the drained peel, decrease the heat to maintain a gentle boil, and cook until the peel is translucent and the syrup is thick, about 20 minutes.
  • If you like, you can use a candy thermometer to gauge doneness; the mixture should register about 210°F (100°C).
  • Let cool, then transfer the peel and syrup to a clean jar, cover tightly, and refrigerate until ready to use.
  • The peel will keep in the refrigerator for at least 2 months. If you don't use the corn syrup, it might recrystallize. If it does, warm it slowly, adding a little water if necessary, to untangle the pieces.

1 large navel orange
3/4 cup sugar
1/2 cup water
1/2 cup semisweet chocolate chips

Steps:

  • Using a vegetable peeler, cut the orange part of the peel from the stem end of the orange down to the navel end, forming long 3/4 to 1-inch-wide strips. Bring a heavy small saucepan of water to a boil. Add the peels and cook for 1 minute. Drain and then rinse the peels under cold water. Repeat cooking the peels in the saucepan with fresh boiling water and rinsing under cold water.
  • Stir the sugar and 1/2 cup of fresh water in a heavy small saucepan over medium-high heat until the sugar dissolves. Bring to a boil. Add the orange peels and simmer over medium-low heat until tender, about 15 minutes. Using tongs, transfer the peels to a sheet of parchment paper to dry slightly, about 1 hour.
  • Line a small baking sheet with parchment paper. Stir the chocolate in a small bowl set over a saucepan of simmering water until melted and smooth. Dip 1 1/2-inches of each candied orange peel into the chocolate then place them on the prepared baking sheet and refrigerate until the chocolate is set, about 15 minutes.

Steps:

  • Wash the fruit thoroughly in warm water. Using a vegetable peeler, remove the zest in strips about 1" wide, avoiding the bitter white pith. (If your peeler cuts too deeply, lay the strips, pith side up, on a counter and scrape off any pith with the blade of a knife.) Cut strips lengthwise into slivers the width of a wooden match (about 2-3mm).
  • Place the peel into a small saucepan and cover with water by 1-2" (this is NOT the water called for in the ingredients). Bring to a boil and cook until soft and translucent, 5-6 minutes. Drain.
  • Bring 2 c water, sugar and optional corn syrup to a boil in the same saucepan. Add the drained peel, reduce heat to a gentle boil, and cook until peel is translucent, about 20 min (a candy thermometer should read 210°F).
  • Let cool, then transfer to a tightly sealed jar and refrigerate.

4 cups sugar, divided
3 cups water

  • Cut peel on each orange into 4 vertical segments. Remove each segment (including white pith) in 1 piece. Cut into 1/4-inch-wide strips. Cook in large pot of boiling water 15 minutes; drain, rinse, and drain again.
  • Bring 3 cups sugar and 3 cups water to boil in medium saucepan over medium heat, stirring to dissolve sugar. Add peel. Return to boil. Reduce heat; simmer until peel is very soft, about 45 minutes. Drain.
  • Toss peel and 1 cup sugar on rimmed baking sheet, separating strips. Lift peel from sugar; transfer to sheet of foil. Let stand until coating is dry, 1 to 2 days. DO AHEAD: Wrap and freeze up to 2 months.

2 grapefruits (use ONE of the three!) or 3 -4 oranges (use ONE of the three!)
1 1/2 cups sugar, plus some for tossing
1 1/2 cups water
2 tablespoons corn syrup (optional)

Steps:

  • Cut fruit into quarters; peel the rind (peel!) off. Cut peel into desired shape; make all the pieces the same so they cook the same.
  • Put peel piece into a saucepan, cover with water, bring to boil, drain and repeat.
  • Repeat step #2 two more times.
  • After the third boil, leave peel in the strainer.
  • Put 1 1/2 cups of sugar, 1 1/2 cups of water into the saucepan and 2 tablespoons of corn syrup into the sauce pan. Bring saucepan to a simmer on medium heat, add peel. If you're not using corn syrup, you will need to put the lid on the pan to simmer it for 6 minutes before continuing. Let it cook, uncovered, at a rolling simmer until it is done. For hard-ish candy, cook until the liquid is almost gone, and for chewy candy cook until only 3-5 spoonfuls of liquid is left.
  • Put peels into strainer and let cool until you can touch it.
  • Put peels into a bowl, add some sugar, and toss them together. Toss every 15 minutes until really cool and the candy is coated with sugar.
  • For best results, spread the candy on racks to dry. For harder candy, cook it and dry it for longer, for soft and almost chewy candy, cook and dry it less.
  • Store candy in airtight containers. If you store them in the fridge they will seem very hard- but only because they are cold!
