SMOKY NEW POTATOES AND GREEN BEANS



Smoky New Potatoes and Green Beans image

Gina: Green beans and new potatoes, simmered with some type of pork fat, are a classic Southern combination. This dish is one we both grew up on, and when we cook it at home, the smoky aroma of these simmering vegetables instantly transports us to our mothers' kitchens. There are few flavors more satisfying to any Southerner than the taste of tender new potatoes and green beans that have absorbed the salty, porky goodness of a smoked ham hock.

Yield serves 6 to 8

Number Of Ingredients 8

2 smoked ham hocks
2 pounds green beans, stem ends trimmed
1/2 cup sugar (or less to taste; see note)
2 teaspoons kosher salt
2 pounds small red new potatoes, rinsed and trimmed of any imperfections
1 recipe Smash Seasoning (page 112)
Freshly ground black pepper
Hot sauce, for serving (optional)

Steps:

  • Place the ham hocks in a large pot, and add enough water just to cover, then bring the water to a boil. Reduce the heat to low, cover, and simmer for 1 1/2 hours, skimming any scum that rises to the surface, until the ham hocks are very tender and the meat is falling away from the bone. Add the green beans, sugar, and salt to the pot and continue cooking, stirring occasionally, for another 25 minutes. Add the potatoes and Smash Seasoning to the pot, and cook until the potatoes are tender, about 20 minutes more.
  • Remove the ham hocks from the pot. Discard the leathery skin (it should pull off easily), and, using a fork, pull the meat from the bone. Coarsely chop the meat, and add it back to the pot. Taste for seasonings, and then serve with hot sauce, if desired.

This was first made for me by an older family friend. he says this is an old italian recipe. i don't know if it is or not, but everyone always likes it. i usually serve with crusty bread, although some people i've made this for like rice or pasta with it. that is too much starch for me, i know this recipe is not very healthy, but i still occasionally make it because family really likes it.

6 Italian sausages, turkey sausage would be fine in this (hot or sweet)
1 (15 ounce) can sweet peas
3 -4 potatoes, cut in 1-inch chunks, I HAVE USED CANNED POTATOES, BUT MUCH BETTER WITH REAL THING
1 chicken bouillon cube (i use low sodium)
1 cup hot water
1/4 cup butter (optional) or 1/4 cup margarine (optional)
parsley, to taste
oregano, to taste
salt and pepper, to taste

Steps:

  • Spread sausage links, potatoes and peas in 13 x 9 baking dish.
  • in saucepan over medium heat mix rest of ingredients until boullion cube is dissolved.
  • pour over sausage, potatoes and peas.
  • cover tightly with aluminum foil.
  • bake in 350 degree oven 45 minutes to 1 hours.

My mom's signature recipe! At home, this was often made for us - and for company. A nice side dish featuring two favorite veggies - with a SCRUMPTIOUS smoke flavor! You won't be disappointed! Prep time includes stove-top cook time. This doesn't get baked - just stove to table! ENJOY!

1 1/2 lbs small red potatoes
1 1/2 lbs fresh peas (or frozen)
2 tablespoons butter
2 tablespoons flour
1 2/3 cups milk
6 ounces smoked cheese, of your choice (or regular cheese and liquid smoke)
10 -15 slices bacon, cooked & crumbled
liquid smoke (optional)

Steps:

  • Scrub potatoes.
  • Peel off narrow strip around the center of each potato.
  • Cook in boiling salt water 15-20 minutes.
  • Drain potatoes.
  • Cook peas in salt water until tender (8-15 minutes).
  • Drain peas.
  • In small saucepan, melt butter.
  • Stir in flour& milk.
  • Cook& stir until thick, smooth, and bubbly.
  • Cut cheese into small pieces (we like cheddar, sharp cheddar, or colby when we can't find smoked cheese), and add to sauce.
  • (If you haven't found smoked cheese, add 2 T liquid smoke) Cook& stir over low heat until smooth.
  • Add 1/2 of crumbled bacon to the mixture.
  • Combine potatoes& peas in a casserole dish.
  • Pour 1/2- 3/4 of sauce over peas& potatoes.
  • Sprinkle with remaining bacon.
  • Serve remaining sauce with the casserole.
