1 tablespoon cider vinegar
1 tablespoon cornstarch
¼ teaspoon sugar
¼ teaspoon dry mustard
¼ teaspoon salt
1 tablespoon vegetable oil
2 pounds fresh asparagus, trimmed and cut into 1 inch pieces

Steps:

  • In a bowl, mix the broth, sherry, soy sauce, cider vinegar, cornstarch, sugar, dry mustard, and salt.
  • Heat the oil in a skillet over medium heat. Mix the asparagus into the skillet, coating with the oil. Cook and stir 5 minutes, until tender but firm. Pour the broth mixture over the asparagus, and continue cooking 5 minutes, until thickened and heated through.

2 tablespoons cornstarch

2 cups fresh asparagus pieces or fresh broccoli florets
1 cup sliced cauliflower
1 small sweet red or green pepper, julienned
1 small onion, cut into 1/4-inch wedges
2 teaspoons beef bouillon granules
1 tablespoon soy sauce
1 tablespoon ketchup
1 teaspoon red wine vinegar
Hot cooked rice

Steps:

  • Slice beef into thin 3-in. strips. In a large resealable plastic bag, combine the cornstarch, 2 tablespoons water, salt, pepper and hot pepper sauce; add the beef. Seal bag and turn to coat. , In a large skillet or wok, stir-fry half of the beef in 1 tablespoon oil until no longer pink; remove from the skillet and keep warm. Repeat with remaining beef and 1 tablespoon oil. , Stir-fry the asparagus and cauliflower in remaining oil for 4 minutes. Add red pepper and onion; stir-fry for 2 minutes. 1 tablespoon vegetable oil
Salt and pepper
3 garlic cloves, minced
1 tablespoon grated ginger
1 serrano or other fresh hot chile, finely chopped
A large handful of basil, mint and cilantro leaves

Steps:

  • Snap off and discard the tough bottoms of each asparagus spear. Cut the asparagus into 2-inch lengths
  • In a wok or cast-iron skillet, heat the oil until nearly smoking. Add the asparagus, season generously with salt and pepper and stir well, making sure the asparagus is coated and glistening with oil. Continue to stir-fry over high heat for about 1 minute, until the asparagus looks bright green and barely cooked. Add the garlic, ginger and chile and stir-fry for 30 seconds more.

Steps:

  • Bring a pot of lightly salted water to a boil. Lightly cook the asparagus into the boiling water for 2 to 3 minutes. Drain and immediately plunge the asparagus into a bowl of ice water until the asparagus is cool; drain and pat dry.
  • Toast the sesame seeds in a dry skillet over medium heat until lightly browned, 3 to 5 minutes; transfer to a dish and set aside to cool.

  • Snap off the ends of the asparagus where they break naturally and peel the spears. Slant-cut them about one-inch long.
  • Beat the lemon juice and mustard and set aside.
  • Heat the oil in a wok or skillet. Add the garlic, stir-fry about a minute, then add the asparagus and stir-fry about 5 minutes, until they are crisp-tender, lightly seared but still bright green. Stir in the lemon-mustard.

1 cup jicama, peeled and cut into matchsticks one inch long (see note)
1 teaspoon salt
1/2 teaspoon sugar
2 tablespoons chicken broth
1/2 teaspoon Oriental sesame oil
1 tablespoon minced scallions

Steps:

  • Wash asparagus, snap off the ends and cut into 1-inch pieces on a very sharp slant.
  • Heat the oil in a wok or skillet. Add the asparagus and stir-fry for about three minutes. Stir in the jicama.
  • Add salt, sugar and chicken broth, stir and cover. Lower heat and cook about three minutes, until the asparagus are crisp-tender but have not lost their bright green color.
  • Add sesame oil and scallions, stir once and serve. If desired, transfer to a serving dish and allow to cool to room temperature, then serve as a salad.
