This rich and flavorful bread is a favorite old-time recipe. Because it keeps well and goes great with coffee or tea, I like to have an extra loaf on hand for gifts or for friends who come to call over the holidays.

1/4 cup butter, softened
1 cup sugar
2 large eggs, room temperature
1-1/2 cups whole milk
1-1/2 teaspoons grated lemon zest
2 cups all-purpose flour
1/2 teaspoon baking powder
1 cup dried currants

Steps:

  • In a large bowl, cream butter and sugar. Add the eggs, one at a time, beating well after each addition. Beat in the milk and lemon zest. Combine flour and baking powder; gradually add to the creamed mixture and mix well. Stir in currants., Transfer to a greased 9x5-in. loaf pan. Bake at 350° for 55-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

3 cups sifted flour
3 tablespoons sugar
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup dry currants
1 1/3 cups buttermilk
2 tablespoons sugar (for glaze)
2 tablespoons hot water (for glaze)

Steps:

  • Sift flour, sugar, baking soda, baking powder and salt.
  • Stir in currants and milk.
  • Combine until well blended.
  • Dough will be sticky.
  • Turn out onto floured board and knead 10 times, until smooth.
  • Shape into an 8" round loaf.
  • Place on ungreased cookie sheet.
  • Cut an"X" with a knife into the top of the loaf.
  • Bake at 375 degrees for 45 minutes.
  • Remove from oven; pour sugar and water glaze over the top and return to oven for an additional 10 minutes.

This is my father's recipe for authentic Dutch currant bread (krentenbrood). He was a professional baker and made these loaves a lot! This recipe makes 2 regular-sized loaves, or one long loaf.

3 ½ cups dried currants
3 cups raisins
½ cup candied peel
7 ¼ cups bread flour
1 teaspoon ground cinnamon
4 (.25 ounce) packages active dry yeast
2 teaspoons white sugar
1 cup lukewarm water (113 degrees F (45 degrees C)), divided
1 cup milk, at room temperature
2 eggs
1 teaspoon salt
2 teaspoons butter

Steps:

  • Soak currants and raisins in a bowl of warm water for 30 minutes. Drain and pat dry with paper towels; stir in candied peel.
  • Sift flour and cinnamon into a large bowl. Make a well in the center of the flour. Add yeast and sugar to the well; pour in 1/4 cup lukewarm water. Let stand until yeast begins to foam, about 5 minutes.
  • Stir remaining 3/4 cup lukewarm water, milk, eggs, and salt into the flour mixture until dough comes together.
  • Turn dough out onto a lightly floured surface. Add currant mixture; knead until evenly incorporated and dough is smooth and elastic, about 5 minutes. Transfer to a bowl and cover with a damp cloth. Let rise in a warm place until doubled, 45 minutes to 1 hour.
  • Grease two 9x5-inch loaf pans lightly with butter. Flatten dough gently and shape into 2 loaves. Place 1 loaf in each pan and cover with a damp cloth. Let rise in a warm place until puffy, about 45 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake loaves in the preheated oven until firm and dark brown, about 45 minutes. Invert onto a wire rack to cool completely before slicing, about 1 hour.

⅔ cup white sugar
¼ cup unsalted butter, softened
½ teaspoon salt
2 large eggs
1 ¼ teaspoons vanilla extract
½ teaspoon almond extract
¾ cup unbleached all-purpose flour
¾ cup whole wheat pastry flour
1 teaspoon baking soda
1 teaspoon baking powder
1 ½ cups shredded carrot
⅓ cup milk
⅓ cup currants
⅓ cup chopped almonds

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Cream sugar, butter, and salt together in a bowl with an electric mixer until combined. Add eggs, 1 at a time, then vanilla and almond extracts.
  • Mix all-purpose flour, whole wheat pastry flour, baking soda, and baking powder together in a medium bowl. Add to butter-egg mixture in 3 additions, alternating with carrots and milk in 2 additions. Stir in currants and almonds; the batter will be quite wet. Pour into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 50 to 60 minutes.

1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup butter or margarine
3/4 cup currants
1/2 teaspoon anise seed crushed
3/4 cup buttermilk
1 egg
2 tablespoons butter or margarine

Steps:

  • Heat oven to 350° F. In medium bowl, mix flour, sugar, baking powder, baking soda, and salt. Cut in butter or margarine to resemble meal. Stir in currants and anise seeds. Beat buttermilk and egg. Add to flour mixture and mix until moistened. On a floured surface, knead 15 to 20 times until smooth. Form dough into a ball. Press into a greased 8-inch round baking dish to almost touch edge. with a sharp knife, cut a 1/2 inch deep cross on top. Bake for 35 to 40 minutes or until golden brown. Brush with melted butter or margarine. Cool 10 minutes in pan, then remove to wire rack.

Creaming butter correctly, keeping butter doughs cold, and starting with fresh, good-tasting butter are vital details that professionals take for granted, and home bakers often miss. For mixing and creaming, butter should be about 65 degrees: cold to the touch but warm enough to spread. Just three degrees warmer, at 68 degrees, it begins to melt.

4 ounces (1 stick) cold unsalted butter, cut into 8 pieces
1/4 cup sugar
1 cup plus 2 tablespoons all-purpose flour, more for flouring paper
Pinch of fine salt
1/3 cup dried currants (see note)
1 packed tablespoon finely diced crystallized ginger.

Steps:

  • In a mixer, cream together the butter and sugar at medium speed until light and smooth, about 3 minutes. Add flour, salt, currants and ginger, and mix until well blended, about 3 minutes. Gather dough into a ball and flatten slightly.
  • Lightly flour a piece of parchment paper (or use nonstick baking mat). Place dough on paper or mat and roll out into a 10-inch square, an even 1/4-inch thick. Cover with a towel or plastic wrap and refrigerate until firm, about 1 hour.
  • Position an oven rack in center of oven. Heat to 350 degrees. Line two cookie sheets with parchment paper. Using a sharp knife, cut dough into 10 1-inch-wide strips (if using mat, remove dough to a cutting surface first). Cut each strip into 1 1/2-inch-long rectangles. Gather and roll out scraps and cut out more cookies. (Triangles or cookie cutter shapes can be made as an alternative to rectangles.)
  • One sheet at a time, bake until edges are lightly golden, 12 to 15 minutes. Cool on sheets 5 minutes, then transfer to a rack and cool completely before storing in airtight containers up to 1 week.

Number Of Ingredients 12

6 cups sifted flour
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
2 tablespoons baking powder
1 teaspoon salt
1 1/2 cups graulated sugar
3/4 cup golden raisins, lightly chopped
3/4 cup currants
2 eggs, at room temperature
3 cups milk, at room temperature
6 tablespoons finely grated orange zest
1/2 cup melted butter, cooled to tepid

Steps:

  • Preheat oven to 325 degrees. Lightly grease 2 loaf pans, line with parchment and regrease.
  • Sift the first 6 ingredients into a large bowl and set aside. Place raisins and currants into a bowl and toss with 1 tablespoon of the sifted mixture. In another bowl, whisk together the remaining ingredients.
  • Make a well in the center of the sifted ingredients and pour in the egg-milk mixture. Sprinkle with the raisins and currants. Mix with a wooden spoon until just blended. Pour the batter into the pans and bake 45 to 50 minutes, or until a toothpick comes out clean. Cool the bread in the pans for 5 minutes, then invert onto a rack and cool to room temperature.

INDIAN BREAD WITH COURGETTES & CORIANDER

This bread is called thepla in India and is best served hot with lightly salted plain yogurt, or cold with mango chutney

½ tsp cumin seeds
450g courgettes
175g plain flour , plus extra for rolling out
175g plain wholemeal flour (not strong bread flour)
2 tsp grated fresh root ginger
a good pinch of turmeric
a small handful of fresh coriander , chopped
3-4 tbsp sunflower oil

Steps:

  • Dry fry the cumin seeds for 30-60 seconds in a non-stick pan, tossing constantly until toasted. Remove from heat.
  • Wash the courgettes, then trim and grate them on the coarsest side of the grater (unpeeled) into a largish bowl. Tip in both the flours, the ginger, turmeric and coriander, add 1 tsp salt and stir well.
  • Pour 11⁄2 tbsp of the oil into the flour mixture and rub it in, then gradually add 4-5 tbsp cold water until the mixture comes together to form a soft dough, a bit wetter than pastry. Tear or cut off 12 equal-sized pieces and shape into balls.
  • Dust the work surface and rolling pin with a little extra flour and roll each piece into a thin 14cm round - don't worry if the edges are crinkly.
  • Heat a large cast-iron griddle or heavy-based frying pan until very hot. Put one or two breads on the griddle and cook for 2 minutes on one side, patting the edges with a clean soft cloth - this keeps the bread in contact with the heat and helps cook it fast. Turn the breads over and cook for 2 minutes more.
  • Drizzle a little oil around the edges of the bread, turn them over again and cook for 30-60 seconds more, then drizzle a few drops of oil on this side. Remove and set aside on a plate. Repeat with the rest of the rounds. (You can make the breads up to 2 hours ahead, then wrap in foil and reheat in a low oven.) Serve hot or cold.
