RAINBOW SODAS

Steps:

• Combine 1 cup of the sugar, 1 cup water and the watermelon in a small saucepan. Bring to a simmer over medium heat and cook for 5 minutes, mashing the fruit gently. Strain through a fine-mesh strainer; discard the fruit. Repeat with the blackberries and blueberries and the raspberries and strawberries. Cool the three fruit syrups completely and refrigerate until ready to use.
• To serve, add 3/4 cup club soda to tall glass filled with ice. Add 1/4 cup fruit syrup and stir with a long spoon or straw.

RASPBERRY ICE CREAM SODAS

Steps:

• Using an ice cream scoop, put 1/2 cup of sherbet into each glass. Scoop 1/2 cup of vanilla ice cream on top of the sherbet. Pour 1/3 cup club soda on top of the ice cream. Drizzle each glass with 2 tablespoons of raspberry syrup and garnish with fresh raspberries. Serve immediately with straws and sundae spoons.
• In a small saucepan, whisk together the orange juice and cornstarch until smooth. Add the raspberries, raspberry jam and sugar. Bring the mixture to a boil over medium-low heat, stirring frequently. Reduce the heat to medium-low and simmer for 5 minutes. Pour the mixture through a fine-mesh sieve into a small bowl, pressing on the solids with a wooded spoon to extract as much liquid as possible. Cool the syrup for 30 minutes.

RASPBERRY POUND CAKE WITH VIN SANTO CREAM

Steps:

• To make the Raspberry Pound Cake:
• Set an oven rack in the lower 1/3 of the oven and preheat to 350 degrees F. Grease and flour a 9 by 5 by3-inch loaf pan.
• In a medium bowl, combine the flour, baking soda, orange zest, cinnamon, and salt. Whisk to combine. In a separate bowl, using an electric mixer, cream together the sugar and butter until blended, about 30 seconds. With the machine running, add the eggs 1 at a time. Add the vanilla extract. Add the dry ingredients, a small amount at a time, until just incorporated. Using a rubber spatula, fold the drained raspberries evenly into the batter.
• Pour the mixture into the prepared pan and bake until a toothpick inserted into the center of the cake comes out clean, about 55 to 60 minutes. Let the cake cool in the pan for 10 minutes then transfer to a wire rack to cool completely. (Cake may deflate in the center during cooling)
• To make the Vin Santo Cream:
• In a large bowl, beat the cream until it holds soft peaks.
• Add the vanilla extract, powdered sugar, and Vin Santo. Continue to beat mixture until cream holds stiff peaks.
• Transfer the pound cake to a serving platter. Slice and serve with the Vin Santo Cream.

RASPBERRY ICE CREAM

Steps:

• Place raspberries in a blender; cover and pulse until chopped. Transfer to a large bowl; stir in sugar until dissolved. Stir in remaining ingredients until blended., Pour mixture into cylinder of ice cream freezer; freeze according to the manufacturer's directions. Transfer ice cream to freezer containers, allowing headspace for expansion. Freeze 2-4 hours or until firm.

RASPBERRY FROST SODAS

Steps:

• Pour 1/4 C cranberry juice in each of 6 short, wide glasses.
• Place 1/2 C sherbert in each glass.
• Fill with ginger ale.

OLD-FASHIONED ICE CREAM SODAS

Steps:

• Place 3 tablespoons chocolate syrup in each of four 16-oz. glasses. Add 1/4 cup milk and 1 cup carbonated water to each; stir until foamy. Add two scoops of ice cream to each glass. Top with whipped cream if desired.
