Steps:
- Vanilla Ice Cream:.
- Insert butterfly.
- Add cream and vanilla to bowl and mix on SPEED 2 as you pour the condensed milk into the mix through the lid.
- Once all in increase to SPEED 3 for 2-3 minutes until mixture is thick and creamy. (I did this in two steps - 1 min 15 secs, followed by an additional 1 min - so 2min 15 sec total and it was perfect).
- Pour into suitable container and freeze until set.
- VARIATIONS:.
- Fold through chosen variant SPEED 2 REVERSE counter-clockwise operation 5 secs.
- The variation ingredient may not be completely through the mix, but as you pour it into the freezing container it will mix a bit more. Adjust this time to your preference.

- Place cream, milk, salt and 200g licorice in TM bowl. Blend 10sec/Speed 9. (60g of licorice is reserved for "mix-ins")
- Heat the milk mixture. 10 min/80 degrees/Speed 4 (MC OUT) Internal steam basket on top to prevent splatters.
- Remove bowl and replace with a second bowl. (or reserve milk base in another container and wash TM bowl).

- Choose full-fat milk and cream. If you’re looking to cut fat and calories from your diet, traditional ice cream probably isn’t the best place to do it.
- Go for custard-based mixtures. A custard based ice cream (where you cook a combination of milk, cream, eggs and sugar together) takes a little extra time, but produces a much more decadent and creamy result.
- Add flavours last. If you’re adding flavours in the form of extracts or alcohols, it’s best to do this once your custard/ice cream mixture has finished cooking and cooled slightly.
- Fast-freeze your ice cream. Fact: The faster ice cream freezes, the creamier the result. You can speed up the process at home by keeping your container in the freezer before adding the mixture and placing your ice cream at the back of your freezer where it tends to be colder.
- Churn it out. After your ice cream mixture has frozen solid, cut it up into pieces and pop back into the Thermomix® to blend for a second time. We can’t over emphasise the importance of this step.
