1 (10 ounce) package frozen chopped spinach, thawed and drained
2 cups finely crushed herb-seasoned dry bread stuffing mix
½ cup grated Parmesan cheese
2 teaspoons garlic powder
½ teaspoon ground black pepper
1 teaspoon Italian seasoning
½ cup melted butter
3 eggs, beaten

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl combine spinach, stuffing mix, Parmesan cheese, garlic powder, black pepper, Italian seasoning, melted butter and eggs. Shape into walnut-sized balls and place on a baking sheet.
  • Bake in preheated oven for 20 minutes, or until heated through and browned.

1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1-2/3 cups hot water
1/4 cup butter or margarine, cut up
2 pkg. (10 oz. each) frozen chopped spinach, thawed, well drained and patted dry
1 cup KRAFT Grated Parmesan Cheese
1 cup chopped fresh mushrooms
1 small onion, finely chopped
4 eggs

Steps:

  • Heat oven to 400ºF.
  • Mix stuffing mix, hot water and butter in large bowl until blended.
  • Add remaining ingredients; mix lightly. Shape into 60 (1-inch) balls.
  • Place in single layer on 2 rimmed baking sheets sprayed with cooking spray.
  • Bake 15 to 20 min. or until heated through and lightly browned.

This is a dish I stumbled across while I was in China and tried to emulate. Of all my various original recipes, this is the one of my families favorites. It is simple, requires few ingredients and is easy and fast.

¼ cup canola oil
¼ cup unsalted butter
2 (10 ounce) bags fresh spinach leaves
8 cloves garlic, thinly sliced

Steps:

  • Melt the butter with the canola oil in a large skillet over medium heat until it stops bubbling. This allows the water from the butter to evaporate. Add the garlic; cook and stir for about 2 minutes, until it is just beginning to brown. Put in the spinach leaves and cook for about 5 minutes while stirring, until the leaves are dark and are about 1/4 of their original size.

1 small onion, minced
1 garlic clove, minced
1 tablespoon butter
2 (10 ounce) packages frozen spinach, thawed but not drained
1 large egg
1 cup Italian breadcrumbs
1 cup shredded romano cheese (or more)
1 dash nutmeg
salt
black pepper
1 dash cayenne
cooking spray (for baking) or olive oil (for frying)
additional romano cheese (to garnish)
marinara sauce (for dipping)

Steps:

  • Saute onions and minced garlic in butter; place in large mixing bowl with undrained spinach, egg, breadcrumbs, 1 cup Romano, salt, nutmeg, black and cayenne pepper; mix thoroughly. Let mixture sit for 5 to 10 minutes to absorb moisture. Form into 1" balls.
  • To fry:.
  • Heat 1 inch of olive oil in large skillet. Fry in small batches until golden, 3 to 6 minutes, turning once; do not overcook or they will be dry. Drain on toweling. Skim drippings between batches.
  • To bake:.
  • Preheat oven 350 degrees. Spray baking sheet arranging spinach balls and spraying balls lightly. Bake uncovered until golden for about 25 minutes; do not overcook.
  • Garnish with additional Romano. Serve warm or room temperature with marinara to dip.

2 cups cooked spinach, well drained and chopped
2 tablespoons butter
salt and pepper, to taste
2 eggs
1 cup breadcrumbs
2 tablespoons onions, grated
2 tablespoons cheese, grated
1/8 teaspoon allspice
1/4 cup water
breadcrumbs
oil, for frying

Steps:

  • Combine chopped spinach with melted butter, seasonings, one egg, bread crumbs, onion, cheese, and allspice; mix thoroughly and let stand for ten minutes.
  • Shape into balls.
  • Combine remaining egg with water and beat together until well blended.
  • Roll spinach balls in bread crumbs, dip in egg, and again in bread crumbs.
  • Preheat oil to 375F and fry balls until golden.

1 1/2 cups vegetable oil
2 cups spinach (frozen, cooked and chopped; about 16 ounces frozen)
2 tablespoons butter
2 tablespoons grated onion
3 tablespoons grated Parmesan cheese
Dash salt
Dash pepper
2 large eggs ( divided )
1 cup fine dry bread crumbs (plus 1/4 cup more for breading)
1/8 teaspoon nutmeg (or allspice)
1/4 cup water

Steps:

  • Gather the ingredients.
  • Heat the oven to 200 F.
  • Heat the vegetable oil to 360 F in a large, heavy pot.
  • Squeeze as much moisture out of the cooked spinach as possible.
  • Combine chopped spinach, melted butter, salt, pepper, 1 well-beaten egg, bread crumbs, onion, Parmesan cheese, and spice; mix well. Allow to stand 10 minutes then shape into 1-inch balls.
  • Combine remaining egg with the 1/4 cup water; beat until well blended.
  • Roll the spinach balls in the fine dry bread crumbs, dip in egg mixture, then again in bread crumbs.
  • In the heated oil, fry the spinach balls in small batches until golden brown.
  • Drain on paper towels.
  • Place these on a rack in a pan, and place pan in the warm oven while you fry remaining spinach balls.

1 cup fresh spinach
1 cup dried breadcrumbs
1 egg white
1/2 cup fresh parmesan cheese

1 red chile
50 g butter

Steps:

  • Mix together all the ingredients in a bowl using your hands as this helps get the mix together, the egg white will help to bind the mixture so it should all come together very quickly.
  • Once the mix can be sculpted into a ball shape it is ready to create the individual balls.
  • Tear off sections of the mixture and using your palms roll it into a ball about the size of a golf ball flatten the ball slightly so it is a kind of oval shape.
  • Deep fry the balls until they are a golden brown colour on all sides and serve on top of a creamy pasta dish. The balls should be slighly soft with melted cheese inside if they are cooked correctly.

2 ⅔ tablespoons butter
¼ cup olive oil
2 tablespoons minced garlic
1 sweet onion, chopped
3 (6 ounce) bags baby spinach leaves
coarse salt and ground black pepper to taste

Steps:

  • In a skillet over medium heat, fry the bacon until evenly brown and crisp. Drain, crumble, and set aside.
  • Melt the butter and heat the olive oil in a large skillet over medium heat. Mix in the crumbled bacon, garlic, and onion. Cook and stir 2 minutes, then mix in the spinach until evenly coated with the butter and oil. Cover skillet, reduce heat to low, and cook 5 minutes, stirring often, or until spinach is tender. I made these for my family's Christmas party. My family really liked these. We thought they tasted so good. I think they are best when served warm from the oven. When I made this recipe I tried to half the recipe which didn't work out so well. I cut the recipe in half but ended up adding the entire packet of stuffing. I also used canned mushrooms instead of fresh. I got this recipe from Kraft.
