Very tasty, easy barbecue shrimp recipe. The lime and cilantro really set it off. Recipe from a grocery store marketing firm called Try Foods International. I have used http://www.food.com/recipe/ainsleys-barbecue-spice-rub-444453 for the barbecue spice with great results.

20 large shrimp, shelled and deveined
1 1/2 tablespoons barbecue spices
3/4 cup ketchup
1 1/2 tablespoons Worcestershire sauce
2 tablespoons honey
3 green onions, finely chopped
3 garlic cloves, finely chopped
1 lime, juice of
2 tablespoons fresh cilantro, chopped
salt and pepper

Steps:

  • Toss shrimp with seasoning to coat. Thread 5 shrimp each on 4 metal skewers (soak wooden skewers for at least 30 minutes) Place skewered shrimp in a glass dish.
  • Mix the remaining ingredients and pour half the marinade over the shrimp.
  • Marinate for 15 minutes.
  • Heat grill to medium-high, cook shrimp for 2 to 3 minutes a side, basting with reserved sauce. Cook the shrimp until opaque; be careful not to overcook.

Use this delicious recipe for the traditional Australian method for grilling shrimp. It's simple and you can enjoy a quick meal from your barbecue.

1 1/2 pounds large shrimp
1 tablespoon fresh parsley
1 tablespoon fresh thyme
1 tablespoon fresh cilantro
1 tablespoon shallot (minced)
3 large garlic cloves (crushed)
1/2 cup butter (melted)
1/4 cup olive oil
3 tablespoons lemon juice (fresh)
Salt (to taste)
Black pepper (to taste)
Garnish: spinach leaves
Garnish: lemon slices

Steps:

  • Gather the ingredients.
  • Peel and devein the shrimp , leaving the tails intact.
  • Mince the fresh parsley, thyme, cilantro , and shallots. Crush the garlic cloves.
  • Combine the melted butter , olive oil, parsley, thyme, cilantro, lemon juice, cloves, shallots, salt, and black pepper in a large bowl.
  • Mix in the shrimp. Marinate at room temperature for 15 minutes or in the refrigerator for 30 minutes. Discard the marinade after the 30 minutes, as it will not be safe to reuse due to contact with the raw shrimp.
  • Prepare the barbecue with medium-hot coals.
  • Thread the shrimp on narrow skewers . Grill until just opaque (or pink in color and firm to touch), about 2 minutes per side.
  • Line a platter with fresh spinach leaves. Arrange the skewers on the platter. Garnish with lemon.
  • Serve and enjoy!

Jumbo shrimp (10 to 15 count)
1/2 cup vegetable oil
1/4 cup white vinegar
1/4 cup orange juice
1/4 cup canned sweetened coconut cream
1/4 cup pineapple juice
1 teaspoon ground ginger
1 teaspoon ground cinnamon
2 tablespoons soy sauce
1 good shake hot sauce

Steps:

  • Combine all marinade ingredients.
  • Soak uncooked and unshelled shrimp in marinade for 1 to 1 1/2 hours turning periodically.
  • Place on hot grill and cook until just pink and blackened on the outside.

BARBECUE SHRIMP

1 pound shrimp
20 wooden skewers, soaked in water 30 minutes
1/2 cup soy sauce, plus 2 tablespoons
1/4 cup sake
5 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 shallots, finely diced
2 cloves garlic, minced
1 (28-ounce) can whole, peeled tomatoes, drained and hand-crushed
1/4 cup hoisin sauce
2 tablespoons rice vinegar
1 tablespoon red chili paste (recommended: Srirachi Hot Chili Sauce)
1/4 cup brown sugar
1/2 teaspoon chili powder
2 avocados, peeled and sliced, for garnish
2 scallions, sliced thin, for garnish
Lime wedges, for garnish

Steps:

  • Thread shrimp onto skewers and place in a shallow dish. Pour 1/2 cup soy sauce, sake, and 2 tablespoons oil over the shrimp and season them with salt and pepper. Set aside and let them marinate while you make the barbecue sauce.
  • Heat 3 tablespoons oil in a large saute pan over medium-high heat. Add shallots and garlic and cook for 1 minute. Stir in tomatoes and season with salt and pepper. Add 2 tablespoons soy sauce, hoisin sauce, vinegar, chili paste, sugar, and chili powder. Cook until the mixture has thickened, about 10 to 15 minutes. Use an immersion blender to break the tomatoes up into a chunky sauce.
  • Heat a grill or a grill pan and cook the shrimp about 3 minutes per side. To serve, spread some barbecue sauce onto a large platter and place the grilled shrimp skewers on top of that. Garnish with avocado, scallions, and lime wedges. Serve extra barbecue sauce on the side.

Of all the ways to prepare shrimp, the grill delivers the best flavor. Although unadorned "shrimp on the barbie" are great, an easily assembled gingery barbecue sauce makes them that much better. You can save time by buying already shelled and deveined shrimp, but our recipe developer, Alexis Touchet, who grew up in shrimp country in southwest Louisiana, thinks shell-on shrimp are better quality. Depending on where you live and what's in your market, you may not have much choice. Freshness trumps all, so don't hesitate to use your nose in deciding which shrimp to buy.

Shrimp:
4 pounds jumbo (21-25 per pound) or extra-large (26-30 per pound) shrimp in shell, peeled, leaving tail and adjoining shell segment intact, and deveined (See Cooks' Notes)
4 tablespoons vegetable oil
1 teaspoon salt
Special Equipment
18 to 24 (12-inch) wooden skewers (depending on size of shrimp used), soaked in water for 30 minutes

Steps:

  • For the Shrimp:
  • If necessary, pat shrimp dry, then thread about 6 shrimp (through top and tail, leaving shrimp curled), onto each skewer, without leaving space between shrimp.
  • Prepare grill for direct-heat cooking over medium-hot charcoal (medium-high for gas); see Grilling Procedure.
  • Meanwhile, brush shrimp with vegetable oil and sprinkle evenly with salt.
  • Lightly oil grill rack. Grill shrimp, covered only if using a gas grill, turning over once, 2 minutes. Brush shrimp with some sauce from the saucepan, then turn. Brush shrimp with additional sauce then grill until just cooked through, 1 to 2 minutes. Serve with reserved sauce.

1/2 cup light mayonnaise
1 tablespoon minced celery
1 tablespoon green pepper
1 tablespoon scallion
1 tablespoon cider vinegar
1 tablespoon water
2 teaspoons ketchup
1/4 teaspoon celery salt
1/4 teaspoon paprika
1 tablespoon Old Bay Seasoning
1 tablespoon light brown sugar
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon ground cumin
24 peeled deveined extra large shrimp
1/4 cup butter
2 crushed garlic cloves
4 slices dark whole wheat bread

Steps:

  • Heat an outdoor grill, stovetop grill pan or broiler. Have ready four 4-6 inch skewers.
  • Mix sauce ingredients in a bowl, cover and refrigerate until serving.
  • Thread 6 shrimp close together on each skewer.
  • Melt butter with garlic. Brush 1/2 the mixture on each bread slice.
  • Brush 1 side of shrimp with 1/2 the remaining garlic butter, then sprinkle with 1/2 the Spice Rub.
  • Grill or broil shrimp 3 minutes; turn and brush with remaining garlic butter; sprinkle with remaining spice rub.
  • Grill shrimp and bread 3 minutes, or until shrimp are cooked and the bread is toasted.
  • Slide the shrimp from each skewer onto a slice of garlic toast.
