Steps:
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the spaghetti, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
- Meanwhile, heat the olive oil in a large skillet over medium heat. Stir in the garlic, and cook for 1 minute to soften. Add the Swiss chard. Cook and stir until the stems of the chard are tender. You can use some of the hot pasta water to help steam the chard in the covered pan.
- Stir the hot spaghetti into the chard mixture along with the capers. Season to taste with salt and black pepper, and drizzle with lemon juice if desired. Sprinkle with Parmesan cheese to serve.

SHRIMP LINGUINE
Quick and easy to make, this is a hit for a dinner party or just a quick family dinner. Already cooked salad shrimp works great! I also occasionally substitute chicken for the shrimp for another great flavored dish!

SHRIMP LINGUINE W/CHARD
Steps:
- Bring 2 quarts of water to a boil and add the whole wheat linguine, cook for 8 minutes. While the pasta is cooking, use a l0 in skillet and with medium heat add 2 Tab EVOO and infuse the flavor by adding the red pepper flakes. Add the shelled, deveined shrimp and cook 2 minutes per side, sprinkle Cayenne pepper over shrimp. Set aside. Take another l0 in skillet and add EVOO, chopped onion, chopped garlic, allow to simmer while you prepare the Swiss Chard. Separate the stems from the leaves by using a paring knife and slicing along the stem line. Then cut one inch off the bottom of stems and discard. Cut the stems into 1/4 inch lengths and saute with the onions and garlic, 3 to 5 min until soft. Roll all leaves lengthwise and cut up into 1/4 inch strips. Then slice lengthwise once again. Add to the skillet and cook one minute. Add drained linguine to skillet, the shrimp and Tab of butter and fold with tongs approx 2 minutes. After serving, garnish each plate with a serving of crumbled Feta.
SEARED SHRIMP WITH CHARD, CHILES AND GINGER
Spicy sautéed chard with chiles and ginger is full of flavor, easy and pleasing with pretty much any protein. Here, it moves to the center of the plate with plump, seared shrimp. Any kind of chard can be used for this dish, but rainbow or red will be prettier than white-stemmed Swiss chard. That's because those stems go right into the pan along with the leaves. It's not only less wasteful, but the stems also add a pronounced, succulent texture to the mix.

Steps:
- Season shrimp generously with salt. Wash and trim chard, thinly slicing the stems.
- In a large skillet over medium heat, heat 1 tablespoon of the oil, then add shrimp and sear until lightly browned, about 2 minutes per side. Transfer shrimp to a plate. Add the remaining 2 tablespoons oil to the skillet, let heat for a few seconds, then add garlic, chile peppers, shallot and ginger and sauté until slightly browned, about 3 minutes. Stir in sugar, pepper and salt and cook for 1 minute longer. Stir in chard stems and sauté until they start to soften, about 2 minutes.
- Add the greens to the skillet along with 2 tablespoons water and immediately cover the pan. Keep it covered for 2 to 3 minutes to allow the greens to wilt. Once the greens have cooked down, remove the lid and continue cooking for a few more minutes to allow the water to evaporate. Add the shrimp and any liquid accumulated on the plate and cook just until the shrimp are heated through, about 1 minute longer. Drizzle with the sherry vinegar and gently toss to coat. Serve hot, garnished with the cilantro.
