1 can (6 oz.) pitted black olives, drained, halved
1/2 cup KRAFT Shredded Parmesan Cheese
10 pepperoncini peppers
1 large tomato, cut into wedges
1/2 cup sliced red onions
1/2 cup KRAFT Zesty Italian Dressing

Steps:

  • Toss greens with remaining ingredients.

Shredded-Greens and Citrus Salad image

A sprightly blend of Brussels sprouts, radicchio, endives, oranges, and walnuts is refreshingly bright and crunchy in this cross between a slaw and kale salad. For crisp yet tender bites, rub the radicchio and Brussels sprouts with salt to relax them.

3/4 cup walnut halves or pieces
8 ounces Brussels sprouts, trimmed and thinly sliced lengthwise (1 1/2 cups)
1 small head radicchio (8 ounces), cored and thinly sliced (1 1/2cups)
Kosher salt (we use Diamond Crystal) and freshly ground pepper
3 endives, trimmed and thinly sliced lengthwise (2 cups)
1 tablespoon white-wine vinegar
1 tablespoon fresh lemon juice
1/4 cup extra-virgin olive oil
3 oranges, peels and pith removed, cut into supremes

Steps:

  • Preheat oven to 350°F. Spread walnuts on a rimmed baking sheet in a single layer. Toast until slightly darkened and fragrant, 12 to 14 minutes. Let cool completely.
  • In a large bowl, toss Brussels sprouts and radicchio with 1 teaspoon salt. Rub mixture between your palms until greens soften slightly and turn shiny. Toss in endives. In a small bowl, whisk together vinegar, lemon juice, and oil; season generously with salt and pepper. Pour dressing over greens, tossing to evenly coat. Top with walnuts and orange supremes; serve.

SALAD OF SHREDDED GREENS AND SMOKED SALMON (CHIFFONNADE DE SAUMON)

DURING the last year or so, chiffonnades - greens and vegetables cut into thin slivers - have become increasingly popular, as salads appear more often on menus. At Auberge des Templiers, in Beziers, in the Languedoc region, a chiffonnade of watercress and raw mushrooms was paired with tiny marinated red mullet and monkfish. This recipe comes from Christiane Massia of L'Aquitaine. The dressing can be made a day in advance, then refrigerated, but prepare the rest of the ingredients just before serving time.

1/2 cup creme fraiche or sour cream
1 tablespoon lemon juice
1/4 teaspoon hot paprika
1 head Boston lettuce, rinsed and dried
4 thin slices smoked salmon, cut into wide strips

Steps:

  • In small bowl, combine creme fraiche or sour cream, lemon juice and paprika.
  • Stack several lettuce leaves and, using long chef's knife, cut into fine strips, as if slicing cabbage for cole slaw. Place in large salad bowl and toss with dressing.
  • Distribute lettuce among 4 salad plates and cover each with several strips of salmon. Serve immediately.

For pickled apples
2 red apples such as Gala or Idared
1/2 cup cider vinegar
1 cup water
1/2 cup sugar
1 teaspoon salt
1 teaspoon pickling spice
1/2 cup walnut halves (3 ounces)
1/4 cup olive oil
1 bunch collard greens (1 pound)
1/2 teaspoon kosher salt

Steps:

  • Make pickled apples:
  • Quarter and core apples, then cut each quarter lengthwise into 1/8-inch-thick slices. Boil vinegar, water, sugar, salt, and pickling spice in a saucepan, stirring, until sugar is dissolved. Add apples and return to a boil. Transfer to a heatproof bowl and cool. Chill, uncovered, until cold, about 1 hour.
  • Prepare nuts while apples chill:
  • Toast walnuts in oil in a small skillet over moderate heat, stirring occasionally, until a shade darker. Cool nuts in oil. Transfer nuts to a cutting board with a slotted spoon, reserving oil. Coarsely chop 1 tablespoon nuts and finely chop remaining nuts.
  • Prepare collard greens:
  • Halve each collard leaf lengthwise with kitchen shears or a sharp knife, cutting out and discarding center ribs. Stack leaves and cut crosswise into 1/4-inch-wide strips. Transfer to a large bowl.
  • Just before serving:
  • Transfer all nuts and oil from skillet to collards and toss with 1/2 teaspoon salt and pepper to taste. Add apple slices, discarding pickling liquid and spices, and toss again.

150g quinoa
3 tbsp balsamic vinegar
2 tbsp extra virgin olive oil
200g cavolo nero, shredded
1 red onion, finely chopped
1 green pepper, deseeded and chopped into small pieces
30g raisins
2 small avocados, chopped
40g vegetarian feta

Steps:

  • Rinse the quinoa in a sieve under running water until the water runs clear, then cook for 20 mins following pack instructions. Leave to rest for 5 mins. Rinse again and drain well by pressing in the sieve.
  • Meanwhile, put the vinegar and oil in a large bowl, add the cavolo nero and massage in the dressing with your hands to soften it.
  • Add the quinoa, onion, pepper and raisins, then toss well. Spoon half onto plates, scatter over 1 chopped avocado, crumble in half the feta and toss. The remainder will keep chilled for up to three days. Top with the remaining avocado and feta, then serve.

4 limes
2 green apples , cut into matchsticks
2 fennel bulbs , cut into matchsticks
1 cucumber , deseeded and cut into matchsticks
3 celery sticks, cut into matchsticks
6 spring onions , cut into matchsticks
2 tbsp olive oil

Steps:

  • Zest and juice 2 of the limes into a big salad bowl. Top and tail the remaining 2 limes to sit flat on a chopping board. Use a small serrated fruit knife to cut away the peel and pith in downward strokes. Cut the segments from the pith and roughly chop. Add to the salad bowl with the apples, fennel, cucumber, celery, spring onions and olive oil. Cover and chill until ready to serve.
