1 1/2 pounds tuna, swordfish or sturgeon steaks
1 red bell pepper
1 green bell pepper
1 small onion (sweet if available)
6-10 large button mushrooms
2 lemons, cut into wedges
Marinade Ingredients
1/2 cup extra virgin olive oil
2 tablespoon chopped onion
1 tablespoon chopped fresh rosemary
1 teaspoon salt
1/2 teaspoon black pepper
2 cloves garlic

Steps:

  • Cut into bite-sized pieces: Cut all the fish and veggies into similar-sized pieces; this helps everything lay flat when it is on the grill.
  • Marinate the fish and vegetables: To make the marinade, purée the onion, rosemary, garlic, salt and pepper in a food processor. Drizzle in the olive oil while puréeing, continue to purée until smooth, about 1-2 minutes. Coat the fish and veggies in the marinade. Set in the fridge for at least an hour and up to overnight.

Easy, great tasting tuna coated with sesame seeds, and quickly seared. This tuna is served rare, so be sure to use a good quality fresh tuna.

¼ cup soy sauce
1 tablespoon mirin (Japanese sweet wine)
1 tablespoon honey
2 tablespoons sesame oil
1 tablespoon rice wine vinegar
4 (6 ounce) tuna steaks
½ cup sesame seeds
wasabi paste
1 tablespoon olive oil

Steps:

  • In a small bowl, stir together the soy sauce, mirin, honey and sesame oil. Divide into two equal parts. Stir the rice vinegar into one part and set aside as a dipping sauce.
  • Spread the sesame seeds out on a plate. Coat the tuna steaks with the remaining soy sauce mixture, then press into the sesame seeds to coat.
  • Heat olive oil in a cast iron skillet over high heat until very hot. Place steaks in the pan, and sear for about 30 seconds on each side. Serve with the dipping sauce and wasabi paste.

1/2 teaspoon light olive oil with a dash of toasted sesame oil
1 clove garlic, chopped
1 teaspoon freshly grated gingerroot
6 tablespoons de-alcoholized white wine, divided
2 tablespoons low sodium tamari sauce
1 tablespoon brown sugar
1 teaspoon Shanghai Coastline Ethmix (see note)
2 tablespoons unsalted creamy peanut butter, oil poured off
1 pound fresh tuna cut into 20 (1-inch) pieces
1 (8 1/2 ounce) can whole artichoke hearts (8 hearts), drained and cut into halves
1 tablespoon chopped cilantro or parsley for garnish
3 tablespoons chopped cilantro or parsley

Steps:

  • Set 4 bamboo skewers to soak in warm water. Preheat the broiler or compression grill for 10 minutes.
  • For the sauce: Heat oil in a small saucepan over medium high heat and fry the garlic and ginger for 2 minutes to release flavorful oils. Add 1/4 cup of the wine, tamari, brown sugar, and Shanghai Spice Mix. Remove from the heat and add the peanut butter, stirring until smooth. Set aside and keep warm.
  • For the tuna kebabs: String 5 tuna pieces and 4 artichoke halves alternately on each bamboo skewer, starting and ending with tuna. Brush the kebabs with the sauce. Broil the kebabs for 3 minutes on each side or until the tuna is white throughout.
  • Add the remaining wine to the rest of the sauce to thin it to a pouring consistency.
  • Serve kebabs garnished with chopped cilantro or parsley on top.
  • Note: To make Shanghai Ethmix:
  • 7 tablespoons crushed red pepper flakes 2 3/4 teaspoons ground ginger 2 3/4 teaspoons ground anise
  • Grind to a fine powder.

1/2 fennel bulb (sometimes called anise, about 1/2 pound), stalks trimmed flush with bulb
1/3 cup extra-virgin olive oil
2 garlic cloves, minced
a 2-inch piece of fresh gingerroot, peeled and grated fine
1/3 cup fresh lime juice (from about 2 limes)
2 teaspoons fresh thyme leaves
a 4-inch piece of seedless cucumber, halved lengthwise, seeded, and cut into 1-inch chunks
1/2 pound tuna steak, cut into 1-inch cubes

Steps:

  • Prepare grill.
  • Cut fennel into 1-inch-thick wedges and halve crosswise into 1-inch pieces. In a medium saucepan of boiling salted water blanch fennel 2 1/2 minutes. In a colander drain fennel and refresh under cold water.
  • In a bowl stir together oil, garlic, gingerroot, lime juice, and thyme. Add fennel, cucumber, and tuna, tossing to coat, and let stand, covered, at room temperature 15 minutes.
  • Thread fennel, cucumber, and tuna onto two 10-inch metal skewers and grill kebabs on an oiled rack set 5 to 6 inches over glowing coals, turning them, until tuna is cooked through, about 12 minutes.

SEARED TUNA WITH BASIL OIL



Seared Tuna with Basil Oil image

4 quarts water
Salt
2 cups packed basil leaves
1 cup plus 1 teaspoon olive oil
4 (6-ounce) sashimi grade tuna steaks
1/4 teaspoon pepper
1 lemon, zested and juiced

Steps:

  • Bring 4 quarts water to a boil and add 3 tablespoons salt. Set up an ice bath. Blanch basil for 2 minutes in boiling water, then transfer immediately to an ice bath. Cool for 2 minutes, drain, then squeeze excess water from basil. Blend basil and 1 cup olive oil in a blender until well mixed. Strain in a coffee filter or cheesecloth.
  • Heat cast iron pan over high heat until very hot. Season tuna with salt and pepper. Brush lightly with olive oil. Place steaks in pan and cook until bottom is brown and crusty, about 3 minutes. Flip tuna and cook for 1 minute. (Tuna will be just seared on the outside and raw in the middle.)
  • Remove to a plate. Drizzle with basil oil and garnish with lemon juice and zest.

MARINATED SEARED TUNA

1/2 cup soy sauce
1/4 to 1/2 cup rice wine vinegar
2 teaspoons sambal oelek
4 scallions, white and light green sliced and finely chopped, dark green sliced on an extreme bias for garnish
2 cloves garlic, smashed and finely chopped
1 1/2 inches ginger, peeled and grated
Four 6-ounce sushi-grade tuna steaks, preferably in logs about 2- by 2- by 4-inches
Peanut oil, for searing

Steps:

  • In a flat, shallow dish, combine the soy, rice vinegar, sambal, white and light green scallions, garlic and ginger. Add the tuna and roll around to get the marinade on all sides. Cover and let sit in the fridge for up to 2 hours, turning the tuna periodically.
  • Remove the tuna from the fridge and let sit in the marinade outside of the fridge for 20 to 30 minutes.
  • When the tuna has come to room temperature, remove it from the marinade. With a paper towel, gently remove some of the excess marinade.
  • Coat a large saute pan with peanut oil and bring it to a VERY high heat. When the pan is VERY hot but not quite smoking, pull the pan off the heat and add the tuna to the pan. Return the pan to the heat and sear the tuna for 1 minute on each side.
  • Remove the tuna from the pan, let rest for 4 to 5 minutes and slice into 1/4 to 1/2-inch thick slices. Sprinkle with the dark green sliced scallion tops.
  • Serve immediately with a little extra soy on the side if desired.

2 pounds sushi-grade ahi tuna, cut into 1-inch cubes
1/2 cup olive oil
Salt and freshly ground black pepper
Rosemary stems cut into skewers about 2-inches long with leaves attached

Steps:

  • Preheat a grill or grill pan to high.
  • Put cubed tuna in a mixing bowl with olive oil, salt and pepper. Toss to incorporate the seasoning. Skewer the tuna through the center half way down the skewer. Season again with salt and pepper. Sear on a very hot grill for 10 seconds on all sides. Cool and serve at room temperature.

30ml soy sauce
50ml mirin (See know-how below)
1 tsp vegetable oil
1 mango , peeled
3 spring onions
250g pack tuna steak

Steps:

  • Make a teriyaki sauce by mixing the soy sauce, mirin and sugar in a shallow dish. Put the tuna steaks in the dish, turn over a few times so they're coated with the sauce, then leave in the fridge to marinate for at least 1 hr and up to 2 hrs.
  • To cook, heat a large frying pan. Take the tuna steaks out of the marinade and pat dry, then rub all over with the oil. Fry the tuna for 2 mins on each side, so they are still pink in the middle. Remove from the pan, then pour in the marinade and 2-3 tbsp water. Bring to the boil and cook for a few mins to heat through. Strain through a sieve into a small dipping bowl.
  • To serve, slice the cooked tuna, mango and spring onion into bite-size pieces. Thread onto wooden skewers, then serve warm or cold with the dipping sauce.

Nonstick vegetable oil spray
1 large red bell pepper, cut into 1-inch squares
1 large sweet onion (such as Maui or Vidalia), cut into 1-inch squares
6 (12-inch-long) metal skewers
Additional chopped fresh cilantro

Steps:

  • Whisk first 8 ingredients in medium bowl to blend; season to taste with ground white pepper. Transfer 3 tablespoons marinade to small bowl and reserve. Add tuna to remaining marinade in medium bowl and toss to coat. Refrigerate at least 30 minutes and up to 45 minutes.
