Scallops with Bacon and Yeast Sauce image

Provided by Food Network

Categories     main-dish

Time 1h

Yield 4 to 6 servings

Number Of Ingredients 14

3/4 pound (3 sticks) unsalted butter
2 ounces fresh yeast
1/3 cup tamari soy sauce
1 cup red grape juice or dry red wine
48 ounces (6 cups) canola oil
1 head cauliflower
Kosher salt
1/2 pound slab bacon, cut into 36 matchstick pieces, frozen
12 U-10 diver scallops
2 tablespoons canola oil
1/2 cup bacon lardons
2 teaspoons extra-virgin olive oil
1 bunch frisee lettuce
1 tablespoon sherry vinegar

Steps:

  • For the sauce: Heat 1/2 pound (2 sticks) of the butter in a saucepan until the milk solids turn a light brown. Add the yeast. Cook until yeast is caramelized and the same color as the butter. Add tamari and grape juice or red wine, then pour contents into a blender and blend until smooth. Pour back into pot and add remaining 1 stick butter. Whisk until emulsified. Reduce until saucy consistency.
  • For the cauliflower puree: In a Dutch oven or table-top fryer, preheat canola oil to 350 degrees F. Remove leaves and stem from cauliflower. Quarter the head of cauliflower. Fry until brown. Transfer to a blender in batches and blend until completely smooth. Season with salt.
  • For the scallops: Push 3 pieces of frozen matchstick bacon into each raw scallop through the top.
  • Add the canola oil to a medium saute pan over high heat. Once hot, sear scallops on one side until caramelized, 2 minutes; flip and cook the second side until caramelized, 2 mintues. Remove from heat.
  • For the garnish: In a small saute pan over a low flame, add the bacon lardons and 1 teaspoon olive oil and cook until the bacon renders its fat and becomes crispy, about 10 minutes.
  • Place frisee in a mixing bowl and dress lightly with sherry vinegar, 1 teaspoon olive oil and about 1 teaspoon of warm bacon fat.
  • To serve: Spread cauliflower puree on a serving platter. Slice scallops in half widthwise, then arrange over the cauliflower puree, garnish with the dressed frisee, spoon yeast sauce over the top and finish with some crispy bacon lardons.

Bacon and scallops are a classic combination. Here, the smoky-and-sweet pairing is used as a savory topping for our Sauteed Zucchini and Wax Beans.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers

Number Of Ingredients 6

6 slices bacon, cut into 3/4-inch pieces
1 pound large sea scallops, (about 16), sliced in half crosswise to form 2 rounds
Salt and freshly ground pepper
2 tablespoons minced shallot, (about 2 shallots)
1 cup white wine
2 tablespoons unsalted butter

Steps:

  • Heat a large saute pan over medium-low heat, and add bacon. Cook slowly, stirring frequently, until brown and crisp, about 8 minutes. Remove bacon with a slotted spoon, and transfer to a paper-towel-lined plate.
  • Drain excess fat, leaving a thin coat on bottom of pan. Increase heat to medium, add scallops to pan, and sprinkle with salt and pepper to taste. Cook until golden brown and opaque, about 2 minutes per side.
  • Transfer scallops to the serving dish, and add shallots to pan. When shallots are translucent, add white wine; scrape browned bits from bottom of pan with a wooden spoon. Cook until liquid is reduced by half, 3 to 4 minutes. Stir in butter, and pour over scallops; top with reserved bacon. Serve over ribbon zucchini.

BACON-WRAPPED SCALLOPS

Bacon-Wrapped Scallops image

I found this recipe on another website and tweaked it to suit my family's tastes. We really enjoyed this recipe and hope you will too!

Provided by Dreamgoddess

Categories     < 60 Mins

Time 33m

Yield 4 serving(s)

Number Of Ingredients 7

12 pieces bacon
24 scallops, rinsed and patted dry
1 teaspoon Old Bay Seasoning, to taste
1 teaspoon creole seasoning, to taste
1 cup ketchup
1/3 cup packed light brown sugar
1/2 cup white vinegar

Steps:

  • Preheat oven to 425 degrees.
  • If you prefer, the bacon can be pre-cooked for a couple of minutes in the microwave to insure it will be crispy by the time the scallops are done.
  • Do not overcook the scallops as they will be rubbery.
  • Cut each piece of bacon in half to make 24 pieces.
  • Roll a piece of bacon around each scallop and secure on wooden skewers.
  • Place scallops on a rimmed baking sheet.
  • Sprinkle with Old Bay and creole seasoning.
  • Both seasonings contain salt, so don't overdo it!
  • Amounts listed are what I used.
  • Bake at 425 degrees for 15-18 minutes, or until the scallops are done.
  • The bacon should be crispy.
  • While the scallops are cooking, combine the ketchup, brown sugar and vinegar in a saucepan to make the dipping sauce.
  • Mix well and cook until the sugar is dissolved.
  • Serve the scallops with the dipping sauce.

SHRIMP AND SCALLOPS WITH BACON

Shrimp and Scallops with Bacon image

Yield 4 servings

Number Of Ingredients 9

12 raw jumbo shrimp, peeled and deveined (16 to 20 count per pound)
12 raw large sea scallops, trimmed and well drained
Zest and juice of 1 lime
1 tablespoon toasted sesame oil (a generous drizzle)
1 tablespoon grill seasoning, such as McCormick's Montreal Steak Seasoning, or coarse salt and freshly ground black pepper
1 teaspoon hot red pepper flakes
12 slices center-cut or applewood-smoked bacon, cut in half
Toothpicks
3 scallions, very thinly sliced on an angle

Steps:

  • Preheat the oven to 425°F.
  • Place the shrimp and scallops in a shallow dish or bowl. Dress the seafood with the lime juice and zest, sesame oil, grill seasoning, and hot red pepper flakes. Wrap each shrimp and scallop with a half slice of bacon. Wrap each shrimp from head to tail, pulling the bacon snuggly around the shrimp. Wrap the bacon around the outside of each scallop. Fasten the bacon in place with toothpicks.
  • Arrange the shrimp and scallops on a slotted baking pan, such as a broiler pan, to allow it to drain while the bacon crisps. Bake for 10 to 14 minutes, until the shrimp is pink and curled, the scallops are opaque, and the bacon is crisp. Check after 8 minutes; the shrimp might finish before the scallops.
  • Arrange the cooked seafood on a platter and sprinkle with chopped scallions.
