Try a savory approach to your morning oatmeal with the addition of a soft-cooked egg and shredded cheddar cheese.

1/2 cup quick-cooking rolled oats
Coarse salt and ground pepper
Nonstick cooking spray
1 large egg
2 tablespoons shredded sharp cheddar
1 tablespoon thinly sliced scallion greens

Steps:

  • In a small saucepan, bring 1 cup water to a boil. Add oats and pinch of salt; stir, reduce heat, and simmer until tender, about 5 minutes. Meanwhile, heat a small nonstick pan over medium. Coat lightly with cooking spray. Add egg and cook until white is set and yolk is still runny, about 3 minutes. Season egg to taste with salt and pepper. Serve oatmeal in a bowl topped with cheese, egg, and scallion greens.

½ cup steel-cut oats, such as quaker quick 3-minute
nonstick cooking spray
1 large egg
2 slices turkey bacon
2 tablespoon shaved parmigiano-reggiano cheese
1 tablespoon sliced scallions
1 tablespoon french fried onions

Steps:

  • Prepare the oatmeal according to package directions and set aside.
  • Coat a small nonstick pan with nonstick cooking spray and heat the pan over medium heat. Add the bacon, cook until browned, and then remove. In the same pan, cook the egg until the white is set and the yolk is still runny, 3 to 4 minutes. Top the oatmeal with the egg, bacon, cheese, scallions, fried onions, and some salt and pepper.

I love savory oatmeal in the mornings. This recipe is from Quaker Oats. It calls for quick or old-fashioned oats, but I like steel-cut best.

1/2 cup quaker quick oats or 1/2 cup old fashioned oats
1 whole egg
2 slices turkey bacon, strips
3 tablespoons shaved parmesan cheese
1 tablespoon sliced scallion
1 tablespoon French-fried onions

Steps:

  • Prepare oatmeal as usual and set aside. Coat a small nonstick pan with cooking spray and turn on medium heat. Add bacon, cook until browned, and then remove. In the same pan, cook egg until the white is set and the yolk is still runny (about 3-4 minutes). Top oatmeal with the egg, bacon, parmesan cheese, scallions, fried onions, and salt & pepper.

2/3 cup quick-cooking steel-cut oats, such as McCann's
1 clove garlic, grated
Kosher salt and freshly ground pepper
1/3 cup finely grated Parmesan, plus more for serving
1 tablespoon extra-virgin olive oil, plus more for drizzling
2 large eggs
1/4 cup Peppadew peppers, sliced
1 cup watercress, tough stems removed
2 lemon wedges

Steps:

  • In a small saucepan, bring 2 cups water to a boil. Add oats, garlic, and 1/2 teaspoon salt. Stir, then reduce heat, cover, and simmer, stirring occasionally, until tender, 5 to 7 minutes. Stir in cheese; cover to keep warm.
  • Heat oil in a medium nonstick pan over medium. Add eggs and cook until whites are set and yolks are still runny, about 3 minutes. Season with salt and pepper.
  • Add water to oatmeal as necessary until creamy. Divide between two bowls; top with eggs, peppers, and watercress. Squeeze lemon wedges over top, drizzle with oil, sprinkle with cheese, and serve.

1 tablespoon unsalted butter
1 tablespoon low-sodium soy sauce
2 teaspoons sriracha
2 slices cooked bacon, crumbled
2 scallions, sliced
1 tablespoon chopped fresh basil
2 tablespoons toasted sesame oil
2 eggs, poached or soft boiled

Steps:

  • Bring the oats, water and butter to a boil in a saucepan. Reduce the heat to a simmer and cook until the water is absorbed, about 10 to 15 minutes. Stir in the soy sauce, sriracha, bacon, scallions and basil. Separate into two equal servings, then top each with a drizzle of toasted sesame oil. Add the egg on top and serve immediately!
