GERMAN KOHLRABI IN CREAM SAUCE



German Kohlrabi in Cream Sauce image

This is a classic and easy German kohlrabi recipe that our whole family loves. We eat it as a side to pretty much any meat or fish dish.

2 kohlrabi, peeled and thinly sliced
1 pinch salt
½ teaspoon white sugar
¼ cup heavy whipping cream, or more to taste

Steps:

  • Combine kohlrabi, salt, and sugar in a pot. Set aside until kohlrabi releases liquid, about 5 minutes.
  • Cover pot and bring to a boil over medium heat. Shake pot from time to time, so nothing sticks to the bottom. Cook for about 4 minutes. Stir in cream and simmer another 30 seconds without allowing cream to boil.

4 cups cubed peeled kohlrabi (about 6 medium)
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups whole milk
1/2 teaspoon salt
1/4 teaspoon pepper
Dash paprika
1 large egg yolk, lightly beaten
Minced chives

Steps:

  • Place kohlrabi in a large saucepan; add 1 in. of water. Bring to a boil. Reduce heat; cover and simmer until crisp-tender, 6-8 minutes., Meanwhile, in a small saucepan, melt butter. Stir in flour until smooth; gradually add milk. Bring to a boil. Stir in the salt, pepper and paprika. Gradually stir a small amount of hot mixture into egg yolk; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir for 2 minutes. , Drain kohlrabi and place in a serving bowl; add sauce and stir to coat. Sprinkle with chives and additional paprika.

Number Of Ingredients 8

12 to 14 2-inch kohlrabi (the big ones are fibrous), enough to make about 6 cups prepared
1 1/2 tablespoons butter
1 1/2 tablespoons flour
1/3 cup milk
3/4 cup half-and-half, not ultrapasteurized
1 egg yolk
1/4 teaspoon salt, or to taste
Several scrapes of fresh nutmeg

Steps:

  • Peel the kohlrabi, slice into quarter-inch-thick slices, then cut the slices into matchsticks a quarter-inch broad. Set aside.
  • Make the sauce. Melt the butter in a small, heavy saucepan, stir in the flour and cook over very low heat, stirring often, for 15 minutes.
  • Add the milk in a thin stream, beating with a wire whisk. Raise the heat to low-medium, stir in the half-and-half and cook the sauce, stirring almost constantly, until it smoothly coats a spoon, about 10 minutes. Keep warm over very low heat, stirring from time to time.
  • Put the kohlrabi in a basket steamer over boiling water and cook for 8 to 10 minutes, or until just tender. It should be firm to the bite but not Chinese-crisp.
  • When the kohlrabi is almost done, beat the egg yolk in a heatproof bowl, beat in a bit of the warm sauce and then add the yolk mixture to the saucepan. Cook, stirring, until the sauce is very thick and hot, but do not let it boil.
  • Season the sauce with salt to taste and just enough nutmeg to give a toasty flavor without being too assertive. Remove the basket from the steamer and toss the contents gently until the surfaces are completely dry, then combine the kohlrabi with the sauce and serve at once.

LEMON MERINGUE PIE

This adaptation of Alice Waters's lemon meringue pie came to the Times in a 1987 article in the Sunday magazine. It takes a little time, but your efforts will be rewarded with a spectacular centerpiece dessert to be proud of: a cloud of toasted meringue atop a pool of buttery and bright lemon curd in a light and flaky crust. If you can't find Meyer lemons, regular supermarket lemons will make a worthy substitute.

Flaky pie crust, enough for a 9-inch shell (see recipe)
2 Meyer lemons or other large lemons
2 eggs
3 egg yolks
6 tablespoons sugar
3 tablespoons salted butter, cut in 3 pieces
3 tablespoons unsalted butter, cut in 3 pieces
3 egg whites, at warm room temperature
1/4 teaspoon cream of tartar
6 tablespoons superfine sugar
1/2 teaspoon vanilla extract

Steps:

  • Prepare the shell. Roll the pastry into a 12-inch circle, 1/8-inch thick, and fit gently into the pan. Tri the edge a half-inch beyond the rim, fold under and crimp or pinch to make a decorative edge. Prick the bottom with a fork. Freeze the shell for 20 to 30 minutes.
  • Prepare the filling. Grate the zest from the lemons into a small, noncorrodable bowl. Strain in the lemon juice, then press through as much lemon pulp as possible.
  • In a heavy, noncorrodable saucepan, beat the eggs, yolks and sugar until just mixed. Stir in the lemon juice and pulp, then the six tablespoons of butter.
  • Cook, stirring constantly, over low to medium heat, until the mixture comes together and thickens enough to coat a spoon. Remove from heat, allow to stand five minutes, then whisk briefly to smooth. Set aside.
  • Preheat the oven to 375 degrees. Line the frozen shell with aluminum foil, weight with beans or pie weights and bake for 20 minutes, or until set and dry looking. Remove the weights and foil, turn the heat down to 350 and continue baking until shell is golden brown, about 12 to 15 minutes. Set aside and allow to cool slightly, but leave the oven on.
  • Spread the prepared filling in the shell and bake for 10 to 15 minutes or until the filling is just set. Remove pie and turn oven to 375.
  • Make the meringue. Beat the egg whites until frothy, add the cream of tartar and continue beating until rounded peaks form. Beat in sugar and vanilla.
  • Spread the meringue over the filling, making sure it meets the edges of the crust to make a seal. Swirl in a design with a knife or spatula and bake for about 10 minutes, or until the meringue is lightly browned.
  • Allow to cool completely, from one to two hours, but do not refrigerate.

2 cups unbleached all-purpose flour
3/8 teaspoon salt
1/8 teaspoon sugar
5 tablespoons salted butter, cut in several pieces
6 1/2 tablespoons unsalted butter, cut in several pieces
3 tablespoons solid vegetable shortening
3 tablespoons ice water (a bit more or less may be needed)

Steps:

  • Mix flour, salt and sugar.
  • Using a processor, a pastry blender or your fingertips, cut the salted butter into the dry ingredients until the mixture resembles cornmeal. Add unsalted butter and shortening and cut them in until the lumps are the size of peas.
  • If you have been using a processor, transfer the mixture to a large bowl. Sprinkle on the ice water a little at a time and toss with a fork until the mixture comes together in lumps and holds together when pressed. If necessary, add more ice water, sparingly. Avoid kneading the dough.
  • Gather the dough into two balls, wrap each tightly in plastic wrap and chill for at least four hours.

When I was a nanny in Germany, this recipe was one I'd make often for the family. Tender kohlrabi cubes drenched in a creamy white sauce with a hint of nutmeg is a simple, mild, but flavorful side dish. Try this sauce over baked or fried potatoes, too.

4 medium (blank)s kohlrabi bulbs, peeled and cubed
½ teaspoon salt
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup milk
3 tablespoons cream
1 teaspoon salt
1 teaspoon ground nutmeg
2 teaspoons white pepper
½ bunch fresh parsley, chopped

Steps:

  • Place the kohlrabi and 1/2 teaspoon salt in a saucepan. Cover with water, and bring to a boil over medium-high heat. Cook until kohlrabi can be pierced with a fork, but remains firm, about 5 minutes. Drain, reserving 1 cup of cooking water. Place kohlrabi in a bowl, and cover.
  • Place the butter into the same saucepan, and melt over medium heat. Whisk in the flour, and stir until the mixture becomes paste-like and golden brown. Gradually whisk the milk and reserved cooking water from the kohlrabi into the flour mixture, stirring until thick and smooth. Stir in the cream, 1 teaspoon salt, nutmeg, white pepper, and parsley until well blended. Continue whisking until sauce thickens, then cook 10 minutes more. Stir in the kohlrabi, tossing to coat evenly with sauce.

Steps:

  • Place the quarter-cup of tepid water in a small bowl and sprinkle in the yeast. When it dissolves, add the third of a cup of water.
  • Beat in the flour until the very soft dough is smooth and elastic. Cover tightly and refrigerate for at least 24 hours. The sourdough will remain useable for about five days.
  • To keep the sourdough alive, remove and use or discard a half-cup of it. Beat in a third of a cup of water and a half-cup of flour. Cover tightly and refrigerate.

3 Tbsp bacon grease
1/4 c diced onion
1/2 tsp salt
1/2 tsp white pepper
1 tsp garlic powder
1/4 tsp dried thyme
1/4 tsp celery seed

12 oz can evaporated milk or cream
3 oz pkg. softened cream cheese, cut in chunks
3/4 c broth- flavor depends on type of protein or vegetables you are using
2 c cooked shredded meat or seafood or chopped vegetables
1 1/2 c frozen peas and carrots ,thawed
1 Tbsp chopped fresh parsley
4 large buttermilk biscuits, texas toast or thick garlic toast

Steps:

  • 1. Heat grease in medium saucepan over medium heat until hot. Sauté onion 2 minutes, stir in salt and pepper, thyme,celery salt, garlic powder and flour. Whisk in milk and broth then cream cheese chunks stir until cheese melts and mixture begins to bubble.
  • 2. Stir in the 2 cups of whatever you are using , such as chicken or seafood or just asparagus, etc. If meat or seafood is used, stir in the thawed peas and carrots and cook until heated through and vegetables are tender. Remove from heat; stir in parsley. Serve over split country biscuits of thick toasted garlic toast or Texas toast.
  • 3. good with scrambled eggs and bacon on biscuits too.

SWISS CHARD DOLMAS

18 long-stemmed Swiss chard leaves, each leaf at least 5 by 8 inches (if chard is short stemmed, allow 4 or 5 extra leaves)
1 pound lamb shoulder chops, on the bone
2 tablespoons olive oil
1 1/2 cups chopped onion, pieces about 1/3 inch size
Fine shredded zest of 1 large lemon, about 1 tablespoon
2 large cloves garlic, finely minced
1/2 cup raw basmati rice, or other long-grain white rice
2 tablespoons currants
2 tablespoons pine nuts
1/2 cup minced fresh parsley
1/4 cup minced fresh dill, or 1 1/2 tablespoons dried
1/2 teaspoon salt
1/4 teaspoon allspice
1 medium onion, thinly sliced
2 egg yolks
Juice of 1 lemon, about 1/4 cup
1 lemon, cut in thin wedges, for garnish

Steps:

  • Bring a large kettle of water to the boil, add the chard and stir well. Drain at once, rinse with cold water, drain again and set aside.
  • Bone the chops and reserve the bones. Cut off all fat and discard.
  • Chop the meat into little chunks a bit coarser than hamburger. There should be about one cup.
  • Put a wide skillet over medium heat, add the oil, then the chopped onion. Cook, stirring often, until the onion is just golden around the edges, about 15 minutes.
  • Add the lemon zest and cook, stirring, for about two minutes, then add the garlic and meat. Continue cooking, stirring occasionally, until the meat is just starting to brown, about five minutes more.
  • Stir in the rice, turn the heat to medium-low and add a half-cup of water. Allow to simmer undisturbed until all the water is absorbed, then stir in the currants, pine nuts, herbs and seasonings and remove the pan from the heat.
  • Fold each chard leaf in half the long way, so the spine of the stem protrudes. Starting where the stem widens, slice out the lower portion of the stem. Reserve leaves and stems.
  • Lightly film the bottom of a nonstick nine-inch diameter kettle with olive oil, then line it with onion slices, lamb bones and chard stems.
  • Lay a trimmed leaf face up on the work surface. Put a generous portion of filling in a wide line right above where the cut has split the leaf. Fold up the two bottom flaps to cover the filling, fold in the leaf edges to enclose it further, then roll like a jellyroll to the tip, tucking as you go. Set the rolls seam side down in the kettle, placing the second layer of leaves perpendicular to the first.
  • Pour in one and three-quarters cups of water; put a plate on top of the rolls to weight them down and cover the pan. Cook at a gentle simmer for an hour, or until the chard is tender and the rice fully cooked.
  • Using tongs, remove the rolls and set aside, covered to keep warm. Strain the kettle contents, pressing on the solids to get all juices; there should be about two-thirds of a cup of liquid. If necessary, boil to reduce, or add water.
  • Beat the egg yolks with the lemon juice in a small nonstick saucepan. Add the juices and cook, stirring constantly over very low heat, until the sauce thickens. Do not let it boil.
  • Serve the dolmas hot or cold, with sauce on the side, garnished with lemon wedges.
