Sausage & Pepper Bread image

My FIL used to make this bread. It may be a bit labor intensive, but it is soooo tasty. It can also be made in advance and frozen before baking.

Number Of Ingredients 11

1 lb sweet Italian sausage
3/4 cup chopped red pepper
1 1/4 cups warm water
4 1/2 teaspoons active dry yeast
2 tablespoons sugar
1 teaspoon salt
1 teaspoon italian seasoning
1/4 cup butter, softened
2 eggs, room temerature
4 1/2 cups flour
1 1/2 cups shredded mozzarella cheese

Steps:

  • Cook sausage and pepper until sausage is brown breaking up the meat as you go along.
  • Drain and set aside to cool.
  • Pour warm water into large bowl, stir in yeast until dissolved.
  • Proof 10 minutes.
  • Add sugar, salt, seasoning, butter, 1 egg and 2 cups flour.
  • Beat until smooth then gradually add enough flour to make a soft dough.
  • Knead for about 10 minutes.
  • Place in a greased bowl, turn to grease top. Cover and let rise until doubled about 1 hour.
  • Punch down dough and divide into 6 pieces.
  • Roll each piece into a 14" x 4" strip.
  • Stir cheese into sausage mixture then spoon down the center of each strip.
  • Seal long edges of strips together to form a 14" rope.
  • Braid 3 ropes together and seal.
  • Place loaves on greased baking sheet, cover and let rise until doubled about 45 minutes.
  • Beat remaining egg and brush on loaves.
  • Bake for 25 minutes at 400 degrees.
  • Serve warm.

Roasted Sausages, Peppers, and Onions and Cheesy Bread with Black Pepper image

Number Of Ingredients 12

2 1/2 pounds thin Italian sausage (the kind sold in swirl shapes, each swirl will weigh 1 1/4-pounds or so) hot and sweet varieties
Extra-virgin olive oil, for liberal drizzling plus 3 tablespoons, 3 turns of the pan
4 cloves garlic, 3 thinly sliced, 1 cracked from skin
1 red bell pepper, seeded and sliced 1/2-inch thick
1 green bell pepper, seeded and cut into 1/2-inch slices
1 large onion, 1/2-inch slices
1/4 cup tomato sauce, thinned out with water
Salt and pepper
1 loaf crusty semolina bread, split
1/2 cup grated Parmigiano-Reggiano
Coarse black pepper
2 tablespoons chopped flat-leaf parsley, a rounded palm full

Steps:

  • Preheat oven to 425 degrees F.
  • Place sausage rings on a baking sheet and liberally drizzle extra-virgin olive oil down over them. Place in hot oven and roast until casings are crisp and juices run clear, somewhere between 15 and 20 minutes. Remove from oven to rest sausages; switch on broiler.
  • While sausages roast, heat a skillet over medium heat with 3 tablespoons extra-virgin olive oil and sliced garlic. Simmer garlic in extra-virgin olive oil 2 to 3 minutes then add peppers and onions. Turn the heat up a notch, and cook until the vegetables are tender but the peppers still hold strong color, 5 to 6 minutes. Add thinned tomato sauce, salt, and pepper and reduce. Turn heat back to low and hold the veggies until the sausage comes out of the oven, a couple of minutes.
  • Toast the split bread, remove from oven, rub with cracked garlic, liberally drizzle with extra-virgin olive oil, and cover with cheese and lots of black pepper. Return to the broiler to brown cheese, 1 minute. Scatter parsley over the bread.
  • Cut bread into chunks and pile with peppers and onions then sausages. The bread will soak in the juices as you work through the sausage, peppers and onions.

  • Cook sausages according to package directions. I cooked it over medium heat on each side until a nice golden brown, then I cut the sausages into 1/2 inch slices and then cooked them again over medium heat until cooked all the way through.
  • Using the same pan, add peppers and onion and season with salt and pepper, to taste. Cook for just a few minutes, 3-4 minutes. You do not want to over cook these! It will make the bread soggy.
  • Cut and remove the center of the loaf of bread. Place loaf of bread on a baking sheet and add 5 slices of provolone cheese to the bottom of the loaf. Top with sausages, onions and peppers. Cover with foil, place in the oven and bake 20 minutes.

  • Thaw dough in the refrigerator overnight for best results or thaw according to package directions.
  • About two hours before you are ready to eat, bring dough out to room temperature, cover and place in a warm place for at least one hour.
  • While dough is warming up, in a large skillet over medium heat, place oil and bring to hot. Add both peppers and onion and cook about 3 to 4 minutes, or just until the onions are no longer crunchy. You want the vegetables somewhat tender but not over cooked. Add garlic and basil and cook for one minute.
  • Move vegetables to the sides of the pan and place the sausage meat in the center. With two wooden spoons, break the meat apart and keep cooking until browned. When the meat is no longer pink, bring the vegetables in from the sides and mix all together. Add salt, pepper and tomato paste and stir to combine. Remove from heat and transfer mixture to a dinner plate. Place in the refrigerator to cool down somewhat (you want this mixture to be at room temperature before adding to the raw dough).
