THE BEST SAUSAGE PIZZAS
What makes this recipe unique is the slow overnight fermentation of the dough. The flour has time to hydrate and relax, which makes the dough so much easier to roll out! -Josh Rink, Taste of Home Food Stylist

Steps:
- 1. Gather all ingredients for prep. If you use a stone heat oven to 500 degrees and get your stone good and hot. Leave in oven while preparing pizza. cook sausage until done completely. Put in a sieve and press down to remove grease.
- 2. Cook bacon how you like, I do mine in the oven on wire racks,(no grease) until crispy let cool. Slice onions 1/8 inch thick rings, set aside. Put the crust on a peel dusted with cornmeal, (slides off easier). Brush with garlic butter. Put slices of provolone on the bottom of crust. Add 1 cup of gruyere and 1 cup of fontina.
- 3. combine all ingredients for the sauce and ladle on top of cheese then add remaining cups of fontina and gruyere plus 1 cup of sharp cheddar. Scatter the italian sausage, onions and bacon over the top. Turn oven down to 450 degrees put pizza in center with rack at the middle. Bake 40- 50 minutes
- 4. Remove carefully from the oven. Let sit 10 minutes so ingredients don't run all over the place. Remember to leave a rim (crust). Also a raised rim would help hold your goodies in place. Slice and serve.
- 5. this is a fairly large pizza, but I have teenage boys that never seem to get full. Scale it back for what fits you and please enjoy.

SAUSAGE & BACON PIZZA BOATS
I make these on the weekends to use as after school snacks and for the hubby and I to take to work for lunch. The only problem is that by Tuesday or Wednesday they are usually gone. I use silicon muffin tins so that any cheese that may get ont he tins comes off easy durning cleaning. I usually flatten the biscuits as I go so I only flatten the biscuits I need - I usually get 10 to 12 depending how full I fill them. I just bake up the remaining biscuits and serve them for supper. Feel free to play with the sausage mixture - we have picky ones at our house - so adding onions, garlic and green peppers is not an option - but don't let that stop you!

- Preheat oven to 350 degrees Fahrenheit. Pour 1/2 cup pizza sauce in a large glass baking dish.
- Make the zucchini boats. Cut bottom and top off the zucchini and then cut in half lengthwise. Using a spoon, hollow out the center of the zucchini halves, leaving about 1/4-1/2 inch shell. Place flesh side up in the glass baking dish. Set aside.
- Place a large sauté pan over medium-low heat. Once it gets hot, about 30 seconds, add in ground pork, breaking it up with a spoon. Sauté 4-5 minutes until browned. Add in reamining pizza sauce (1 1/4 cup), dried parsley, dried oregano, red pepper flakes, and salt and pepper. Stir to combine and remove from heat once incorporated.
- Stuff the zucchini boats with the sausage mixture, dividing it up evenly (make sure to get all the sauce). Sprikle with mozzarella cheese, evenly distributing. Cover pan with foil and bake for 30-35 minutes until zucchini is cooked through, but still has some firmness. Top with optional toppings and enjoy!
