SLOW-COOKER BAVARIAN-STYLE BEEF AND SAUERKRAUT
Treat yourself to a taste of Bavaria with this slow-cooker beef roast, which calls for just 15 minutes prep time. Sauerkraut, caraway seed and stone-ground mustard play into the tasty theme.

Steps:
- Heat oil in 12-inch skillet over medium-high heat. Cook beef in oil about 5 minutes or until brown on all sides. Sprinkle with caraway seed and salt.
- Place beef in 5- to 6-quart slow cooker. Place onions, sauerkraut and 1/4 cup of the beer around beef.
- Cover and cook on Low heat setting 6 to 8 hours.
- Remove beef from cooker; cover to keep warm. Mix flour, remaining 1/4 cup beer and the mustard in small bowl; gradually stir into juices in cooker. Increase heat setting to High. Cover and cook 15 to 30 minutes or until slightly thickened. Serve beef with juices.

- In a bowl, combine beef, egg, crumbs, milk, onion, vinegar, caraway and salt; mix well. Shape into 1-1/2-in. balls. , In a Dutch oven over medium heat, brown meatballs in oil; drain. Add the potatoes and sauerkraut and mix well. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until heated through. Sprinkle with parsley. , If sauce is desired, combine mayonnaise and horseradish; serve on the side.

JOLEAN'S CROCK POT OLD WORLD SAUERKRAUT SUPPER
This is a German recipe that my Mom made for us every New Year's Day. Although my siblings didn't care for sauerkraut, Mom INSISTED that we eat pork & sauerkraut for good luck on New Year's Day back in the 70's. Well, this is the recipe that we ALL loved, and I handed it down to my kids as well...A true tradition in my family, and a recipe that I found in one of Mom's Crock Pot Cookbooks from 1970, but tweaked just a bit so we all would like it! Truly yummy, totally filling, and the switch-up she made to using "Bavarian" sauerkraut makes all the difference in taste! Both of my ex-DH's love this recipe and brag about it to other people to this day...

Steps:
- Fry bacon until crisp. Drain (reserving drippings in pan) and break into small pieces. Add flour to the bacon drippings and blend well until slightly golden brown.
- Stir in sauerkraut (and liquid from 1 can). Mix well and saute for 5 minutes.
- Place sauerkraut mixture, crumbled bacon and sausage pieces in crock pot.
- Add all other ingredients. Mix together thoroughly.
- Cover and cook on Low 7 to 9 hours.
- Salt & pepper to taste, but you may not need it!

- Place beef cubes in a large bowl. Sprinkle 2 tablespoons sweet paprika and hot paprika on the beef. Drizzle vegetable oil over beef. Stir to coat beef cubes with paprika and oil. Cover and chill for 1 hour.
- Heat 2 tablespoons lard in a large Dutch oven or soup pot over medium heat. Working in batches, add the beef to the pot and brown on all sides. Do not brown the beef all at once.
- Note paprika browns quickly and so watch over it and turn beef cubes before it blackens/burns. Transfer browned beef to a plate or bowl.
- Add 1 tablespoon of lard to the pot if needed (if the pot looks "dry" and does not have a layer of melted lard in the bottom).
