BUFFALO BURGERS
Ground buffalo (bison) is a great choice for delicious burgers. The lean meat and rich flavors create burgers with some extra zip that helps them stand out from regular burgers. The secret to this burger recipe is using a little Worcestershire and BBQ sauce to add moisture that holds the ground meat together while deepening the burgers' flavor.

- Finely mince the onion and garlic. Place the ground buffalo in a bowl with the onion, garlic, smoked paprika, salt, and pepper. Mix in the Worcestershire and BBQ sauces.
- Use your hands to mix everything as if you're giving someone you like a good back rub, making sure the seasoning gets spread evenly through the ground bison.
- To form the burgers, split the mixture into equal parts and use your hands to form patties, working the meat until the patties hold together.
- Using your thumbs create a small depression in the top of the burgers; this will help them keep their shape on the grill.
- Grill the burgers on a medium to medium-high grill for 5 to 6 minutes, flip and cook for another five to six minutes or until the burgers have the desired level of doneness.

- For the burgers: Melt 9 tablespoons of the butter in a pan, then pour it into a measuring cup.
- Put the ground chicken in a bowl and add 1 tablespoon of the melted butter, 1 tablespoon of the hot sauce and the salt and pepper. Mix and form into 2 patties.
- Set a nonstick pan over medium-low heat and add the oil to the pan. Add the patties to the pan, turn the heat up to medium and cook until they are browned on the first side, about 4 minutes.
- Meanwhile, mix the remaining 8 tablespoons hot sauce into the remaining butter in the measuring cup.
- Flip the patties and put a couple tablespoons of the butter and hot sauce mixture on each. Cook another 4 minutes.
- For the blue cheese dressing: Meanwhile, mix the mayonnaise, sour cream, blue cheese crumbles, vinegar and some salt and pepper in a bowl. Taste and adjust with more vinegar, salt and pepper if needed.
- Add the remaining 2 tablespoons butter to a skillet and heat over medium-low heat until the butter is melted and the skillet is hot. Add the onion rolls cut-side down and toast until golden, about 2 minutes.
- Flip the patties again, put another couple tablespoons of the butter and hot sauce mixture on each patty and cook until the patties are cooked through, about 2 more minutes.
- Spread a little of the butter and hot sauce mixture on the top and bottom buns. Top each bottom bun with a patty, then some sliced celery, blue cheese dressing, blue cheese crumbles, celery leaves and the top buns. Serve with more blue cheese dressing and the celery sticks.

Buffalo is so delicious! I was surprised to see few recipes using it on this site. These burgers are great grilled. Remember, buffalo does not need to be cooked as long as hamburger, you do not want to overcook.

I just recently discovered ground buffalo and it makes delicious hamburgers! It's a leaner meat and has a unique & tasty flavor. These are a joint effort by my husband and I - I prepare the patties, he grills them to perfection.

- In a medium bowl mix the buffalo, egg, breadcrumbs, onions, mushrooms and garlic. Mix until well blended ( I have found the easiest way to mix is with my hands - it pays to get a little messy!).
- Season to taste with salt, pepper and lemon pepper.
- Form into hamburger patties. Make the patties thick - almost in the shape of a meatball. The thicker they are the juicier the burger will be.
- Cook on the grill for 8 minutes on each side. We usually soak hickory/mesquite chips and put those on the grill before the burgers for a nice smoked flavor (we use a charcoal grill). You want to be careful to not overcook these as the buffalo can dry out quickly.
- Place cheddar cheese on burgers when there is 1 minute left.
- Put on buns and top with your favorite toppings - tomato, pickles, lettuce, mustard, ketchup.
- Enjoy the unique flavor of buffalo.

- Preheat an outdoor grill or broiler.
- In a large mixing bowl, mix the buffalo meat, chiles, cayenne, cumin, and salt until well blended. Refrigerate until ready to use.
- Form the meat mixture into 4 large patties. Place the patties on the grill and cook until desired temperature. Season the burgers with salt and pepper to taste and place on hamburger buns. Top with roasted red peppers and Famie's Simple and Spicy BBQ Sauce.

This was on the package of meat. It is from Great Range Brand. I left out the hot pepper as we're not fond of hot. The flavor was good, but a little sweet. Next time I'll put less ketchup in. It's a good basic recipe to experiment with.

- Preheat an outdoor grill to medium-high.
- Put the buffalo, chuck, onion, tomato paste, and liquid smoke in a large bowl and season generously with salt and pepper. Mix everything together with your hands until it is well combined.
- Take about 1 cup (8 ounces) of the meat mixture and form it into patties with your hands or in a hamburger press. When you have them all made, grill them, turning frequently, until cooked through, about 8 to 10 minutes total. (Alternately, cook them in a large nonstick skillet over medium-high heat until cooked through, about 8 to 10 minutes.) Serve on hamburger rolls with the toppings of your choice.
BUFFALO BURGERS ASPEN STYLE

- Combine first 6 ingredients well. Form small patties by hand (approximately 3 inches across). Toss baby greens with olive oil, lemon juice, and salt and pepper, to taste. Grill burgers over medium heat until cooked through. Serve on dinner rolls, topped with a slice of the goat cheese and the dressed greens.
