SAVORY CURRIED RICE WITH DRIED FRUIT
This rice not only looks beautiful, but it's bursting with savory flavors, and your house will smell delicious when you cook this! This is a recipe I adapted from Taste Of Home's Holiday Recipes. I made it my own by altering a few ingredients and adding others, but yield amount and cooking time/method are the same. I like to make the rice mix a day or two ahead to let all the flavors meld. This makes 2 batches of rice.

Steps:
- In a large bowl, combine the first 8 ingredients. You can do this a day or two in advance to allow flavors to meld, but it's not necessary.
- Combine water and butter in a saucepan; bring to a boil.
- Add 2 cups rice mix, reduce heat, and simmer for 20 minutes, or until liquid is absorbed.
- NOTE: I make this a complete meal by adding cooked chicken thighs. You can store this rice mix in an airtight container for up to 3 months.
CURRIED RICE SALAD
This rice salad has it all in the flavor and texture department. I love the nuttiness of the rice blend paired with the peppery arugula, tart apricots and sweet curry vinaigrette.

Steps:
- Combine the rice, vegetable stock and 1/4 teaspoon salt in a medium saucepan. Bring to a boil; cover, reduce the heat to low and simmer until the liquid is absorbed and the rice is tender, 40 to 45 minutes. Stir in the apricots and shallot during the last 5 minutes of cooking.
- Spread the rice in a single layer on a parchment paper-lined rimmed baking sheet to cool to room temperature, about 30 minutes.
- Make the vinaigrette: Whisk together the vinegar, curry powder, honey, 1/4 teaspoon salt and 1/4 teaspoon pepper. Gradually whisk in the olive oil until combined.
- Transfer the cooled rice to a serving bowl. Add the desired amount of the vinaigrette, then the arugula, pine nuts and mint, and toss to combine. Season with salt and pepper.
FRUIT AND NUT CURRIED RICE SALAD
Serve well chilled for a delicious side dish for a picnic or barbecue dinner. This is an exotic, crunchy salad.

Steps:
- Cook rice with water, salt and butter according to package directions.
- Chill.
- Cut bananas into 1/2 inch slices.
- Sprinkle 1 tablespoon lemon juice over banana slices.
- In a large bowl, combine rice, celery, raisins, peanuts, pimiento and chives.
- Toss lightly and chill.
- Combine mayonnaise, cream, 1 tablespoon lemon juice, curry powder, dry mustard and hot pepper sauce.
- Mix well. Add bananas.
- Toss all but salad greens.
- Arrange mixture on crisp salad greens on chilled salad plates.
- Garnish with toasted coconut and serve.

Steps:
- Wash rice until water runs clear; drain well.
- In a saucepan, heat oil over medium heat.
- Add the green onions, garlic, curry powder, ginger, and rice; sauté for about 4 minutes or until the rice appears dry.
- Add 1 teaspoon salt and the water.
- Cover and lower the heat to low; cook at a gentle boil until the rice is tender and the water is absorbed (about 15 minutes).
- Fluff the rice with a fork; cool.
- In a big bowl, add the rice, apples, pineapple, apricots, coconut, mint, and cilantro; stir to combine.
- Dressing: Add all the dressing ingredients to the container of an electric blender; process until smooth.
- Pour the dressing over the rice mixture; toss to coat.
- Add salt and pepper to taste; serve.
