It doesn't get much better than my mum's Irish Apple Cake recipe - authentically Irish with tart Granny Smith apples and a streusel topping.

3/4 cup (3 ¾oz/105g) all-purpose flour
1/4 cup (¾oz/21g) rolled oats
1/2 cup (4oz/115g) sugar
1/16 teaspoon salt
6 tablespoons (3oz/85g) butter
1/2 cup (4oz/115g) butter ((at room temperature))
1/2 cup (4oz/115g) sugar
2 teaspoons vanilla extract
2 large eggs
1 1/4 cups (6 1/4oz/177g) all-purpose flour
1 teaspoon baking powder
1 teaspoon cinnamon
1/8 teaspoon salt
3 tablespoons milk
3 granny smith apples ((peeled and sliced thin))

Steps:

  • Preheat your oven to 350°F (180°C) then butter and line a 9-inch bake pan. Set aside.

An authentic Irish Farmhouse Apple Cake ~ delicious with or without the traditional custard sauce!

1/2 cup (or 113 grams) unsalted butter at room temperature
1/2 cup (or 100 grams) granulated sugar
2 large eggs
3 Tbsp (or 45 ml) whole milk or cream
1 1/4 cups (or 150 grams) all purpose flour
1 tsp baking powder
1 tsp cinnamon
1/8 tsp salt
about 3 Granny Smith apples, peeled and thinly sliced. Mine weighed a little over a pound after slicing.
confectioner's sugar for dusting
3/4 cup (or 96 grams) all purpose flour
1/4 cup (or 25 grams) old fashioned rolled oats
6 Tbsp (or 85 grams) unsalted cold butter (cut in small pieces)
1/2 cup (or 100 grams) granulated sugar
6 large egg yolks
6 Tbsp (or 76 grams) granulated sugar
1 1/2 cups (or 375 ml) whole milk ~ you can also use half and half or cream
1 1/2 tsp vanilla

Steps:

  • Set the oven to 350F Grease a 9 inch springform pan.
  • Make the custard sauce ahead of time. Bring the milk to a simmer over medium heat. Meanwhile whisk the yolks and sugar until well combined. Drizzle a little of the hot milk into the egg mixture, whisking all the time. Drizzle a little more, then transfer that back into the pan of hot milk and continue cooking, stirring constantly, until the mixture coats the back of a spoon. Do this slowly, over medium heat, and I like to use a silicone spoon or spatula to scrape the bottom and sides of the pan as it heats. The mixture will become velvety and thickend, but it will not be as thick as pudding. It will continue to thicken as it cools, so don't overcook or it can curdle. Stir in the vanilla.
  • Pour the custard through a sieve (to catch any stray lumps) into a heat proof jar or bowl and place a piece of plastic wrap onto the surface so it won't form a skin as it cools. Put in the refrigerator until completely chilled.
  • To make the streusel topping, blend the bits of butter into the flour, sugar, and oats until the butter is incorporated and the mixture has a coarse crumbly texture. Put in the refrigerator.
  • Cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time.
  • Whisk together the flour, baking powder, cinnamon, and salt. Fold the dry ingredients into the butter/sugar mixture, along with the milk or cream.
  • Spoon the batter into your prepared pan, and smooth out evenly. Top with the sliced apples, and then the streusel topping. Note: no need to arrange the apples perfectly, but try to get them in an even layer.
  • Bake for about 50 minutes to an hour, until the top is lightly browned and a toothpick comes out without wet batter clinging to it.
  • Let cool a bit in the pan before removing. Dust with confectioner's sugar before serving.

1 egg, beaten (room temperature)
4 granny smith apples, cored, peeled and diced (2 cups)
1/4 cup chopped walnuts
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 cup all-purpose flour

Steps:

  • Preheat oven to 350°F
  • Generously grease an 8-inch square cake pan.
  • In a large bowl, cream the butter and sugar together until light and fluffy.
  • Add the egg, apples, nuts, and vanilla and stir well.
  • Sift in the dry ingredients and mix well.
  • Pour the batter into the prepared pan and bake about 45 minutes, until the cake is lightly browned and a toothpick inserted into the center comes out clean.
  • Remove from oven and let the cake set in the pan for 5 minutes, then remove from pan.
  • Serve warm or at room temperature with whipped cream or vanilla ice cream.

Like many traditional Irish desserts, her mom's weren't particularly complicated: What made them so good were ingredients like Irish butter, rhubarb from the garden and sour apples picked from a tree near the house. "In Ireland, everything is local," the chef says. When Gemma started cooking and baking professionally, she became known for over-the-top treats like birthday pound cake and peanut butter fudge ice cream pie (check out her recipes at biggerbolderbaking.com), but she still loves a simple, classic dessert like this one from her mom. Steps:

  • Preheat the oven to 350˚ F. Butter a 9-inch round cake pan and line the bottom with parchment paper.
  • Make the streusel topping: In a medium bowl, combine the flour, oats, granulated sugar and salt. Next, rub in the cold butter until fully incorporated and you've reached the texture of coarse breadcrumbs. Set aside in the fridge while you make the cake.
  • Make the cake: Cream the butter and granulated sugar in a large bowl with a mixer on medium-high speed until light and fluffy. Add the vanilla, then beat in the eggs one at a time. In a medium bowl, combine the flour, baking powder, cinnamon and salt. Fold the dry ingredients into the wet ingredients with a rubber spatula along with the milk. Once the batter has formed, transfer it to the prepared pan and lay on the sliced apples, making sure they are arranged in one even layer. Cover the apples with all the streusel topping.
  • Bake the cake until the top is golden brown and crisp, 60 to 70 minutes. Remove from the oven and let cool slightly before turning out of the pan onto a rack. When ready to serve, dust the cake with confectioners' sugar.

1 ½ teaspoons baking powder
1 teaspoon ground cinnamon
¼ cup butter
¼ cup white sugar
3 eggs
2 tablespoons milk
2 apples, or more to taste - peeled, cored, and thinly sliced

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter an 8-1/2x11-inch lasagna dish or roasting pan.
  • Sift flour, baking powder, and cinnamon together in a bowl.
  • Beat butter and sugar together in another bowl using an electric mixer until light and soft. Beat in 1 egg then 1 tablespoon of the flour mixture. Repeat twice more. Fold in two-thirds of the remaining flour. Stir in milk; fold in the rest of the flour.
  • Spread 1/2 the batter into the bottom of the prepared dish. Distribute apple slices on top and cover with remaining batter.
  • Bake in the preheated oven for 15 minutes. Reduce oven temperature to 325 degrees (163 degrees C). Continue baking until golden brown and firm to the touch, about 30 minutes more.
