1 1 1 teaspoon salt
1/2 1/2 1/2 teaspoon chili powder
1 1 1 tablespoon olive oil
1/2 1/2 1/2 red onion, finely chopped (about 1/2 cup)
1 1 1 red bell pepper, finely diced
1 1 1 green bell pepper, finely diced
1 1 1 cup basmati rice (basmati is best, but long-grain can be substituted)
1 1 1 cup chicken stock
3/4 3/4 3/4 cup jarred salsa
1/2 1/2 3 cup grated Monterey Jack cheese (about 3 ounces)
1/4 1/4 1/4 cup chopped fresh cilantro

Steps:

  • Pre-heat the pressure cooker using the BROWN setting. Season the chicken thighs with the salt and chili powder. Add the oil to the cooker and sear the thighs on both sides until well browned. Remove the chicken from the cooker and set aside. Add the onion and peppers and sauté until the onion starts to become tender - about 5 minutes. Add the rice and stir well to coat everything with the oil. Season the rice with salt, pour in the chicken stock and return the chicken thighs to the cooker, resting them on top of the rice. Top each chicken thigh with the salsa and lock the lid in place. Pressure cook on HIGH for 5 minutes. Release the pressure using the QUICK-RELEASE method and carefully remove the lid. Sprinkle the cheese on top of the thighs and return the lid to the cooker for another 5 minutes while the chicken rests and cools. Transfer the chicken thighs and rice to a serving platter sprinkle the cilantro on top before serving.

In a medium size mixing bowl, stir together the Salsa, Brown Sugar, Dijon Mustard and the Red Wine and set aside. 3. Add the Oil to a large skillet. Over medium high heat, brown the Chicken Thighs skin side down, then transfer them to the prepared baking dish, with skin side up. 4. Pour the Salsa mixture over all the Chicken Thighs. 5. Place the Chicken Thighs in the oven and bake for 30-40 minutes. Check for an internal temperature of 165-170 on your meat thermometer to ensure they are done. 6.   • 1. Preheat oven to 425 Degrees. Spray a 9 x 14 Baking dish with non stick cooking spray and set aside.

3 skinless boneless chicken thighs , cut in half
2 tbsp rapeseed oil
2 garlic cloves , bashed
½ small pack coriander
½ small pack parsley
1 anchovy fillet
½ tbsp capers
½ lemon , zested and juiced
200g pouch cooked wholegrain rice
200g baby leaf spinach

Steps:

  • Heat oven to 200C/180C fan/gas 6. Season the chicken, rub with ½ tbsp oil, then put in a large roasting tin with the garlic and roast for 25-30 mins.
  • Meanwhile, blitz the herbs, anchovy, capers, lemon juice and remaining oil with some seasoning in a food processor until finely chopped. Set aside.
  • Once the chicken is cooked, remove the tin from the oven and squeeze the garlic out of their skins. Tip in the rice and use a wooden spoon to break it up, then add the spinach and lemon zest and toss. Return to the oven for 5 mins. Divide between bowls and dollop on the salsa verde.

1 ⅓ cups uncooked white rice
2 ⅔ cups water
4 skinless, boneless chicken breast halves
2 cups shredded Monterey Jack cheese
2 cups shredded Cheddar cheese
1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of mushroom soup
1 onion, chopped
1 ½ cups mild salsa

Steps:

  • Place rice and water in a saucepan, and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes.
  • Meanwhile, place chicken breast halves into a large saucepan, and fill the pan with water. Bring to a boil, and cook for 20 minutes, or until done. Remove chicken from water. When cool enough to handle, cut meat into bite-size pieces.

1 teaspoon granulated garlic
½ teaspoon ground cumin
½ teaspoon smoked paprika
¼ teaspoon ground coriander
¼ teaspoon ground black pepper, or to taste
1 ½ pounds boneless, skinless chicken thighs
1 tablespoon unsalted butter
1 tablespoon olive oil
1 cup chopped onion
1 medium red bell pepper, chopped
½ medium green bell pepper, chopped
1 ½ cups long grain white rice, uncooked
½ teaspoon chili powder
1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®), liquid drained and reserved
2 cloves garlic, minced
1 (14.5 ounce) can low-sodium chicken broth
½ cup water
1 ½ cups frozen green peas, thawed

Steps:

  • Combine salt, granulated garlic, cumin, paprika, coriander, and 1/4 teaspoon black pepper in a small bowl.
  • Pat chicken thighs dry with paper towels. Sprinkle seasoning mix evenly over both sides of chicken thighs.
  • Combine butter and olive oil in a deep-sided, 11-inch nonstick skillet over medium-high heat; cook until butter is melted and foamy.   • Place browned chicken thighs on top of the rice mixture; do not submerge. Cover, reduce heat to low, and cook for 20 minutes.
  • Remove cover, increase heat to medium, and gently stir in thawed peas. Cook until chicken is no longer pink in the center and the juices run clear, about 5 more minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Serve warm.

1/4 cup chopped onion
2 garlic cloves, chopped
2 tablespoons cooking oil

1/4 teaspoon cumin
1 (14 ounce) can chicken broth
1 cup water

Steps:

  • heat oil in a non-stick pan on med-high heat, saute onion and garlic until translucent. 4 minutes.
  • remove onion mixture from pan and saute chicken pieces just to brown a little.
  • add back onion mixture, salsa, cumin and rice and saute until liquid is evaporated. 2-3 minutes.
  • add chicken broth and water. bring to a boil, cover and cook on low for 20 minutes.

4 teaspoons taco seasoning mix
1 cup salsa
1 cup shredded Cheddar cheese
