In the old days, I would go out to the buffets and eat my weight in smoked salmon! I especially liked it served traditionally, with capers, cream cheese and onions. The only problem was that the capers and onions always fell off the fork when I tried to eat it all together. This recipe combines all my favorite ingredients in an easy-to-make and easy-to-serve party appetizer!

8 ounces cream cheese, softened
1 tablespoon fresh lemon juice
2 tablespoons diced red onion
1 tablespoon chopped fresh basil leaves
8 ounces sliced smoked salmon (we recommend Nova, but you make use the saltier lox)
2 tablespoons small capers, drained
1 seedless cucumber, with peel, sliced into rounds the size of crackers

Steps:

  • Combine the cream cheese, lemon juice, red onion, and basil in a bowl until completely blended.
  • On a piece of waxed paper, arrange the smoked salmon slices in a rectangle about 3 inches wide and 12 inches long, slightly overlapping each piece. (If the salmon slices are cut irregularly, simply piece them together like a puzzle.)
  • Spread a thin layer of the cream cheese mixture on the salmon, sprinkle with the capers, and roll up like a jellyroll.
  • Refrigerate for 1 hour to firm, then cut into 1/2-inch slices. Place each pinwheel atop a cucumber round to serve.

2 teaspoons olive oil
1/4 cup minced onion (about half a small onion)
1 garlic clove, minced
4 cups chopped spinach
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup cooked brown rice
2 teaspoons lemon zest
1/4 cup cheddar cheese, grated
1/2 cup chopped walnuts
1 lb salmon fillet, skinned and pin bones removed

Steps:

  • In a large frying pan, heat oil over medium heat. Add onions and cook until tender but not browned. Stir in garlic and chopped spinach, salt and pepper. Cook until spinach just starts to wilt. About 3 minutes.
  • Remove from heat. Add cooked rice and stir in lemon zest until well combined.
  • Spread mixture evenly over salmon fillets and sprinkle with cheese and walnuts.
  • Roll up gently and secure with toothpicks or twine.
  • Place salmon on a parchment lined baking sheet and bake at 375 F for about 15-20 minutes, or until fish is cooked through.
  • Transfer to a cutting board and cool for 10 minutes before slicing into pinwheels.

1 package (8 ounces) cream cheese, softened
1 tablespoon snipped fresh dill
1 tablespoon capers, drained
1/2 teaspoon garlic powder
1/2 teaspoon lemon juice
4 spinach tortillas (8 inches), room temperature
1/2 pound smoked salmon fillets, flaked

Steps:

  • In a small bowl, combine the cream cheese, dill, capers, garlic powder and lemon juice. Spread over tortillas; top with salmon. Roll up tightly. , Cut into 1-in. pieces; secure with toothpicks. Chill until serving. Discard toothpicks before serving. Refrigerate leftovers.
