4 ounces blue cheese, such as Cabrales, Saga, Roquefort, or Gorgonzola dolce
6-inch piece baguette
3 tablespoons champagne vinegar
2 tablespoons chopped shallot
1 tablespoon sugar
1 large egg
Kosher salt and freshly ground black pepper
4 ounces pancetta or thick-cut bacon, cut into 3/4 by 1/4-inch pieces
10 ounces frisee (French curly endive), torn into bite-sized pieces (about 10 cups)
3 radishes, thinly sliced
Candied pecans, for garnish

Steps:

  • Position an oven rack to the top position and preheat the broiler. Cut the cheese into 1/4-inch thick slices. Slice 12 long 1/2-inch diagonal slices from the baguette, then top with cheese slices. Arrange them on a baking sheet and set aside. .
  • Whisk the vinegar, shallot, sugar, egg, 3/4 teaspoon salt and 1/2 teaspoon pepper together in a small bowl.
  • Heat a heavy-bottomed medium skillet over medium heat and cook the pancetta, stirring occasionally, until golden, about 6 minutes. Transfer to a paper-towel-lined plate. Reserve the drippings in the skillet and reduce the heat to low.
  • Add the vinegar mixture to the drippings in the skillet, whisking constantly, until slightly thickened, 1 to 2 minutes. Remove from heat.
  • Put the frisee in a large bowl and pour the warm dressing over it and toss to coat. Season with salt and pepper.
  • Broil the bread until the cheese is just soft, about 1 minute. Transfer the salad to serving plates, then top with radishes, pecans and pancetta. Top each salad with 3 blue cheese crostini.

8 ounce goat cheese log, rolled in herbs
6 to 7 cups frisee lettuce, 3 bundles, trimmed
1/4 European or seedless cucumber, halved lengthwise, then thinly sliced
3 tablespoons chopped or snipped chives
16 grape tomatoes
1/2 cup shelled pistachio nuts or sliced almonds
1/4 red onion, sliced
2 to 3 tablespoons chopped tarragon leaves
1 small shallot, minced
1 tablespoon white wine vinegar
1/4 lemon, juiced, about 2 teaspoons
1/4 cup extra-virgin olive oil
Salt and pepper

Steps:

  • Cut goat cheese into 4 equal portions and reserve.
  • Divide the frisee among 4 plates. Scatter the cucumber, chives, tomatoes, nuts, onions and tarragon equally among the portions of lettuce. Crumble a 2-ounce portion of cheese over each salad.
  • Place shallot in a small bowl with vinegar and lemon juice. Let vinegar stand 5 to 10 minutes. Whisk in extra-virgin olive oil in a slow stream. Drizzle dressing over each salad, then season with salt and pepper.

2 tablespoons white vinegar
Sea salt and freshly ground black pepper
4 eggs
8 slices thick-cut bacon, cut into 1/2-inch pieces
2 shallots, thinly sliced
5 tablespoons extra-virgin olive oil, plus more for drizzling
1 tablespoon Dijon mustard
2 tablespoons red wine vinegar
1/2 lemon, juiced
2 tablespoons chopped chives, plus more for garnish
1 large head frisee lettuce, torn into bite size pieces

Steps:

  • Fill a large skillet with water, bring it to a boil, and add the vinegar and a large pinch of salt. Reduce the heat until the water is just barely bubbling. Crack each egg into a small bowl and carefully slide the egg into the water. Cook until the eggs are set, about 3 1/2 to 4 minutes. Remove the eggs with a slotted spoon and dab the bottom with paper towels to dry them off; set aside and keep warm.
  • Put the bacon and shallots into a cold skillet with a tablespoon of olive oil and cook over medium heat until the bacon is browned and crisp; be careful not to let it burn. Remove with a slotted spoon, drain on paper towels, and set aside. Meanwhile, get a jar with a tight fitting lid. Add the mustard, remaining 4 tablespoons olive oil, red wine vinegar, and lemon juice. Shake well to combine the ingredients, add the chives, taste, and season with salt and pepper.
  • Put the frisee into a large bowl and toss it with the dressing the cooked bacon and shallots. To serve, place a large mound of salad onto a plate and top with a poached egg. Garnish with some chives and a drizzle of olive oil.

From the cookbook International Vegetarian Cooking. This is a warm salad from the Provence region of France. Interesting combination of sweet, tangy, and salty ingredients. In the summer I might be inclined to add fresh basil; another addition might be capers. The gears are in motion... My knowledge of French cuisine is seriously lacking, so I think I'll gradually ease into it and approach it simply, beginning with wine, followed by salads, then work my way up.

3 cups frisee, washed and drained well
4 small red bell peppers
1/2 lb soft fresh goat cheese (such as chevre or banon, for example)
6 tablespoons extra virgin olive oil (the best quality you can find)
3 tablespoons raisins
3 tablespoons pine nuts
1 1/2 teaspoons balsamic vinegar
freshly grated black pepper (my addition)

Steps:

  • NOTE: original recipe called for green bell peppers, but I prefer red bell peppers as I think they make a prettier presentation. Substitute if you wish. I also cut back on the olive oil by 2 tablespoons.
  • Preheat oven to BROIL.
  • Broil the bell peppers until well charred. Place in paper bag and "sweat" for 25 minutes. Once cooled, peel, seed and remove membranes.
  • Cut the goat cheese into 4 thick slices and place in a warm, not hot, oven at approximately 150 degrees.
  • Heat the olive oil in a pan and lightly saute the raisins until they just begin to sizzle and plump up and the pine nuts begin to turn golden. Stir in the balsamic vinegar then remove pan from heat.
  • On 4 separate salad plates, divide and arrange the frisee and prepared bell peppers. Add the warmed cheese and spoon the olive oil mixture over the top.
  • Serve immediately.

  • Use a heavy bottom pan (preferably cast iron) and heat over medium-high heat. Add the bacon pieces so the wide side is flat against the bottom. When the fat starts to render, lower the heat to medium-low. Continue to cook for about 20 minutes, then use tongs to flip the bacon pieces over and cook for another 15 to 20 minutes. If you have thinner bacon, the cooking time should be reduced.
  • Place a small pot of water over medium-high heat. This will be for the poached eggs. Add in the vinegar and let it warm while you are making all the other items. If you have made poached eggs before and are comfortable, use a larger pot to cook more than 1 at a time. If you have not made them before, start with a small pot. It is much easier.
  • Next, wash the lettuce and spin dry or pat dry with clean dish towels. When dry, tear into bite sized pieces with your hands. Set aside.
