Steps:
- Measure all ingredients except raisins into baking pan in the order recommended by the manufacturer.
- Insert pan into the oven chamber.
- Select Sweet Cycle.
- Add raisins at the "add ingredient" signal.
- When the baking cycle ends, immediately remove the bread from the pan and place it on a wire rack.
- Let cool to room temperature before slicing.

- 2. Soak raisins at least 2 hours in rum to plump the raisins (soak longer if you have time).
- 3. Add egg and milk to bread pan; cover liquid completely with flour.
- 4. To each corner of pan and on top of the flour, start adding sugar in one corner, salt in another corner, butter and cinnamon. Make a well in the center of the flour and add yeast.
- 5. I used the 2 lb loaf setting, selected fruit and nuts and started the machine. Add raisins when prompted or after the 1st kneading. My machine does not prompt for adding raisins or nuts so I had to listen for that 1st kneading.
- 6. This bread rose to the very top of my machine. So, the last 10 minutes of baking time I lifted the top/lid slightly and placed a spoon under the lid to keep it up above the bread so the top would dry and brown. Honestly this is the best bread I've ever made by baking it in the bread machine.

THE BEST RAISIN BREAD FOR BREAD MAKER / MACHINE
I have tried no less than 5 different recipes and several variations of Raisin Bread recipes before finding what I think is the best tasting recipe. It is a culmination of trail and error using various recipes found on the internet and in Bread Machine Cookbooks. This recipe makes approximately a 1.5lb (750gm) loaf.

- Firstly, mix the flour, milk powder, sugar, salt and cinnamon together thoroughly in a mixing bowl making sure there are no lumps.
- Now add the luke warm water and butter into the bread machine. (I divide the butter into four pieces and put one in each corner of the pan for easier mixing).
- Then add the dry mixed ingredients into the pan. Make a small well in the centre of the dry mixture and add the yeast.
- Set the Bread Maker / Machine to 'Sweet Bread' setting and wait for it to 'BEEP' (approx 15 minutes) before adding the raisins.
- Wait until cooked and enjoy fresh or toasted with butter -- YUM !
- ** If the mixture is too dry while mixing you can add a tablespoon of water. Alternatively if its too moist, a tablespoon of flour should sort it out nicely. **.

- Place ingredients in pan in the order recommended by the manufacturer. Use the regular setting for a 1 pound loaf.
- If your machine has a Fruit setting, add the raisins at the signal, or about 5 minutes before the kneading cycle has finished.

- Into 1-cup measuring cup, break 1 egg. Add enough water to measure 1 cup. Measure carefully, placing egg mixture and remaining bread ingredients in bread machine pan in the order recommended by the manufacturer.
- Select Sweet or Basic/White cycle. Use Medium or Light crust color. Do not use delay cycle.
- In small bowl, mix all topping ingredients. About 40 to 50 minutes before bread is finished, lift cover of bread machine and carefully brush topping on top of loaf. Close lid to continue with cycle. Remove baked bread from pan; cool on cooling rack.

- In the bowl of a stand mixer fitted with the dough hook, mix together the egg, egg yolk (reserve the white for the egg wash), melted butter, milk, and extract if using. Gradually add the flour mixture. Increase the speed to medium and mix until the dough comes together. Knead for a minute then add in the rum soaked raisins and any remaining liquid. - Most bread machines want you to add the wet ingredients before the dry. Please consult your machine's manual and follow their preferred instructions.
- Our machine requires us to add the sour cream, water, egg, rum, butter, and vanilla first. Then add the flour, and sugar on top.
- Keep the salt and yeast separate in the pan. Sprinkle the salt around the perimeter of the flour, then use a spoon to pat a small well in the middle of the flour to add the yeast into. (See photos in post for clarification.) This will help with the bread rising, salt interacting with the yeast directly will slow it down.
