NO-BAKE TRAIL MIX SNACK BARS



No-Bake Trail Mix Snack Bars image

I am an avid road biker and hiker. Through a lot of trial and error, I have finally perfected a homemade no-bake trail mix bar that stays crunchy. The marshmallows allow the bars to stay stuck together. Other no-bake recipes I have tried always have crumbled as soon as you cut them.

cooking spray
1 ⅓ cups crispy rice cereal
1 cup quick-cooking oats
½ cup sliced almonds
¼ cup walnut pieces
¼ cup dried cranberries
¼ cup raisins
3 tablespoons wheat germ
1 ¼ cups mini marshmallows
¼ cup honey
¼ cup light corn syrup

Steps:

  • Coat an 8-inch square pan with cooking spray.
  • Add rice cereal, oats, almonds, walnuts, cranberries, raisins, and wheat germ to a large bowl; stir with a spoon.
  • Place marshmallows, honey, and corn syrup in a saucepan over medium heat. Cook and stir until melted and smooth, about 5 minutes.
  • Pour the melted mixture over the cereal mixture and stir until thoroughly combined. Press mixture firmly into the prepared pan. Cool until firm and set, about 30 minutes.
  • Cut into 9 bars and place in individual sandwich bags. Keep refrigerated if the kitchen gets too hot.

Caloric, filling, and tasty bars for the trail. These bars give a flavourful and fulling treat along a hiking or cycling trail. The recipe is from Ben Branch of AT&T Bell Labs at Columbus.

1/2 cup chunky peanut butter
1/3 cup butter
2 medium bananas, cut up
1/2 cup molasses
1 cup sugar
2 teaspoons vanilla
4 large eggs (well beaten)
1 teaspoon cinnamon
1/4 teaspoon ginger
2/3 cup whole wheat flour
1 1/3 cups white flour
4 cups kellogg Special K cereal, crushed
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
6 ounces chocolate chips
1 cup salted peanuts, chopped
6 -8 ounces dates, chopped

Steps:

  • Preheat oven to 350°F.
  • In a large bowl: cream together peanut butter and butter.
  • Mix in bananas, molasses, sugar, and vanilla.
  • Add beaten eggs, mix well.
  • Stir in the cereal.
  • Sift together dry ingredients and mix into batter.
  • Add chips, peanuts, and dates.
  • Pour batter into greased 9x13 pan.
  • Bake in preheated 350°.
  • F oven for 35 to 45 minutes.
  • Cut into bars.
  • Allow to cool just enough to handle and remove from pan.

2 tsp vanilla
4 eggs
1 tsp cinnamon
1/4 tsp ginger

1.33 c white flour
4 c rice and wheat cereal, crushed
1/4 tsp baking soda
1/2 tsp salt
6 oz chocolate chips
1 c salted peanuts, chopped
8 oz dates, chopped

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Then by hand: In a large bowl cream together peanut butter and butter.
  • 3. Mix in bananas, molasses, sugar and vanilla.
  • 4. Add eggs, one at a time, beating well after each egg.
  • 5. Stir in the cereal and sift together dry ingredients and mix into batter.
  • 6. Add chips, peanuts and dates.
  • 7. Pour batter into greased 9 x 13 pan.
  • 8. Bake in preheated 350 degree oven for 35 to 45 minutes.
  • 9. Cut into bars.
