1/2 lb ground beef
1/2 lb ground pork
1 1/4 cups napa cabbage, shredded
2 carrots, grated
1/4 cup chopped cilantro
1 medium white onion, chopped
6 garlic cloves, minced
1/4 cup soy sauce
2 teaspoons sesame oil
1 teaspoon chili oil
6 ounces cooked rice noodles
salt and pepper
phyllo pastry sheet
vegetable oil, for phyllo dough
1 cup pineapple juice
1/4 cup ketchup
1/2 teaspoon rice vinegar or 1/2 teaspoon white vinegar
1/2 tablespoon brown sugar
1 dash hot sauce
1/4 teaspoon chopped ginger
salt
1/2 tablespoon cornstarch

Steps:

  • Heat frying pan add beef and pork and start to brown, when half way done add onions, garlic, sesame oil and chili oil. When meat has browned well and cooked through add carrots and cabbage. Fry for about 5 more minutes, then add cilantro and rice noodles and season with salt and pepper to taste. Fry for only about 5 more minutes then drain off any liquid making sure your mixture is dry and not moist.
  • Let mixture cool all the way. Have phyllo ready to go under a towel so it does not dry up. Take one sheet of phyllo oil both sides, I use a brush to brush one side then flip over brush the other side, then fold the sheet in half, spoon mixture at along side one end of phyllo closest to you, then start to roll away from you very tightly. Ends will remain open, once rolled cut into 3 pieces on an angle to give a nice edge. Repeat until mixture is finished. You don't want to use too much mixture but be a little generous. Place on lightly greased baking sheet and bake in 400 degree oven for about 20 to 30 minutes or until golden brown.
  • Makes about 25 appetizers.
  • Dipping Sauce:.
  • Combine all ingredients but the corn starch and heat. Meanwhile, mix corn starch with enough of the pineapple juice mixture to make a smooth paste. Return cornstarch mixture to pot and simmer until mixture is thick. Makes about 1 1/2 cups.

Each hobo dinner pouch contains a seasoned bacon burger, potatoes, carrots, red onion, bell peppers, and zucchini--all wrapped up in a sheet of Reynolds Wrap foil and oven-roasted until golden brown. Throughout this recipe, the foil is key to getting the right texture and flavor. With these flavorful ingredients and cooking method, your hobos will be eating good!

Reynolds Wrap Foil
1 1/2 lbs ground beef
6 slices bacon
12 small potatoes
2 medium red onions
2 cups baby carrots
1 cup red bell pepper
1 cup green bell pepper
2 cups zucchini
3 minced garlic cloves
2 tablespoons olive oil
1 teaspoon black pepper
2 teaspoons salt
1 tablespoon yellow mustard

Steps:

  • Tear off and set aside 6 12-inch square pieces of Reynold's Wrap foil to serve as your hobo dinner pouches. Also line a large baking dish or tray with a sheet of foil for easy clean up of any drips.
  • Chop vegetables into bite-size pieces and lightly cover with olive oil, salt, and pepper.
  • Mince garlic. Cover with salt and smash with blade of knife until forms a garlic-salt paste.
  • Mix into ground beef: garlic salt paste, pepper, olive oil, and yellow mustard. Stir until mixed well.
  • Form meat into 6 portions 1/4 lb. each and smash into thick burger patties on the foil sheets. Wrap a piece of bacon around each one.
  • Place vegetables with bacon burgers and fold the foil corners up to enclose the food in foil pouches.
  • Place foil pouches on foil lined baking pan and bake in oven @ 400 degrees for 30 minutes. You'll next drain out excess liquid from the vegetables then return to cook uncovered for another 15 minutes. This will allow vegetables to brown and onions to caramelize.
  • Drain water from vegetables by opening one side of each foil pouch, form it into the shape of a spout, and pour out the excess liquid by tilting them over a sink. The foil works great for this step because the tips of the foil at the top of the pouches cool off in seconds and you can hold onto them to drain out the liquid.
  • Open the pouches so food is uncovered and return to oven to continue cooking for 15 minutes. If you would like vegetables more browned and bacon crisper, also broil them on high 6 inches from heat for 2-3 minutes.
  • These hobo bacon burger dinners are great for eating on the go. The dinners can be stored in the fridge right in the same foil packs they cook in and can be easily transported for picnics and other events. They are also versatile with cooking; prepare the foil packs for cooking ahead of time and then throw them on a grill at a barbeque cookout or tailgate party.
  • Your hobos will be eating good!

4 tilapia fillets
3 tablespoons lemon juice
1/2 teaspoon lemon zest
1/2 medium white onion, cut half moons
1 garlic clove, finely chopped
1 tablespoon honey
2 tablespoons olive oil
1/3 cup orange juice
1 tablespoon parsley, finely chopped
1 tablespoon cilantro, finely chopped
1/2 teaspoon sriracha sauce or 1/2 teaspoon hot sauce
4 ears fresh corn
2 tablespoons butter
Reynolds Wrap Foil
salt and pepper

Steps:

  • 1. Preheat the oven to 415 degrees F. Lair the baking dish with "Reynolds Wrap Foil" (from 100% recycled aluminum).
  • 2. In the bowl mix olive oil, honey, lemon and orange juice together. Add lemon zest, garlic sriracha, parsley and cilantro to the mixture.
  • 3. Place the onions on the bottom of the baking dish. Put tilapia over the onions and season the fillets with salt and pepper.
  • 4. Pour the citrus mixture over the fillets and cover with more foil. Let stand a side for 5 minute.
  • 5. Meanwhile cut 4 pieces of foil and place the corn on each piece. Put salt, pepper and butter on the cobs. Wrap each corns like a candy, rolling them and twisting the ends.
  • 6. Place the baking dish with tilapia and the corn wraps into the oven at 415 degrees F for about 25-30 minute At 15 min take the foil off the tilapia so the fillets can caramelized.

Ready, Set, Cook! Reynolds Wrap Contest Entry. Tilapia is a fine fish, delicious, healthy and reasonable. If you agree with that, then you should try fresh, live swimming tilapia, it is simply heavenly. In high-end restaurants, Tilapia is typically served whole and filleted in the dinning room in front of the patrons. I decided to do the same. There is a store where live fish can be bought here in NYC. I choose red Tilapia because the color has more plate appeal. Tilapia has a sweet earthy flavor and mild and a firm, flaky texture. However, the earthy flavor can taste muddy to some. This recipe is designed to transform this earthy flavor into something that is subtlety gracious. The heavy duty non-stick Reynolds wrap is to create a cooking environment that will cook the fish quickly at very high heat, at the same time giving a little smoky flavor and making the skin very crispy. BTW, each 16 oz of whole tilapia is 5 oz of meat after filleted. The plating of this dish shows one serving.

4 tablespoons bacon fat
4 artichoke hearts
2 tablespoons chopped fresh ginger
1/2 cup chopped white onion
1/2 cup grated monterey jack cheese
8 sprigs fresh thyme
3/4 cup candace grape juice
1/4 cup concord grape juice
2 tablespoons sea salt
2 large red bell peppers
1/4 cup white wine
1 teaspoon ground pepper
6 large garlic cloves
2 tablespoons fish sauce
2 teaspoons paprika
1 tablespoon brown sugar
1/2 cup heavy cream
1/2 lb yard-long beans
4 sheets heavy duty non-stick Reynolds Wrap Foil

Steps:

  • Directions - Tilapias (already scaled and dressed).
  • Wrinkle the 4 sheets of heavy duty non-stick Reynolds aluminum foil to facilitate flavor distribution, coat each with EVOO with brush.
  • Spread lemon rind, thyme on foils.
  • Coat each Tilapia with bacon fat, sprinkle salt, paprika, ground pepper and fish sauce. Score the fish (see photos).
  • Wrap each fish in its own foil pouch. Puncture pouch with a few hole for steam venting.
  • Preheat oven to 500 degrees F. Place pouches in oven for 15 minutes. Open pouches immediately so that the fish skin will remain crispy.
  • Directions - two sauces, each to be enjoyed by guest separately or combined.
  • Collect juices from the pouches, and discard thyme sprigs and charred lemon rind.
  • Mix heavy cream, garlic, chopped onion, artichoke hearts, sea salt and wine use a hand blender to blend all into a sauce.
  • Simmer the above for 10 minutes and divide into two parts.
  • Roast bell peppers, remove seeds and add to sauce part one. Add Paprika and concord grape juice.
  • Blend above with hand blender until smooth and simmer for 10 minutes.
  • Mix lemon juice, brown sugar, Candace Grape juice, and Monterrey Jack cheese.
  • Blend above with hand blender until smooth and simmer for 10 minutes.
  • Plate everything as per suggested photos on steamed Yard-Long String beans.

18 medium shrimp
2 teaspoons smoked paprika
2 teaspoons lemon pepper
1 teaspoon ginger powder

12 bibb lettuce
2 mangoes, peeled, thinly shaved into ribbons
2 avocados, peeled, thinly sliced
1/2 cup chives, cut into 1 inch lengths
1/2 cup carrot, thinly cut into sticks
1/4 cup cilantro leaf
1/4 cup mint leaf
2 tablespoons sesame seeds, toasted
1/2 cup Hidden Valley® Original Ranch® Dressing, recipe below
lime wedge
12 sprigs fresh cilantro
1 cup Hidden Valley® Original Ranch® Dressing
1/2 cup sweet chili sauce
2 tablespoons ginger, peeled, minced
1 tablespoon shallot, minced
1 tablespoon lime juice
2 teaspoons lemon zest
1/4 teaspoon cumin

Steps:

  • 1. Place the shrimp onto a flat tray; mix with olive oil, smoked paprika, lemon pepper seasoning, ginger and kosher salt. Evenly rub the spice blend onto the shrimp, cover the tray with saran and refrigerate for 15-20 minutes.
  • 2. Generously spray an oven proof baking dish with nonstick vegetable cooking oil; arrange the shrimp in an even layer, lightly spray the surface of the shrimp with additional vegetable oil.
  • 3. Place the baking dish into a 350 degree oven and bake for 8 minutes or until the shrimp are fully cooked. Remove the shrimp from the oven, allowing the shrimp too slightly cool but are still warm.
  • 4. Wash the lettuce leaves; dry well between multiple layers of absorbent paper towels, to assemble:.
  • a. Place the lettuce leaves onto a flat surface.
  • b. Top each lettuce leaf attractively with mango ribbons, avocado, chive and carrot sticks, cilantro and mint leaves. Arrange the vegetables across the length of each lettuce leaf leaving approximately 1/4 inch border around the perimeter of each leaf.
  • Celsius Arrange 3 shrimp halves on top of the vegetables; sprinkle of few toated sesame seeds over eac lettuce leaf.
  • d. Using a squirt bottle generously drizzle the Island Ranch Dressing over the surface of each lettuce leaf. Place any remaining dressing into a decorative dish to be served as an accompaniment with the lettuce wraps.
  • e. Tightly roll each lettuce leaf in a burrito style, slightly fold the edges of each lettuce leaf into the center of each wrap to help secure into a tight bundle.
  • f.Arrange the lettuce wraps on a decorative serving platter, serve with the dish of dressing. Garnish the platter with lime wedges and cilantro sprigs.
  • 1. Place all remaining ingredients into a mixing bowl and mix well with a whisk.

I was excited to see that there was a contest that actually required the very ingredients I already use to make this. I love the flavor of Hidden Valley® Original Ranch® Dressing and it lends itself perfectly to this recipe. Rotisserie chicken works well for those who do not have time to cook the chicken themselves. 8 large pita pockets
2 cups plain hummus (1/4 cup per wrap)
4 cups chicken salad (below, 1/2 cup per wrap)
1 cup fresh baby spinach leaves
2 medium fresh tomatoes, chopped
1 large avocado, thinly sliced
1 cup feta cheese, crumbled (1/8 cup per wrap)
1/4 cup fresh chives, finely chopped
4 chicken breasts, skinned, boned, cooked, cooled & chopped
1/4 cup red pepper, finely chopped
2 shallots, chopped
1 small cucumber, peeled, seeded and chopped
1/4 cup pitted kalamata olive, coarsely chopped
1/4 cup fresh parsley, finely chopped
4 fresh mint leaves, finely chopped
1 cup yogurt, dressing (below)
8 ounces plain Greek yogurt
1/2 cup buttermilk
1/2 cup sour cream
1 ounce Hidden Valley Original Ranch Dressing Mix

Steps:

  • To assemble wrap.
  • Warm pita wraps in microwave or oven. Spread 1/4 cup hummus on each pita wrap. Spread 1/2 cup chicken salad mixture on each pita wrap. Garnish wraps with spinach, tomato, avocado and feta. Drizzle with yogurt dressing and sprinkle with chives.
  • To make Chicken salad.
  • Mix together chicken, peppers, shallots, cucumber, olives, parsley and mint. Add yogurt dressing (1-1/2 cups to achieve desired texture), to coat mixture lightly, reserving 1/2 cup yogurt dressing to drizzle on wraps before serving (about ¼ cup). Cover and chill for 30 minutes.
  • To make Yogurt dressing.
  • Blend all ingredients thoroughly. Cover and chill for 2 hours.
